Summer Fresh Pasta with Tomatoes and Prosciutto image

A quick, easy, and flavorful fresh pasta dish that showcases the summer's garden bounty! This recipe came about in an effort to use up a few more of those wonderful home-grown tomatoes and fresh basil. Everything was on hand and was easy to throw together. For garlic lovers, the second time I made this dish I used a garlic-infused olive oil; amazing! A crisp green salad is the perfect accompaniment. Enjoy!

1 (12 ounce) package angel hair pasta
4 tomatoes, seeded and coarsely chopped
½ teaspoon sea salt
¼ teaspoon ground black pepper
⅓ cup extra-virgin olive oil
1 tablespoon olive oil
1 large shallot, thinly sliced
2 cloves garlic cloves, minced
4 ounces thinly sliced prosciutto, cut into thin strips
¼ cup fresh basil leaves, thinly sliced
¼ cup freshly grated Parmigiano-Reggiano cheese, or to taste

Steps:

  • Bring a large pot of lightly salted water to a rolling boil. Cook angel hair pasta at a boil until tender but still slightly firm, 4 to 5 minutes. Drain the pasta, reserving 1 cup of the cooking water for later use. Transfer the drained pasta to a large serving bowl.
  • Place tomatoes in a bowl; season with sea salt and black pepper.
  • Pour 1/3 cup extra-virgin olive oil over the tomato mixture and gently toss; set aside.
  • Heat 1 tablespoon olive oil in a small skillet over medium heat.
  • Cook and stir sliced shallot in the hot oil until just becoming translucent, 1 to 2 minutes.
  • Stir garlic into the shallot; continue cooking and stirring 1 minute more. Remove the skillet from heat.
  • Assemble the dish by adding the tomato mixture, the shallot and garlic mixture, and the prosciutto to the pasta; toss to combine. Use the reserved water from cooking the pasta to make it easier to mix.
  • Top the pasta dish with basil and Parmigiano-Reggiano cheese to serve.

3/4 pound cut ziti (zititagliata)
5 plum tomatoes, about 1 pound, cores removed
24 asparagus spears, about 1 1/2 pounds
1/4 pound very thin slices of prosciutto
Salt to taste if desired
1/4 cup olive oil
1 tablespoon finely minced garlic
Freshly ground pepper to taste
1 1/2 cups heavy cream
1/2 cup coarsely chopped fresh basil
1/4 cup freshly grated Parmesan cheese

Steps:

  • Bring 4 quarts of water to a boil for cooking the ziti and vegetables.
  • Cut the tomatoes in 1/2-inch cubes. There should be about 3 cups.
  • Scrape the ends of the asparagus spears and cut off and discard about 2 inches of the tough bottoms. Cut off and reserve the asparagus tips, each about 2 inches long. Cut the center portion of the asparagus on the bias into 1-inch pieces. There should be about 4 cups of asparagus, including the tips.
  • Stack the prosciutto slices and cut them in 1/4-inch-wide strips. There should be about 1 1/4 cups.
  • Drop the asparagus pieces into the boiling water and cook 3 minutes. Scoop out the asparagus and set aside. Allow the water to continue to boil.
  • To the boiling water add salt and the ziti. When the water returns to a boil cook the ziti to the desired degree of doneness, about 12 minutes or longer. Scoop out and reserve Y cup of the cooking liquid. Set aside.
  • Meanwhile, heat the oil in a large skillet and add the garlic. Cook briefly, stirring, and add the prosciutto, stirring. Add the tomatoes, salt and pepper and cook, stirring occasionally, about 3 minutes. Add the cream and bring to a boil. Drain the ziti, add it to the prosciutto mixture and stir. Add the asparagus pieces and the basil. Add the reserved Y cup of cooking liquid. Stir to blend and sprinkle with cheese. Toss and serve.

I was horrified one night to discover I had misplaced this recipe, and had to go without. So, here it is for safekeeping. Recipe originally from Fine Cooking. Although it claims to serve four, it seems to make an incredible amount. I freeze half of what it makes before baking, to be enjoyed another evening.

2 tablespoons olive oil
1 large onion, cut into small dice
6 garlic cloves, minced
1 1/2 lbs hot Italian sausage, removed from its casing and crumbled
salt & freshly ground black pepper
1/4 cup dry red wine
1 (35 ounce) can plum tomatoes, chopped, with their juice
4 medium tomatoes, diced
1/4 cup chopped fresh marjoram (from about 6 large sprigs) or 1/4 cup oregano (from about 6 large sprigs)
1 cup fresh ricotta cheese
1 cup freshly grated mild pecorino cheese
1 pinch nutmeg, preferably freshly grated
1/3 cup chopped fresh flat leaf parsley
1 lb ziti pasta
1/2-1 lb mozzarella cheese, preferably fresh, cut into small cubes

Steps:

  • Preheat oven to 425 degrees Fahrenheit.
  • Lightly oil a large, shallow baking dish.
  • Bring a large pot of salted water to a boil.
  • In a large skillet, heat about 2 tablespoons olive oil over medium heat.
  • Add the onion and saute until soft, about 5 minutes.
  • Add the garlic and crumbled sausage; saute until the sausage begins to brown.
  • Season with salt and pepper.
  • If the sausage renders a lot of fat, pour most of it off leaving a little to add flavor to the sauce.
  • Add the red wine; boil until it is almost gone.
  • Add the tomatoes with all of their juices and cook, uncovered, at a lively simmer for about 10 minutes. The sauce will thicken slightly.
  • Add the marjoram or oregano and taste for seasoning.
  • In a large mixing bowl, mix together ricotta, about half the grated pecorino, the nutmeg, and the parsley. Season with salt and pepper.
  • Meanwhile, cook the pasta until al dente.
  • Drain well and toss it with the ricotta mixture until well coated.
  • Add the sausage and sauce and mix again.
  • Add the mozzarella and toss gently.
  • Pour everything into the baking dish and sprinkle the remaining Pecorino on top.
  • Bake uncovered until lightly browned and bubbling, about 20 minutes.
  • Serve right away.

So easy and so good! Note: I made a very quick tomato sauce for this. You can use jar sauce if you'd like but since this sauce only takes 20 minutes to cook, I think it's worth the effort because it really does make a difference. I served this with a side salad and garlic bread.

1 (28 ounce) can crushed tomatoes (I used tuttorosso brand no salt added)
1 medium whole onion, skin removed
4 garlic cloves, smashed
2 teaspoons sea salt
1/4 teaspoon crushed red pepper flakes
1/4 cup unsalted butter
2 (10 ounce) boxes frozen spinach, thawed and squeezed dry of all liquid
1 (15 ounce) jar ricotta cheese (I use sorrento brand)
1/4 teaspoon fresh ground black pepper
1/4 cup grated parmesan cheese
2 tablespoons olive oil
cooking spray, for greasing crock pot
1 egg
1 (16 ounce) box ziti pasta, rinsed with cold water in collander

Steps:

  • For the sauce:.
  • Heat a medium sauce pan over medium heat. Add olive oil and garlic. Brown garlic about 2 minutes then discard the garlic but reserve the oil. To the garlic flavored oil, add the crushed tomatoes, whole onion, butter, 1 teaspoons sea salt, and crushed red pepper flakes. Bring to a boil, then reduce to simmer partially covered for 20 minutes. Remove onion and discard when done.
  • In a large bowl, combine ricotta cheese, egg, spinach, 2 tablespoons parmesan cheese, 1 teaspoons salt and fresh ground black pepper. Mix well to combine. Add ziti, toss to combine.
  • Spray the crock pot with cooking spray. Add about 1/2 cup of sauce, then add 1/4 of the pasta mixture. Repeat 3 more layers (4 layers in total) ending with sauce. Sprinkle 2 tablespoons of parmesan cheese over the top.
  • Cover and cook on low for 4 to 5 hours depending on your slow cooker.
  • If you have any sauce left over. Save it in case you want to add more to the finished dish.

1 (26 ounce) jar tomato basil pasta sauce

Steps:

  • Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes. Drain.
  • Meanwhile, in a saucepan over medium-low heat, mix together the pesto and basil tomato sauce. Bring to a simmer, and season with salt to taste. (You can also heat the sauce in a covered microwave-safe bowl: cook on high for one minute.)

Steps:

  • Heat the olive oil in a large skillet over medium heat.
  • Add the eggplant and cook, stirring occasionally until lightly browned, about 10 minutes.
  • Add the bell pepper and garlic, and cook until softened, about 5 minutes.
  • Stir in the tomato paste, tomatoes, capers, and salt and black pepper to taste, and bring to a boil.

2 tablespoons olive oil
1 large red onion, finely chopped (2 cups)
2 garlic cloves, finely chopped
6 ounces thinly sliced fine-quality prosciutto, such as Prosciutto di Parma, finely chopped and separated into pieces (1 1/2 cups)
2 (28-ounce) cans Italian plum tomatoes in juice, drained, reserving juice, and finely chopped
1 teaspoon sugar
1 pound penne rigate
Accompaniment: Parmigiano-Reggiano (shavings or finely grated )

Steps:

  • Heat oil in a wide heavy medium pot over medium-high heat until it shimmers, then sauté onion until golden, about 10 minutes. Add garlic and sauté until golden, about 1 minute. Add prosciutto and sauté until golden, about 4 minutes. Add tomatoes with reserved juice, sugar, and 1/4 teaspoon each of salt and pepper and simmer, uncovered, stirring occasionally, until thickened, 45 minutes to 1 hour. 1 medium-size onion, minced
2 tablespoons olive oil
1/4 pound prosciutto, sliced thin and cut into strips
5 pounds fresh plum tomatoes, cored and peeled, or canned Italian tomatoes
1 cup fresh basil leaves, chopped
3/4 cup Italian parsley leaves, chopped
1 cup dry white wine
1/4 teaspoon dried red pepper flakes
Salt and freshly ground black pepper to taste
2 tablespoons butter

Steps:

  • In large pot over medium heat, soften garlic and onion in olive oil until onion is translucent. Add prosciutto and cook five minutes. Use hands or fork to break up tomatoes and add; if using canned, also add juice. Simmer uncovered 30 minutes.
  • Add basil, parsley, wine and pepper flakes, season with salt and pepper, and simmer one hour. Remove sauce from heat. Whisk in butter.

kosher salt
3 1/2 cups quick tomato sauce
1 lb fresh mozzarella cheese, half cut into 1/2-inch cubes and half thinly sliced
3/4 cup freshly grated parmesan cheese, divided
1/2 teaspoon fresh ground black pepper
1 pinch red pepper flakes
2 tablespoons extra virgin olive oil
1/2 lb sweet Italian sausage, casing removed and crumbled
1/2 lb hot Italian sausage, casing removed and crumbled
1/2 medium onion, diced
4 garlic cloves, chopped
3 1/2 cups canned tomatoes (whole, peeled in puree & roughly chopped)
italian seasoning
1 sprig fresh thyme
2 teaspoons kosher salt
fresh ground black pepper
1/2 cup grape jelly (unsweetened) or 1/2 cup currant jelly (unsweetened)

Steps:

  • QUICK TOMATO SAUCE:
  • Make this first; heat oil in a medium saucepan over medium-high heat.
  • Cook the sausages until begining to brown, about 3 minutes.
  • Add the onion and garlic, stirring, until lightly browned, about 3 minutes more.
  • Add the tomatoes, thyme and jelly or preserves and bring to a boil.
  • Lower the heat and simmer, covered, for 10 minutes.
  • Remove and sicard the sprig of thyme.
  • Stir in the seasoning and season with pepper, to taste.
  • Use now or store covered in the refrigerator for up to 3 dayse or freeze up to 2 months. The yield is 5 cups.
  • ZITI:.
  • Preheat oven to 400ºF.
  • Cook the ziti according to pkg directions.
  • Drain.
  • Toss the cooked pasta with the sauce, cubed mozzarella, half of the Parmesan cheese, black pepper and red pepper flakes.
  • Transfer the pasta to an oiled 9x13" baking dish.
  • Cover the top of the pasta with the sliced mozzarella, and sprinkle with the remaining Parmesan.
  • Bake until lightly browned and hot, about 30 minutes.
  • Serve at once.

1 lb asparagus, chopped to 1 1/2 inch pieces
8 ounces ziti pasta
2 tablespoons olive oil
2 garlic cloves, minced
salt, to taste
fresh ground black pepper, to taste
3 ounces prosciutto, thinly sliced then cut crosswise into strips
3 ounces smoked mozzarella cheese, diced (about 1/2 cup)
3 tablespoons fresh basil leaves, thinly sliced

Steps:

  • Following the directions on package, cook the ziti in a large pot of salted boiling water. 2 minutes before the ziti is done, add chopped asparagus to the pasta and water. When ziti is done, drain, reserving 1 cup of pasta water.
  • Heat the oil in a heavy large skillet over medium heat. Add the garlic and saute until fragrant, about 20 seconds.
  • Add asparagus and pasta to the skillet. If needed, add some of the reserved cooking liquid. (I used almost all of it.) Toss to coat.
  • Add the prosciutto, mozzarella, and basil, and toss to combine. Turn off the heat. Season with salt and pepper, to taste, and serve.
