CLASSIC EGGS BENEDICT



Classic Eggs Benedict image

There's nothing more classic for brunch than Eggs Benedict. Perfecting this dish is all about timing. Have all ingredients close at hand and prepare the Hollandaise sauce first. Eggs can be poached on the stovetop or in the microwave, then set on English muffin halves topped with a slice of back bacon and a spoonful of creamy Hollandaise.

Water
Vinegar
8 eggs
4 whole wheat English muffins, split and toasted
8 slices lean back bacon
½ cup ( 125 mL ) butter, melted
3 egg yolks
1 tbsp ( 15 mL ) lemon juice
Pinch cayenne pepper or dry mustard

Steps:

  • Prepare Hollandaise sauce according to directions below. Set aside while poaching eggs.
  • Stovetop Poaching Method: Fill saucepan with about 3 inches (8 cm) of water. Add a splash of vinegar. Heat until water simmers gently. Break cold egg into small dish or saucer. Holding dish just above simmering water, gently slip egg into water. Repeat for remaining eggs. Cook in barely simmering water until whites are set and yolks are cooked as desired, 3 to 5 minutes. Remove eggs with slotted spoon and drain well on paper towel.
  • Microwave Poaching Method: Pour ⅓ cup (75 mL) water into small deep bowl. Bring to boil on High (100% power). Break eggs, one at a time, and slip into water. Pierce yolk membranes with fork. Cover with plastic wrap, leaving small steam vent. Cook until whites are set and yolk are cooked as desired, 40 to 60 seconds. Let stand, covered, for 1 minute. Remove eggs from bowl and drain well on paper towel.
  • Top each English muffin half with slice of back bacon, a poached egg and 2 tbsp (30 mL) Hollandaise sauce.
  • Hollandaise Sauce
  • Stovetop Method: In top of double boiler, whisk together butter, egg yolks, lemon juice and cayenne pepper. Cook over simmering water, stirring constantly until thickened, 10 to 12 minutes.
  • Microwave Method: In 4-cup (1 L) glass measure, whisk together butter, egg yolks, lemon juice and cayenne pepper. Gradually add melted butter into yolk mixture, whisking constantly. Microwave on Medium (50% power) until sauce thickens, 30 seconds to 1 minute. Whisk halfway through and at end of cooking to produce a smooth sauce. Serve warm.

California-Style Eggs Benedict is a lightened up version of the classic favorite. Fresh and bright, it comes out perfectly every time!

2 whole wheat english muffins, cut in half and toasted
4 eggs, poached
1 large fresh tomato, thinly sliced
1/2 ripe avocado, thinly sliced
1 cup uncooked spinach
avocado hollandaise sauce

Steps:

  • Fill a small saucepan with water and bring to a boil. While the water is coming to temperature, make an ice bath in a small bowl. Set aside. Add spinach to the boiling water and cook for 30 seconds to 1 minute, until wilted. Remove with a slotted spoon or spider and transfer to the ice bath to stop the cooking. Drain the spinach, squeezing out any excess water from the leaves. To assemble the eggs Benedict, top the toasted English muffin halves with spinach, followed by a slice of tomato and a few slices of avocado. Place a poached egg on top and spoon over the avocado hollandaise. Garnish with freshly chopped parsley. Serve immediately.

I had something similar at a restaurant and had to make it again - it is a great spin on the traditional eggs benedict.

2 - english muffins
4 - poached eggs
1 package(s) hollandaise sauce mix
8 - strips of turkey bacon
- fresh salsa*

Steps:

  • Cook bacon, poach eggs, follow directions to prepare hollandaise sauce, and toast English muffins.
  • Slice avocado into thin pieces.
  • Place avocado, then bacon, then poached egg on top of English muffin.
  • Pour hollandaise sauce over egg and then sprinkle fresh salsa* on the top. Sprinkle a little basil or parsley on top for look. *to make your own fresh salsa dice tomato, orange bell pepper, garlic, red onion, and green onion; add a little fresh lime juice

A rich and delicious version of eggs benedict - also happens to be vegetarian. You'll love the sauce. TIPS: Lime juice, instead of lemon, adds a little more complexity to the flavor of your sauce. Do not attempt to half the sauce recipe - all of the boiling water is needed to heat the yolks to the appropriate temperature. If you want to make this for two - or one, just freeze the rest of the hollandaise sauce for future use over asparagus, brussel sprouts or broccoli.

3 whole wheat English muffins
1 -2 avocado
6 eggs
3 egg yolks
1/2 cup butter
1 1/2 tablespoons lime juice
1/4 teaspoon salt
1/8 teaspoon cayenne pepper

Steps:

  • melt butter slowly - and keep it warm.
  • barely heat the lime (or lemon) juice.
  • have a small pot of water boiling and a tablespoon with which to measure when ready.
  • place 3 egg yolks in the top of a double boiler over medium heat (over - not in - hot water).
  • beat the yolks with a wire whisk until they begin to thicken.
  • add 1 tablespoon boiling water.
  • beat again until the eggs begin to thicken and add another tablespoon boiling water.
  • repeat this process until you have added two more tablespoons boiling water. (total 4 tablespoons boiling water to the 3 egg yolks).
  • then, beat in the warm lime (or lemon) juice. remove double boiler from heat and beat the sauce well with a wire whisk while slowly adding the melted butter, salt and dash of ceyenne pepper.
  • keep the sauce over the hot water - but off the burner and lightly cover it to keep it warm while you prepare the rest of the dish.
  • remove the avocado peel(s) and thinly slice.
  • cook 6 eggs - lightly on both sides - over medium low heat - so that the center is just a bit runny and the whites are fully cooked. try not to break the yolks.
  • slice and toast the english muffin halves.
  • place two toasted muffin halves on each warmed plate, then one egg on each half, then arrange a few slices of avocado on top of each egg. spoon the hollandaise sauce over the top of both - and serve at once.
