Yield Makes 6 to 8 appetizer servings

Number Of Ingredients 15

1 pound skirt steak
1 pound medium shrimp, peeled
1 pound chorizo sausage
Olive oil
Salt and pepper
Wooden skewers-soaked in hot water
For the chimichurri dipping sauce:
1/2 cup olive oil
3 tablespoons white vinegar
2 jalapeño peppers, seeded and diced
1 small bunch flat leaf parsley, picked and chopped (1 cup loose leaves)
3 tablespoons chopped cilantro
1 clove fresh garlic, finely chopped
1 bay leaf
Sea salt

Steps:

  • Using a meat mallet, pound the skirt steak out thinly. Cut the steak into 1-1/2 inch strips and skewer on wooden skewers. Skewer the shrimp in a similar fashion on additional skewers. Each skewer should contain only a single piece of food to be grilled.
  • Cut the sausage into diagonal slices and also skewer. Place the skewered meats onto platters and lightly marinate in olive oil. Refrigerate until ready to cook. Marinate not longer than overnight.
  • Prepare the chimichurri dipping sauce:
  • Combine all the chimichurri ingredients in a large bowl, mix well and set aside. Make the chimichurri well in advance of cooking. (It can be prepared 3 days in advance and kept refrigerated for up to a week.)
  • Prepare a medium-hot fire on a well-oiled outdoor grill or indoor stove-top grill pan. Carefully drain all excess oil from the skewered meats and fish, and season with salt and pepper. Cook each skewered anticucho for 2-3 minutes or until charred and fully cooked.
  • Serve the anticuchos on a platter, drizzle chimichurri over the top or serve separately.

BEEF SKEWERS WITH CHIMICHURRI RICE SALAD

Beef skewers with chimichurri rice salad image

Bring some South American sunshine to your barbecue plate with chimichurri rice and cumin spiced sirloin

Provided by Good Food team

Categories     Dinner, Main course

Time 1h

Number Of Ingredients 18

2 tsp cumin seeds
juice and zest 2 limes , plus wedges to serve
3 sirloin steaks or rump steak, fat trimmed, cut into long strips
200g long grain rice or wild rice mix
2 x 400g cans black beans , rinsed and drained
3 shallots , finely diced
2 ripe avocados , chopped into small chunks
200ml Greek yogurt or natural yogurt, to serve
20cm piece cucumber , chopped into small chunks
1 shallot , roughly chopped
3 garlic cloves , roughly chopped
small pack coriander
small pack flat-leaf parsley , leaves picked
2 tsp dried oregano
4 tbsp olive oil
4 tbsp red wine vinegar
1 red chilli , finely chopped
6 large or 12 small metal or pre-soaked wooden skewer

Steps:

  • First, make the chimichurri base. Put the shallot in a mini food processor with the garlic, herbs and oil. Pulse until finely chopped but still with some texture - like a chunky pesto. Put 1 1/2 tbsp in a small bowl and set aside. Mix the red wine vinegar, chilli and 1 tbsp water into the remaining mixture and season. Chill until assembling.
  • Stir the cumin seeds and lime juice into the reserved 1 1/2 tbsp chimichurri base, then spoon all over the steak strips in a non-metallic dish. Give everything a good mix to coat, then marinate in the fridge for at least 30 mins, or up to 2 hrs.
  • Rinse the rice and put in a saucepan with triple the volume of water. Bring to the boil, then lower the heat, cover and simmer gently until cooked. Drain any remaining liquid, then spread on a tray to cool quickly.
  • When the rice is almost cool, stir in half the chimichurri sauce with the black beans, shallots, avocado and cucumber.
  • Thread the beef onto 6 large or 12 small skewers and heat the grill or a griddle pan to high. Grill for 3-4 mins each side, or griddle for 1-2 mins each side, depending on how well cooked you like your steak. Serve the rice on a platter with the skewers, lime wedges, yogurt mixed with lime zest and black pepper, and the remaining chimichurri.

CHORIZO AND CHICKEN SKEWERS

Chorizo and Chicken Skewers image

At some point this summer, you'll get tired of grilled chicken. No matter the marinade or the delivery system, you will simply reach your limit, and that's when you need to reach for the chorizo. Impale a few slices of this famously delicious Spanish sausage in between your chunks of chicken. As it grills it will splatter its spicy, smokey fat all over its much blander skewer-mate, and once again you and grilled chicken will be good buddies.

GRILLED SHRIMP AND CHORIZO SKEWERS

Grilled Shrimp and Chorizo Skewers image

This is a Rachael Ray 30 Minute Meals recipe that has been a staple of mine for a year or so. Includes a recipe for piquillo gazpacho to serve on the side. (Note: I have always used soft chorizo in place of the cured and "grilled" it on a stovetop grill pan and it turns out fine, though be sure to really compact it so they don't fall off)

Provided by EmilyStrikesAgain

Categories     Pork

Time 18m

Yield 4 serving(s)

Number Of Ingredients 15

16 peeled and deveined extra-large shrimp
coarse salt
1/2 lemon, juice of (and use the whole lemon, zested)
olive oil, for liberal drizzling
3/4 lb chorizo sausage, cut into 16 thick slices on an angle
1/2 cup flat leaf parsley
1/2 cup cilantro leaf
2 garlic cloves, cracked from skin
1 cup roasted red pepper, drained (piquillo)
1 (28 ounce) can fire-roasted tomatoes, diced
1 small yellow onion, coarsely chopped
1/2 seedless cucumber, seedless, chopped
2 celery ribs, from heart chopped
2 slices crusty bread, thick slices, chopped
1 tablespoon hot sauce (adjust to taste)

Steps:

  • Preheat grill or grill pan over medium high heat.
  • Place shrimp in shallow dish and season with salt, lemon juice and a liberal drizzle of olive oil, just enough to coat the shrimp. Skewer 4 shrimp alternating with 4 slices of chorizo on each skewer.
  • Place palmful of parsley on cutting board with the lemon zest. Add 1/2 palmful of cilantro leaves to the pile as well as 1 clove of garlic. Finely chop mixture and reserve for sprinkling over shrimp and gazpacho.
  • Place remaining herbs and garlic in a food processor or large blender with peppers, tomatoes, chopped vegetables, bread and hot sauce and proceed until smooth.
  • Grill shrimp and chorizo 3-4 minutes on each side until shrimp is firm and opaque. Serve small bowls of gazpacho with shrimp skewers resting across the top of bowls for dipping and dunking.
  • Garnish with reserved parsley, cilantro and garlic mixture.
