Folks are quick to grab one of these cookies when they see they're chocolate. Once they discover the nuts and vanilla chips, they grad a second and sometimes a third. This recipe moved with me from Kentucky to Arizona and now to Ohio! - Farralee Baldwin, Centerville, Ohio

1 cup butter, softened
3/4 cup packed brown sugar
1/2 cup sugar
1 large egg
1 teaspoon almond extract
2 cups all-purpose flour
1/4 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup white baking chips
1 cup chopped almonds

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and extract. Combine the flour, cocoa, baking soda and salt; gradually add to creamed mixture and mix well. Stir in the chips and nuts. , Drop by teaspoonfuls onto ungreased baking sheets. Bake at 375° for 7-9 minutes. Cool on pans for 1 minute before removing to wire racks to cool completely.

3 cups quick oats
½ cup shredded coconut
½ cup peanut butter
1 teaspoon vanilla extract

Steps:

  • Mix milk, sugar, butter, and cocoa powder in a large saucepan and bring to a rolling boil. Boil, stirring frequently, for about 1 minute. Remove from heat and add oats, coconut, peanut butter, and vanilla. Mix thoroughly.
  • Drop tablespoon-sized balls of cookie dough onto waxed paper and let cool in refrigerator for at least 1 hour.

1/2 cup shortening
1 cup sugar
1 egg
3/4 cup sour milk
1 teaspoon vanilla
1 3/4 cups sifted flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup cocoa
1/2 cup chopped nuts (optional)

Steps:

  • Mix shortening, sugar and egg.
  • Stir in sour milk and vanilla.
  • Sift together flour, soda, salt and cocoa; stir.
  • Add nuts.
  • Chill 1 hour.
  • Heat oven to 375°F.
  • Drop by spoonfuls on greased cookie sheet.
  • Bake 8-10 minutes.
  • • Note: You can use plain milk with 1 tbsp vinegar to sour it. Works as well as the sour milk.

  • Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy. Beat in the egg, milk and vanilla. Beat in chocolate until blended. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in walnuts., Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 8-10 minutes or until set. Cool on pans for 1 minute before removing to wire racks to cool completely., In a large bowl, beat the frosting ingredients until smooth. Frost cookies.

1 cup (2 sticks) butter, at room temperature
1/4 cup plus 1 cup powdered sugar
1 teaspoon pure vanilla extract
2 cups flour
1/2 cup chocolate-hazelnut spread, at room temperature (recommended: Nutella)

Steps:

  • For the cookies: Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Line 3 baking sheets with parchment paper or silicone liners. Set aside.
  • In a stand mixer fitted with the paddle attachment, beat the butter and sugar on high speed until light and fluffy, 2 to 3 minutes. Beat in the vanilla. With the machine running, gradually add the flour until incorporated. Beat in the chocolate-hazelnut spread. Using a small cookie scoop or a tablespoon, drop 12 balls of dough onto each baking sheet. Bake until the bottoms of the cookies flatten out slightly, 10 to 12 minutes. Cool for 5 minutes and transfer to a wire rack to cool completely, about 30 minutes.
  • Place 1 cup of powdered sugar in a medium bowl. In batches, roll the cookies in the sugar until coated. Store in an airtight container at room temperature.

The walnuts give it a real nice "grown up" edge and the Demerara sugar...it's just plain heavenly. Hope you enjoy it as much as we do! 3/4 cup Golden Crisco Shortening
1 1/4 cups packed demerara sugar
1 egg
2 tablespoons milk

1 cup semi-sweet chocolate chips
1 cup coarsely chopped walnuts

Steps:

  • PREHEAT oven to 375 degrees F.
  • CREAM shortening and sugar with electric mixer at medium speed until light.
  • ADD egg, milk and vanilla, beating until thoroughly blended.
  • COMBINE flour, salt and soda. Add to creamed mixture gradually, beating just until blended.

½ cup butter, softened
1 cup packed light brown sugar
1 egg
1 teaspoon vanilla extract
½ teaspoon baking soda
2 cups sifted all-purpose flour
¾ cup milk
2 (1 ounce) squares unsweetened chocolate, melted
½ cup chopped black walnuts
2 ½ cups confectioners' sugar
¼ cup unsweetened cocoa powder
2 tablespoons butter, softened
½ teaspoon vanilla extract
4 tablespoons milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream together 1/2 cup butter or margarine and 1 cup light brown sugar until light and fluffy. Add egg, beat thoroughly. Add 1 teaspoon vanilla and mix well. Sift together flour and 1/2 teaspoon baking soda, add alternating with 3/4 cup milk to creamed mixture beginning and ending with dry ingredients. Blend in melted chocolate, then nuts.
  • Drop by teaspoonfuls onto greased cookie sheets. Bake 10 -12 minutes. Cool on wire rack. When cool, frost with Chocolate Icing.
  • To Make Icing: Mix confectioners' sugar; 1/4 cup cocoa ; 2 tablespoons butter or margarine, 1/2 teaspoon vanilla and milk. Mix all ingredients until smooth and creamy (may need to add more milk to get creamy consistency) . Frost cookies.

On the recipe card Gramma Bea says this recipe came out of "The Spry Cook Book". I am only guessing here but I bet this recipe is from the 1950's. It is a wonderful soft cookie that always shows up on our Christmas cookie tray.

1/2 c spry (shortening)
1 c brwn sugar (firmly packed)
1 egg
2 oz melted chocolate (unsweetened)
1/2 tsp salt
1 tsp vanilla
1/4 tsp soda
1 1/4 c flour
1/2 c butermilk
1 c copped walnuts (optional)

Steps:

  • 1. Combine shortening, brown sugar, egg, melted chocolate, vanilla & salt. Beat well. Add flour, soda & buttermilk. Mix well. If you want to you can add the chopped walnuts now. Drop by teaspoons on the cookie sheet and bake at 350 for 12 minutes. Cool and frost with a chocolate frosting & place 1/2 walnut or pecan on each cookie.
