1/4 cup toasted coconut flakes
1 pint raspberries
2 cups store-bought chocolate pudding
1/4 cup raspberry jam (no sugar added or sugar free)
Cinnamon sugar, for dusting

Steps:

  • Layer some coconut flakes and 3 or 4 raspberries in each of two parfait glasses. Layer 1/4 cup chocolate pudding in each glass, then add 1 tablespoon raspberry jam to each. Top with more coconut and more berries. Add the remaining chocolate pudding, then the raspberry jam, and more coconut. Garnish with a sprinkle of cinnamon sugar and serve.

I got this sweet treat idea from a social media post. I had no idea just how simple it was to bloom chia seeds, and how quickly it happens. In this recipe, I use rich and creamy oat milk. I make this the night before and have it for breakfast, or I decide before dinner that I'd like it as a healthy dessert and make it then, knowing the chia seeds will soak up the liquid and become "pudding" in just a few hours. I often keep chia seed pudding in the refrigerator for up to a week and enjoy it by itself or layered with other tasty ingredients. The pudding is lightly sweetened and has a fun popping texture that will remind you of poppy or pomegranate seeds.

3 tablespoons chia seeds
2 tablespoons honey or agave nectar
1 cup oat milk, plus a splash more if needed, preferably Planet Oat Extra Creamy Oatmilk
1 mashed ripe banana, frozen
2 tablespoons chocolate hazelnut spread
1/4 cup toasted hazelnuts, chopped
1/4 cup salted banana or plantain chips, crushed or chopped

Steps:

  • For the pudding: In a small bowl, whisk together the chia seeds and honey or agave. Add the oat milk, whisking to break up any clumps. Refrigerate for 3 hours, stirring halfway through. The pudding is ready when the seeds soak up all of the oat milk. It shouldn't be stiff; it should jiggle a bit. If needed, to slightly loosen for texture, add a splash of oat milk and stir.
  • For the chocolate hazelnut and banana layer: Using a mini chopper, blend the banana and chocolate hazelnut spread until smooth.
  • To assemble the parfaits: In a 6- to 8-ounce glass or cup, layer a quarter of the chia seed pudding, half of the blended banana mixture, and another quarter of the chia seed pudding. Garnish with half of the chopped hazelnuts and banana or plantain chips. Repeat with the second serving in another glass or cup. Serve immediately.

Double Chocolate Bread Pudding with Bourbon Whipped Cream image

2 tablespoons butter
1 loaf cinnamon-raisin bread, cut into 1-inch squares
6 croissants, cut into 1-inch chunks
1 cup semi sweet chocolate chips
6 eggs
3 tablespoons brown sugar
1/2 teaspoon ground cinnamon
5 to 6 scrapes of fresh nutmeg, on a rasp
1 1/2 quarts milk
1 1/2 cups chocolate syrup (recommended: Hershey's)
Kosher salt
Bourbon Whipped Cream, recipe follows
1 cup heavy cream
1 tablespoon bourbon
1 tablespoon sugar

Steps:

  • Heat the oven to 350 degrees F.
  • Prepare the bottom and sides of the baking dish with the butter. In a large bowl, add the bread and croissant chunks along with the chocolate chips sprinkled over the top. Toss gently and pour into the prepared dish making sure all the chocolate chips don't settle on the bottom.
  • In a large bowl whisk together the eggs, brown sugar, cinnamon, nutmeg, milk, chocolate syrup, and 1/2 teaspoon of salt.
  • Pour the chocolate custard over the bread and chocolate in the dish and press the bread down into the custard to soak it up. Allow to rest for 10 minutes. Then press down a bit again.
  • Bake uncovered until the edges are golden brown and the center springs back a bit when touched, 45 to 50 minutes. Allow it to cool and settle for about 30 minutes and then make pretty squares, or just dig in right away. Serve with a dollop of Bourbon Whipped Cream, recipe follows. Can also be served cold.
  • In a large bowl whisk the heavy cream until soft peaks form. Add the sugar and bourbon and continue to whisk until stiff peaks form when the whisk is removed from the bowl. Refrigerate and serve cold.

1 loaf cinnamon raisin bread, stale and cut into 1-inch squares
1 cup semisweet chocolate chips
6 cups milk
1 1/2 cups chocolate syrup, such as Hershey's
3 tablespoons brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
5 to 6 scrapes fresh nutmeg
6 eggs
6 tablespoons butter, cold and cut into small cubes
2 tablespoons all-purpose flour
1 cup pecans, chopped
1/2 cup brown sugar
1 teaspoon Maldon sea salt
1/2 teaspoon ground cinnamon
Bourbon Whipped Cream, for serving, recipe follows
1 cup heavy cream
1 tablespoon bourbon
1 tablespoon sugar

Steps:

  • For the bread pudding: Preheat the oven to 350 degrees F. Prepare the bottom and sides of the baking dish with the butter.

This is sooo much better than regular store-bought stuff ! I really liked this pudding...DH isn't too fond of chocolate so didn't care much for this one, but I know my sister - who's visiting next week - will absolutely love this. I added some orange zest into my bowl and it reminded me of Lindt's lovely Dark Chocolate with Orange : ) ( Note: The recipe was shown on an episode of 'Cooking for Real'. Sunny sprinkled something on top before serving the pudding but I missed that so that isn't mentioned here, hopefully any Zaarite who has seen or sees that episode can mention it in the review.

1/2 cup cocoa
1/2 cup sugar
2 tablespoons cornstarch
2 cups milk
1 egg
1/4 cup semi-sweet chocolate chips

Steps:

  • Heat cocoa, sugar, cornstarch and milk in a large saucepan over medium heat and bring to a boil, stirring continuosly. Let simmer for a few minutes till the pudding slightly thickens.
  • Beat the egg and temper it by adding a ladle or 2 of the hot pudding mixture and whisking it immediately so that it doesn't scramble.
  • Slowly pour it back into the saucepan, whisking the pudding all the while.
  • Add the semi-sweet chocolate chips and mix. Let the pudding cook for a while till it thickens.
  • Pour in individual ramekins or serving bowls and refrigerate for an hour or so till cold.
  • Serve chilled.
