CANDIED FRUIT BREAD
This is a great bread for tea at Christmas time when you don't like to make fruitcake. It is an old recipe that belonged to my mother, and really good.

Steps:
- Grease an 8x5-inch loaf tin thoroughly. Preheat oven to 375 degrees F (190 degrees C).
- Beat eggs in a medium bowl. Add milk and melted butter; mix well.
- Sift together flour, baking powder, salt, and cinnamon into a large mixing bowl. Add sugar, prepared fruits and nuts, and mix well. Add egg mixture to fruit and nut mixture, stirring just enough to blend. Pour batter into the greased loaf tin. Let stand for 20 minutes.
- Place pan in center of oven on middle rack. Bake for 60 to 70 minutes. Turn out on wire rack, and allow to cool for several hours before slicing.

FRUIT CAKE LOAF
Steps:
- Preheat oven to 350º Fahrenheit.
- Grease and line a 9" x 4" loaf pan with parchment paper. Set aside.
- In a small bowl, combine the flour, baking powder, salt and spices. Set aside.
- In a large bowl, combine the butter and brown sugar and beat until light and fluffy (about 2 minutes).
- Add the warm water, milk, vanilla and eggs. Beat until thoroughly combined.
- Add half of the flour mixture, mix just until combined, and then the remaining half and mix just until combined. Do not overmix.
- Fold in the candied peel and nuts, adding more or less as you'd like it to taste.
- Spread the mixture into the prepared loaf pan and bake for 40-50 minutes until an inserted toothpick comes out clean. Allow the loaf to cool in the pan for 10 minutes, then remove it to a wire rack to cool completely.
- For the frosting, beat the cream cheese, vanilla and powdered icing sugar for 2 minutes until smooth and light. Adjust the consistency with more powdered sugar or cream to make it easy to spread.

- Grease a loaf pan, line base and sides with parchment paper, then grease paper. Cream butter and sugar in a small bowl with electric mixer only until combined. Add eggs quickly, one at a time. Beat until combined. Transfer mixture into a large bowl. Stir in fruit, the half of the sifted flours with the combined milk and Sherry. Stir in remaining flour and milk mixture. Spread mixture into prepared pan. Bake in moderately slow oven for about 2 hours. Cover with foil, cool in pan.

EGGNOG FRUIT BREAD

- In a large bowl, beat eggs and oil. Beat in the sugar, extracts and eggnog. Combine 2-1/2 cups flour, baking powder, salt and nutmeg; gradually add to egg mixture. Toss the fruit with remaining flour; stir into batter. Fold in walnuts. , Pour into two greased 8-in. x 4-in. loaf pans. Bake at 350° for 60-65 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

- In a large bowl, dissolve yeast in water. Add the evaporated milk, sugar, shortening, salt, eggs and 2 cups of flour; beat until smooth. Stir in mixed candied fruit and enough remaining flour to form a soft dough (do not knead). , Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1-1/4 hours. , Punch dough down. Turn onto a floured surface; knead 3-4 minutes. Pat evenly into a greased 10-in. tube pan. Cover and let rise in a warm place until nearly doubled, about 45 minutes. , Bake at 375° for 30-35 minutes or until golden brown. EASY FRUIT LOAF
An easy to make fruit loaf using sultanas or a mixture of dried fruits. Serve buttered with tea or coffee for a change from cookies.

Steps:
- Heat gently together in a pot on stove top the water, sugar, dried fruit and butter until butter melts and sugar dissolves.
- Allow to cool for a few minutes then stir in flour and spices and baking soda.
- Pour into a large loaf pan which has been greased and floured or bottom lined with baking paper and bake at 350'F for 45 minutes or until a cake tester comes out clean.
- Remove from oven and leave to cool in tin for 10 minutes then tip out onto a wire rack to finish cooling.
- Serve cut in slices and buttered.
