Homemade Chocolate Sauce is incredibly easy to make and rivals anything you'll buy at the store. Whip up a batch in only 5 minutes and then drizzle it on all your favorite desserts!

1/2 cup unsweetened cocoa powder
1 cup granulated sugar
1/8 teaspoon kosher salt
1/2 cup cold water
1 1/2 teaspoons vanilla

Steps:

  • In a cold saucepan, whisk together the cocoa and the sugar until all lumps are removed. Add the salt and the water and bring to a boil over medium-medium high heat.
  • Reduce to a gentle simmer; stirring constantly. Simmer for about 30 seconds and then remove from heat. Let cool and then add in the vanilla.
  • Pour into a glass jar and allow to cool. {The chocolate sauce will be very thin when it finishes boiling, but it will thicken quite a bit as it cools.}
  • Refrigerate until needed.

Bust out the pizzelle maker to create these pumpkin-pie-spiced sandwich cookies with a layer of chocolate in the center.

Number Of Ingredients 12

1 1/4 cups all-purpose flour
1/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons pumpkin pie spice
1/4 teaspoon fine salt
3 large eggs, at room temperature
1 cup granulated sugar
1 stick (8 tablespoons) unsalted butter, melted and cooled slightly
Cooking spray
6 ounces chopped semisweet chocolate
6 ounces chopped milk chocolate
4 tablespoons unsalted butter

Steps:

  • Whisk the flour, cocoa, baking powder, pie spice and salt together in a large bowl. Whisk the eggs, sugar and melted butter together in a medium bowl until well combined and smooth.
  • Make a well in the center of the flour mixture and pour in the egg mixture. Gradually whisk to make a thick batter, switching to a rubber spatula when the batter is too thick to whisk.
  • Preheat a pizzelle iron until a drop of water sizzles on the hot surface, about 10 minutes. Lightly spray the hot surface with cooking spray. Pipe or spoon about a tablespoon of the batter into the center of each cookie imprint. Close the iron and cook until whiffs of steam come from the iron, 30 to 45 seconds. Open the iron and remove the cookies. Transfer to a wire rack to cool and repeat with remaining batter.
  • Put both chocolates and the butter in a microwave-safe bowl. Cover and microwave in 45 second increments, stirring occasionally, until melted and smooth. Spoon a tablespoon of the filling into the center of half the cookies. Top with another cookie and press to sandwich them together.

RIB-EYE STEAKS WITH SAVORY CHOCOLATE SAUCE



Rib-Eye Steaks with Savory Chocolate Sauce image

Number Of Ingredients 19

4 rib-eye steaks (1 1/2 to 2 pounds)
2 tablespoons canola oil
Kosher salt and freshly ground black pepper
2 shallots, finely chopped
1 (14 1/2-ounce) can beef broth
1 tablespoon Worcestershire sauces
1 tablespoon brown gravy mix
1/4 cup grated dark chocolate
2 tablespoons cold butter, cut into cubes
2 tablespoons chopped fresh parsley, for garnish
Sauteed Mushrooms and Onions, recipe follows
4 tablespoons unsalted butter
1 (8-ounce) package sliced shiitake mushrooms
1 (8-ounce) package sliced baby portabella mushroom
1 cup frozen onions, thawed
Kosher salt and freshly ground black pepper
1/4 cup Canadian whiskey
2 sprigs fresh thyme, leaves chopped
1 cup heavy cream

Steps:

  • Let the steaks sit out for 30 minutes before cooking to come to room temperature. Heat the canola oil in a cast iron skillet over medium-high heat. Season the steaks with salt and pepper. Place them in the hot pan. Cook for about 3 minutes per side for medium rare. Remove the steaks from the pan, cover them loosely with foil, and let them rest for 5 minutes before slicing while you make the sauce.
  • Turn the temperature on the skillet down to medium. Add the shallots and cook until they soften a bit, about 2 minutes. Pour in the broth and Worcestershire sauce and bring it up to a simmer. While the broth comes to a simmer, add the gravy mix to a small bowl and mix with 2 tablespoons water. Add to the broth, stir, and let simmer until thickened. Stir in the chocolate and cold butter to thicken the sauce. Taste and adjust the seasoning with salt and pepper.
  • Place the steaks onto a serving platter, pour the sauce over top (or serve on the side), and garnish with parsley. Serve with Sauteed Mushrooms and Onions.
  • In a large skillet over medium heat, add the butter. When the butter has melted, add the mushrooms and onions and season with salt and pepper. Cook until they begin to soften and the mushrooms release their juices, about 7 minutes. Take the pan off of the heat and add the whiskey. Place back on the heat, add the thyme, and cook until the moisture has evaporated and the pan is almost dry, about 3 minutes. Add the cream and bring to a simmer. Cook until the cream thickens a bit, 4 to 5 minutes. Taste and adjust the seasoning with salt and pepper.

2 sticks unsalted butter, at room temperature, plus more for the pan
2 3/4 cups all-purpose flour, plus more for the pan
1 tablespoon baking powder
1 teaspoon ground cinnamon
1 teaspoon salt
1 3/4 cups granulated sugar
1 tablespoon pure vanilla extract
4 large eggs plus 2 egg yolks, at room temperature
1/2 cup sour cream
3/4 cup whole milk
1/4 cup granulated sugar
1 teaspoon ground cinnamon
2 tablespoons unsalted butter, melted
1 1/4 cups half-and-half
1/4 cup packed dark brown sugar
2 tablespoons unsweetened cocoa powder
1/2 teaspoon pure vanilla extract
1/4 teaspoon ancho chile powder
Pinch of salt
4 ounces semisweet chocolate, chopped

Steps:

  • Make the cake: Preheat the oven to 350 degrees F. Butter a 10-cup Bundt pan, making sure to get in all the crevices; dust with flour and tap out the excess. Whisk the flour, baking powder, cinnamon and salt in a medium bowl; set aside.
  • Beat the butter, granulated sugar and vanilla in a large bowl with a mixer on medium-high speed until light and fluffy, about 5 minutes. Beat in the eggs, one at a time, then the egg yolks. Beat in the sour cream until combined. (The batter may look curdled.) Reduce the mixer speed to low and add the flour mixture in three batches, alternating with the milk; beat until combined.
  • Pour the batter into the prepared pan, smooth the top and tap the bottom of the pan against the counter a few times to release any large air bubbles. Bake until a wooden skewer inserted into the center of the cake comes out clean, about 55 minutes. Transfer to a rack and let cool 10 minutes in the pan; loosen the edge of the cake with a wooden skewer and invert onto the rack to cool completely.
  • Make the cinnamon sugar topping: Combine the granulated sugar and cinnamon in a large bowl. Working in sections, brush the cake with the melted butter. Hold the cake over the bowl and sprinkle with the cinnamon sugar, pressing to adhere.
  • Make the spiced chocolate sauce: Combine the half-and-half, brown sugar, cocoa powder, vanilla, chile powder and salt in a small saucepan. Bring to a simmer over medium heat; cook, stirring, until the sugar dissolves, 2 to 4 minutes. Remove from the heat and add the chocolate. Let stand 2 minutes, then stir until smooth. Serve the cake with the spiced chocolate sauce.

1 teaspoon vanilla extract
Marshmallows or whipped cream, optional

Steps:

  • In a medium pot, whisk together chocolate, cocoa, sugar and chile. Place pan over medium-low heat and whisk until chocolate begins to melt. Slowly whisk in milk, then cream. Drop in cinnamon stick. Bring to a simmer.
  • Remove pot from heat. Cover pot tightly and steep 1 hour. Whisk in vanilla and taste for sweetness, adding more sugar if you like. Warm over low heat before straining and serving hot, with marshmallows or whipped cream if desired.

1 cup meat-flavored spaghetti sauce
1 cup red wine
1 cup low-sodium beef broth
1/2 teaspoon pumpkin pie spice
1 ounce semisweet chocolate
1/4 teaspoon crushed red pepper flakes
2 rib-eye steaks, about 1-inch thick
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
2 tablespoons unsalted butter

Steps:

  • In a saucepan, combine spaghetti sauce, wine, broth, pumpkin pie spice, chocolate and red pepper flakes. Bring to a boil over medium-high heat, stirring occasionally. Reduce heat to low and simmer for 30 minutes.
  • Season the steak generously on both sides with salt and pepper, patting the seasoning into the meat.
  • Heat a heavy skillet, preferably cast iron, over medium heat until hot. Add vegetable oil. When melted, add the steaks and cook until seared and well-crusted on 1 side, about 4 minutes. Add 1 tablespoon of butter to first side of steaks. Turn, add 1 tablespoon of butter to the other side of the steaks and cook 3 minutes more for medium-rare, and 4 minutes more for medium. Remove from the heat and let steaks rest for 5 minutes before slicing.
  • Slice steaks, place on plates, and spoon sauce over.

SPICED POACHED PEARS IN CHOCOLATE SAUCE

750g golden caster sugar
1 cinnamon stick
2 strips lemon zest (use a potato peeler)
1 star anise
1 vanilla pod , split lengthways
5 cloves
piece fresh root ginger , peeled and sliced
4 ripe pears , peeled
200g good-quality dark chocolate
142ml double cream
150ml full-fat milk
pinch ground cinnamon
vanilla ice cream , to serve

Steps:

  • In a pan big enough to hold the pears snugly, tip in all the ingredients except the pears. Half fill the pan with water and bring to the boil. Simmer for 10 mins to infuse, drop in pears, cover and gently poach for about 30 mins until soft. Turn off the heat and set aside. The pears can be poached up to 2 days ahead and kept in the poaching syrup in the fridge.
  • To make the chocolate sauce, tip the chocolate into a heatproof bowl. Bring the cream, milk and cinnamon to the boil and pour over the chocolate. Stir until the chocolate has melted. To serve, drain the pears and, holding them by the stem, dip them in the chocolate sauce to completely cover. Serve each pear with a generous scoop of vanilla ice cream.
