This is an absolutely wonderful twist on the chocolate chip cookie recipe that I found in one of my many cookbooks called 'Forrest Gump: Chocolate Recipes'; inspired by the character and movie 'Forrest Gump'. *If you use regular butter, omit the 1/2 tsp. of salt. *I used only 1 10 ounce bag of semisweet chocolate chunks,...

1 c unsalted butter, softened* (see my notes)
3/4 c firmly packed brown sugar
1/2 c sugar
2 large eggs
1 Tbsp vanilla extract
2 3/4 c all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt* (see my notes)
4 (1.4 oz.) english toffee-flavored candy bars (such as 'heath')
2 (10 oz.) packages semisweet chocolate chunks* (see my notes)
1 c toasted chopped hazlenuts or pecans (i used pecans)

Steps:

  • 1. Preheat oven to 350 F.
  • 2. Beat butter at medium speed with an electric mixer until creamy; gradually add sugars, beating well; add eggs and vanilla, beating well.
  • 3. Combine flour and next 3 ingredients, stirring well; add to butter mixture, beating at low speed just until blended; stir in toffee candy, chocolate chunks, and nuts.
  • 4. Drop dough by heaping tablespoonfuls 1 1/2 inches apart onto ungreased baking sheets.
  • 5. Bake in preheated oven for 10 minutes or until lightly browned; let cool slightly on baking sheets; remove to wire racks to cool completely.

1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon salt
½ teaspoon ground nutmeg
½ cup shortening
¾ cup white sugar
2 eggs
1 cup rolled oats
1 cup diced apple without peel
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the shortening and sugar. Beat in the eggs until well blended. Combine the flour, baking powder, cinnamon, nutmeg, and salt; stir into the sugar mixture until well blended. Fold in the walnuts, oats and apples. Drop dough by spoonfuls about 2 inches onto ungreased cookie sheets.
  • Bake for 12 to 15 minutes in the preheated oven. Let cool on wire racks.

1 cup butter
1 cup sugar
1 cup brown sugar, packed
2 eggs
1 1/4 cups flour
1/3 cup hazelnuts, finely chopped
1 teaspoon baking soda
1 teaspoon baking powder
3 1/4 cups rolled oats, not instant
1 1/2 cups raisins (optional)
1 1/3 cups nutella

Steps:

  • Cream butter and sugars in a large bowl. Add eggs and vanilla and beat well.
  • slowly add dry ingredients, mixing well after each addition.
  • Add rolled oats and raisins. Let stand for 30 minutes.
  • Roll into balls, about 1 1/2 tsp in each. Place 2 inches apart on a greased cookie sheet and bake at 350 degrees for 8 minutes or until golden. Cool completely.
  • Spread 1 tsp of nutella on the bottom of a cookie and top with another cookie. Repeat for remaining cookies.

12 large eggs
1 package (32 ounces) brown sugar
4 cups sugar
2 cups butter, softened
18 cups old-fashioned oats
3 jars (1 pound each) peanut butter
1/4 cup ground cinnamon
1/4 cup vanilla extract
8 teaspoons baking soda
3 cups semisweet chocolate chips
2-1/2 cups milk chocolate M&M's

Steps:

  • In a bowl, combine eggs and sugars. Add butter; mix well. Add oats. Add the peanut butter, cinnamon, vanilla and baking soda; mix well. stir in chocolate chips and M&M's. , Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Flatten if desired. Bake at 350° for 12-14 minutes or until set.

1½ cups old-fashioned oats
¾ cup all purpose flour
¼ cup unsweetened cocoa powder
½ tsp baking soda
¼ tsp salt
1 stick unsalted butter (softened)
½ cup brown sugar
¼ cup granulated sugar
1 large egg
1 large egg yolk
½ tsp vanilla extract
1 cup semisweet chocolate chunks
1/2 cup toasted hazelnuts (coarsely chopped)

Steps:

  • Preheat oven to 350F. Line baking sheets with parchment paper and set aside.
  • In a large mixing bowl, whisk together oats, flour, cocoa powder, baking soda, and salt.
  • In another bowl using a handheld or stand mixer, cream together butter and sugars until light and fluffy, about 2 minutes.
  • Beat in egg, egg yolk, and vanilla, mixing untii just combined.
  • Add in dry ingredients and mixing until just combined. Do not over mix. Fold in chocolate chunks.
  • Drop dough by rounded tablespoon onto the prepared baking sheet. Bake for 10 -12 minutes.
  • Cool on the baking sheets for 2 minutes, then remove to a rack to cool 5 minutes longer.

  • Using a hand mixer, or an electric mixer fitted with the paddle attachment, cream the softened butter and both sugars on a low speed until smooth. Add in the eggs one at a time, making sure each is fully combined before adding the next. Scrape down the sides of the bowl, add in the vanilla, and honey and mix until combined.
  • Sift together flour, baking powder, baking soda, cinnamon and salt. Keeping the mixer on low, mix in dry ingredients until completely combined. Add in the oats, hazelnuts, and optional chocolate chips. Refrigerate for 30 minutes.
  • Preheat the oven to 350 degrees and line a baking sheet with parchment paper or a silicone baking mat.
  • Roll balls of dough (about 2 Tablespoons each) and place two inches apart on the baking sheet. Bake for 12-13 minutes, or until the edges are golden brown and the center is still just a little shiny. Remove from the oven and let cool on the baking sheet for at least five minutes before removing. They will continue baking during this time.
