These banana muffins are our favorites! Filled with oats and chocolate chips, they are hearty, satisfying and so delicious!

Number Of Ingredients 13

1 ½ cups all-purpose flour
¾ cups old fashioned rolled oats
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon cinnamon
½ teaspoon salt
2 large eggs
½ cup sugar
½ cup brown sugar
½ cup canola oil, (or another flavorless oil, or even coconut oil)
2 teaspoons vanilla extract
1 cup mashed bananas, (about 2 large or 3 medium)
1 cup chocolate chips, ((milk, dark, a mix of both, whatever you like!))

Steps:

  • Preheat the oven to 375 degrees F. Line a muffin tin with liners.
  • Whisk together the flour, oats, baking soda, powder, salt and cinnamon in a bowl.
  • In a large bowl, whisk together the eggs and sugars until combined. Whisk in the oil and vanilla extract until combined. Whisk in the mashed bananas.
  • Stir in the dry ingredients with a spoon until just combined - do not overmix. Stir in the chocolate chips.
  • Fill the muffin tins about ¾ of the way full. Bake the muffins for 18 to 20 minutes, or until set in the center. Let cool before serving!

1 cup white sugar
½ cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
3 ripe bananas, mashed
1 tablespoon milk
1 teaspoon allspice
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 pinch salt
½ cup old-fashioned oats
½ cup chopped walnuts

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line 12 muffin cups with papers liners.
  • Beat sugar and butter with an electric mixer in a large bowl until smooth and creamy. Beat first egg into the butter until completely blended; beat in the vanilla extract with the remaining egg.
  • Mix bananas, milk, and allspice together in a separate bowl; stir into the creamed butter mixture. Whisk flour, baking powder, and baking soda together in a separate bowl; slowly stir into banana-butter mixture until batter is just mixed. Fold oats and walnuts into batter. Scoop batter into the muffin cups using a large ice cream scoop.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 25 to 35 minutes.

These muffins are so moist and full of flavor! I have looked at dozens of recipes and most had too much sugar for my liking. There is absolutely no need for a lot of sugar to make these muffins delicious. Because they have bananas and chocolate chips, I just added 1/2 cup of sugar, which turned out perfect!

¼ cup unsweetened cocoa powder
1 ½ teaspoons baking powder
½ teaspoon baking soda

¾ mini semisweet chocolate chips

Steps:

1 ½ cups whole wheat flour
1 cup rolled oats
½ cup white sugar
2 teaspoons baking powder
1 teaspoon baking soda
½ cup semi-sweet chocolate chips
2 large eggs
½ cup unsweetened applesauce
¼ cup skim milk
1 cup mashed banana

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with paper liners.
  • Stir whole wheat flour, rolled oats, sugar, baking powder, baking soda, and chocolate chips together in a bowl. Make a well in the center. Whisk eggs in a separate bowl until frothy; mix applesauce, skim milk, and banana into eggs. Pour moist ingredients into well made in dry ingredients; stir just to moisten. Batter will be lumpy. Fill prepared muffin cups about 3/4 full.
  • Bake in the preheated oven until a toothpick inserted into the center of several muffins comes out clean, 16 to 18 minutes. Cool in pan for 5 minutes before removing to finish cooling on wire racks.

3 large frozen bananas (thawed and mashed)
1/2 cup brown sugar
2 tablespoons oil
1/3 cup applesauce
1 egg, beaten
1 1/2 cups whole wheat flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 cup oats
1/3 cup ground flax seed meal (optional)
1/2 cup chocolate chips (or other add-ons)

Steps:

  • Preheat oven to 350°.
  • Add the oil, brown sugar, apple sauce and egg to the mashed bananas and stir thoroughly.
  • In a second bowl sift the flour, baking soda and powder, and salt together. Fold these ingredients into the wet mix.
  • To the batter, add the oats, flax, and chocolate chips and fold evenly into the batter.
  • Put desired amount of batter into lined muffin tins and bake for 20-25 minutes.

  • Preheat the oven to 400 degrees F. Lightly grease a 12-cup standard muffin tin or line with paper liners. If using liners, lightly grease them as well. Set aside.
  • Place the all ingredients but the mix-ins in a blender or the bowl of a food processor fitted with the steel blade: oats, bananas, eggs, Greek yogurt, honey, baking powder, baking soda, vanilla extract, and salt. Blend or process on high, stopping to scrape down and stir the ingredients once or twice as needed, until the batter is smooth and the oats have broken down almost completely, about 3 minutes. By hand, stir in the mix-ins. If the batter is warm from the appliance’s motor, the chocolate chips may melt and swirl as they are stirred. If this bothers you, let the batter cool for 10 minutes before adding them.
  • Divide the batter among the prepared muffin cups, filling each no more than three-quarters of the way to the top. Sprinkle with additional chocolate chips or nuts as desired. Bake for 15 minutes, until the tops of the muffins are set and a toothpick inserted in the center comes out clean. Place the pan on a wire rack and let the muffins cool in the pan for 10 minutes. They will deflate but still taste delicious. Remove from the pan and enjoy!
