This recipe has much less sugar than other cocoa recipes or mixes. The result is a rich-tasting, chocolatey drink that is easy to make with ingredients you can keep on hand. This recipe is just from the 1997 edition of Joy of Cooking. This recipe makes less than a full cup of hot cocoa, but I find this amount is satisfying. You can always play with the serving sizes if you want more.

1 tablespoon unsweetened cocoa
1 teaspoon sugar
3/4 cup milk
1/2 teaspoon Kahlua or 1/2 teaspoon Grand Marnier
ground nutmeg (optional)
ground cinnamon (optional)
marshmallows (optional)
whipped cream (optional)

Steps:

In a small, heavy saucepan, stir together the cocoa and sugar, crushing any lumps.
First by approximately Tablespoons, and then in a slow steady stream, stir in the milk.
Heat over medium heat, stirring constantly and scraping the bottom of the pan, just until bubbles appear at the sides.
Remove from the heat and stir in the vanilla or liqueur.
Top with ground nutmeg or cinnamon, whipped cream or marshmallows.

1/3 cup milk chocolate chips
1/4 teaspoon vanilla extract
1 teaspoon butter
1 cup half-and-half

Steps:

Combine chocolate chips, butter and vanilla in the top of a double boiler over low heat until melted and smooth.
Slowly add half-and-half, blending into chocolate mixture.
Heat through, but do not boil.

QUICK, SIMPLE AND JUST PLAIN GOOD...I was craving hot chocolate one night and just started experimenting with this. You can use regular milk and real sugar if you want in substitution but its not necessary at all!

1 cup water
1/2-1 teaspoon unsweetened cocoa
8 (1 g) packets Splenda sugar substitute
1 1/2 tablespoons fat free chocolate soymilk
1 tablespoon sugar-free chocolate syrup

Steps:

add cocoa powder and splenda to bottom of mug and mix together.
add water (do not use hot water or this won't taste right).
microwave on high for 1 minute.
remove from microwave and add milk and syrup, stir.
microwave for 45 seconds more.
stir and enjoy!

This is my recipe for home-made hot chocolate. I couldn't find one like it here on food.com, and was curious about the nutritional content. A little less sweet than some and a little more chocolatey than others, it also makes good chocolate milk (Just allow the syrup to cool and add to cold milk.) Be adventurous and change up the flavors if you like. A sprinkle of cinnamon, a few drops of mint or orange extract, or half a spoonful of instant coffee can turn a simple cup of cocoa into a gourmet experience. This could be easily multiplied to serve more than one.

1 tablespoon sugar
1 tablespoon unsweetened baking cocoa
1 tablespoon water
1 pinch salt
1 cup milk
1/8 teaspoon vanilla extract

Steps:

Mix together sugar, cocoa and salt in a small saucepan.
Whisk in water, stirring until smooh.
Bring to a boil and cook for 1-2 minutes, stirring constantly, until dark and syrupy.
Add milk and heat just until hot Do not allow milk to boil.
Remove from heat and add vanilla.
Pour into a 10 ounce mug, garnish as desired, and serve.
Note - Add other dry spices, such as cinnamon, cayenne or instant coffee during Step 1. Add liquid extracts, such as orange or mint (or flavored liqueurs) at Step 5.
Optional - You could make this in your microwave, if you wanted. Mix the syrup right in your mug. Cook on "high" for about 30 seconds. Add milk and heat on "medium" for about 2 minutes. Add vanilla and serve.
