FILLING
2 1/2 c cranberries, fresh
1/2 c sugar
1/2 c nuts, chopped
CRUST
2 eggs
1 c sugar
1/2 c butter, melted
1 c all purpose flour

Steps:

  • 1. preheat oven to 325 degrees
  • 2. place filling - cranberries , chopped nuts and sugar- in bottom of pan (8x8 or 9" pie)
  • 3. beat 2 eggs, add 1 cup sugar and mix.
  • 4. add 1/2 cup melted butter and 1 cup flour, mix well.
  • 5. pour over cranberry mixture. bake 1 hour until top is golden and not cracked.

TURKEY LEFTOVERS SURPRISE

Number Of Ingredients 6

4 cups leftover, turkey stuffing, dressing, moistened with leftover gravy or giblet broth - divided
2 cups leftover cranberry sauce
2 cups leftover turkey, sliced
2 cups leftover pearl onions, creamed or plain
1 1/2 cup leftover mashed russet potatoes, in a pastry bag with a large star tip
1 1/2 cup leftover mashed sweet potatoes, in a pastry bag with a large star tip

Steps:

  • Preheat oven to 350 degrees F. In a buttered, 4 quart, Pyrex souffle dish layer 2 cups turkey stuffing, making sure to pack it down and leaving a well in the center. Fill the well with cranberry sauce. Layer the turkey, onions, and remaining stuffing evenly, leaving few gaps. Pipe rosettes of alternating mashed potatoes that cover the top. Bake, uncovered, for approximately 1/2 hour or until the top is crusted and brown and the filling is warmed through. Serve hot

AUNTIE KAREN'S FIREMAN SURPRISE

There aren't any Italian roots in my family lineage as far as I know, but you wouldn't know it if you stopped by our house when the whole family gets together. I have 32 cousins and 8 or 9 aunts and uncles (I'm certain I'm forgetting someone), plus my immediate family is a party of five. Needless to say, there are A LOT of us. One thing we all know is that pasta can go a long way and feed many. Fireman surprise, one of my Aunt Karen's signature dishes, is really a variation on lasagna. She doesn't use a standard flat, long noodle blanket but instead opts for penne to ensure every piece of pasta is covered in her herby tomato sauce. My absolute favorite part is the ricotta that she dollops in layers underneath the mozzarella. Seasoned with sage, thyme and rosemary from her garden, the herbaceousness of this dish is something I can never get enough of.

Kosher salt
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon Italian seasoning
1 tablespoon dried parsley
1 tablespoon chicken bouillon, such as Knorr
One 16-ounce package penne
2 tablespoons plus 1 1/2 teaspoons olive oil
1 pound ground turkey or beef
1 yellow onion, finely chopped
5 garlic cloves, finely chopped
One 28-ounce can tomato sauce
One 28-ounce can crushed tomatoes
Freshly ground black pepper
2 tablespoons fresh thyme, chopped
2 tablespoons fresh sage, chopped
2 tablespoons fresh rosemary, chopped
12 ounces ricotta
1 large egg
2 cups grated mozzarella
Store-bought garlic bread, for serving

Steps:

  • Fill a pot with water, add 2 teaspoons salt and set it to boil over medium-high heat. To make the spice mixture, in a small bowl, stir to combine the garlic powder, onion powder, Italian seasoning, dried parsley and bouillon. Set aside.
  • Add the penne to the boiling water and cook until al dente according to the package instructions. Drain the pasta and return it to the pot off of the heat. Add 1 1/2 teaspoons of the olive oil, 2 teaspoons of the spice mixture and a pinch of salt. Set aside.
  • In a large pan over medium to medium-high heat, add the remaining 2 tablespoons olive oil and once shimmering, add the meat to the pan with 1 tablespoon of the spice mixture. Stir in the onions and garlic and saute until the meat is browned and the onions are translucent, about 8 minutes.
  • Add the tomato sauce and crushed tomatoes to the meat mixture. Stir in the remaining seasoning mixture, 2 1/2 teaspoons salt and 1 1/2 teaspoons pepper. Season with 1 tablespoon of the fresh thyme, sage and rosemary. Cover and cook until the tomatoes have fully broken down, 8 to 10 minutes.
  • Preheat the oven to 400 degrees F.
  • In a medium bowl, whisk to combine the ricotta, egg and some salt and pepper. Season with the remaining 1 tablespoon fresh thyme, sage and rosemary. Mix until combined.
  • In a 9-by-13-inch casserole dish, begin by adding one spoonful of meat sauce on the bottom. Next add some of the pasta, then some of the mozzarella and dollops of the ricotta mixture. Continue this pattern until the dish is full. Then dollop the remaining ricotta mixture on the top sporadically all over. Finish by adding the remaining mozzarella to the top.
  • Bake until the cheese is melted and slightly browned on top, 15 to 20 minutes. Serve with garlic bread.

SWEET ONIONS AND GRITS SURPRISE

3 cups water
1 cup quick grits
1 cup heavy cream
1 large Vidalia onion, chopped
2 cloves garlic, minced
2 pounds uncooked shrimp, peeled and deveined
3 cups chicken broth
2 tablespoons olive oil
Salt
Vidalia spring onions, chopped (as garnish)

Steps:

  • In a large saucepan on stovetop, bring water to a boil and stir in grits. Cook grits for 5 minutes and remove from heat. Stir in cream.
  • Saute the onion and garlic in olive oil until onions are tender, then add shrimp. Cook until the shrimp are pink. Pour chicken stock into mixture. Stir and simmer on low heat for 15 minutes. Garnish with Vidalia spring onions.
  • Pour grits onto a serving dish and top with shrimp mixture.

  • Best when served warm.
  • I usually make this by doubling the recipe. I bake it in a 13x9 pan for 70-80 minutes.

2 cups all-purpose flour
2 tablespoons sugar
3 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1 cup milk
1/4 cup butter, melted
1 cup jellied cranberry sauce

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk the eggs, milk and butter. Stir into dry ingredients just until moistened.
  • Fill 12 greased muffin cups one-fourth full. Drop a rounded tablespoonful of cranberry sauce into each cup. Top with remaining batter.
  • Bake at 400° for 12-15 minutes or until muffin tops spring back when lightly touched. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Yield: 1 dozen.
