FRESH CLASSIC GRAPE SALSA



Fresh Classic Grape Salsa image

2 cups coarsely chopped California seedless grapes (use all three colors)
1/2 cup chopped green onions
1/2 cup diced fresh chilies (or diced, canned Anaheim chilies)
2 tablespoons chopped fresh cilantro*
2 tablespoons vinegar
1 clove garlic, minced
1/2 teaspoon salt
1/8 teaspoon bottled hot pepper seasoning

Steps:

  • Combine all ingredients in medium bowl and mix well. Let stand at least one hour before serving. Drain off excess liquid before serving.

Cumin-Lime Pork Chops with Grape Salsa image

3 tablespoons extra-virgin olive oil
Juice from 1 lime (2 tablespoons)
1 large garlic clove, finely chopped
1 tablespoon ground cumin
1 teaspoon finely grated lime zest
Kosher salt and freshly ground black pepper
8 (4 ounce) boneless pork loin chops
2 cups red and yellow grape tomatoes, halved
1 1/2 cups seedless green grapes, halved
1 small red onion, thinly sliced
1/2 cup chopped cilantro
2 tablespoons extra-virgin olive oil
1 tablespoon fresh lime juice
Kosher salt and freshly ground black pepper

Steps:

  • For Pork Chops: Preheat grill over high heat. Stir together olive oil, lime juice, garlic, cumin, lime zest, 1 teaspoon kosher salt and 1/2 teaspoon pepper. Rub marinade evenly on pork chops, and set aside while you make the salsa.
  • For Salsa: Stir together tomatoes, grapes, onion, cilantro, olive oil, lime juice, 1 teaspoon kosher salt and 1/2 teaspoon pepper. Set aside.
  • Grill the chops, turning once, until grill marks appear and pork is just cooked through, about 6 minutes total. Transfer to a platter, and top chops with salsa. Serve.

DIJON CHICKEN WITH GRAPE AND PINE NUT SALSA



Dijon Chicken with Grape and Pine Nut Salsa image

1 1/4 cups Dijon-style mustard
1 1/4 cups whole grain Dijon-style mustard
1/2 cup dry white wine or chicken stock
40 breast halves, 4 oz. each boneless, skinless chicken
3 lbs., 12 oz. California seedless grapes, halved
12 oz. pine nuts, toasted
10 oz. red onion, chopped
8 oz. green onion, chopped
2 1/2 oz. (1 1/4 cups) fresh Italian parsley, chopped
1/2 cup extra virgin olive oil
1/2 cup red wine vinegar
1/4 cup sugar
Salt and fresh ground pepper, as needed

Steps:

  • Whisk together mustards and wine. Pour over chicken; cover, refrigerate, and marinate 24 hours.
  • To prepare salsa combine grapes, pine nuts, red onion, green onion, parsley, oil, vinegar, and sugar; mix well. Season with salt and pepper.
  • Preheat grill.
  • Season each chicken breast half with salt and pepper.
  • Grill or broil chicken until firm and juices run clear, 8 to 10 minutes, turning once.
  • Plate chicken and top with 1/2 cup grape salsa.

8 ounces seedless red grapes, stemmed and cut into quarters
½ cup chopped red pepper
¼ cup chopped cilantro
¼ cup chopped green onions
1 Tablespoon minced jalapenos (optional)
½ cup Farmer's Pick Concord Grape 100% Juice
About 1 Tablespoon fresh lime juice
1 8-ounce bag baked tortilla chips

Steps:

  • In a medium bowl, mix the orange, grapes, red pepper, cilantro, green onions, and jalapeno if using. Stir in the Farmer's Pick Concord Grape 100% Juice and lime juice. Taste and adjust the seasoning with more lime juice, if needed.

6 pounds tomatoes
3 large green peppers, chopped
3 large onions, chopped
2 cups white vinegar
1 large sweet red pepper, chopped
1 can (12 ounces) tomato paste
4 jalapeno peppers, seeded and chopped
2 serrano peppers, seeded and chopped
1/2 cup sugar
1/2 cup minced fresh cilantro
1/2 cup bottled lemon juice
3 garlic cloves, minced
4 teaspoons ground cumin
1 tablespoon salt
2 teaspoons dried oregano
1 teaspoon hot pepper sauce

Steps:

  • In a Dutch oven, bring 2 quarts water to a boil. Using a slotted spoon, place tomatoes, a few at a time, in boiling water for 30-60 seconds. Remove each tomato and immediately plunge into ice water. Drain and pat dry. Peel and finely chop tomatoes to measure 9 cups; place in a stockpot., Stir in remaining ingredients. Add water to cover; bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, about 30 minutes., Ladle hot mixture into hot 1-pint jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 15 minutes. Remove jars and cool.

5 cups chopped onions (about 3 large)
5 cups chopped green peppers (about 4 large)

2 habanero peppers, seeded and finely chopped

1 can (6 ounces) tomato paste
3 teaspoons salt

Steps:

  • Fill a Dutch oven two-thirds with water; bring to a boil. Score an "X" on the bottom of each tomato. Using a slotted spoon, place tomatoes, one at a time, in boiling water for 30-60 seconds.   • Use a serrated knife to slice the tomatoes in half and then slice each half into smaller pieces. This is a chunky salsa, so no need for a super tiny dice. Here is my trick for quickly slicing tomatoes (see photos in the post): use 2 clean plastic lids from something like a store-bought yogurt container, that are the same size. Place as many tomatoes as you can, in one even layer, onto one lid that has the lip facing up. Place the other lid, lip facing down on top of the tomatoes. Use one hand to hold the lid down. Use the other hand to use the serrated knife to slice in between the two lids. And just like that you sliced a bunch of tomatoes in half at once! From you here you can then slice the tomatoes into smaller pieces.
  • Fit a fine mesh strainer over top of a mixing bowl. Transfer the cut tomatoes to the fine mesh strainer. Add the 1/2 teaspoon of salt, give the tomatoes a little toss. Allow the tomatoes to sit for 15 minutes. This will help the excess liquid to drain from the tomatoes so that we have a less watery salsa.
  • While the tomatoes are draining. Chop the red onion, garlic, jalapenos, and cilantro. Place them into a large mixing bowl and add the lime juice.
  • After the tomatoes have drained, discard the tomato liquid in the bottom of the bowl. Add the tomatoes to the larger bowl with the remaining ingredients. Add the 3/4 teaspoon of salt and gently toss to combine.
