CAROLINE'S CHOCOLATE FUDGE FROSTING

Steps:
- Melt chocolate and butter in the microwave, or in the top of a double boiler. In a large bowl, combine confectioners' sugar, vanilla and 1/2 cup of the milk. Blend in the melted chocolate mixture. Add remaining milk, a little at a time, until desired consistency is achieved.
- Let stand until spreadable (frosting will thicken as it cools).

CHOCOLATE LOAF CAKE WITH EASY CHOCOLATE GLAZE
Steps:
- Gather the ingredients.
- Preheat the oven to 350 F (180 C/Gas Mark 4). Grease and flour a 9 x 5 x 3-inch loaf pan or spray with a baking spray that includes flour.
- With a hand mixer, beat sugar and butter together until well blended.
- With the mixer on low speed, add the salt, vanilla extract, baking soda, baking powder, and cocoa powder. Mix until blended.
- Add the eggs, one at a time, beating well after each addition.
- Add about 1/3 of the flour and 1/2 of the milk and mix on low speed until combined.
- Add another 1/3 of the flour and the remaining milk and mix thoroughly.
- Add the remaining flour and combine all ingredients, being careful not to overbeat the batter.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 60 to 65 minutes or until a toothpick inserted in the center of the loaf comes out clean. Cool in the pan on a rack for about 10 minutes.
- Carefully remove the cake from the pan and cool completely on a rack.
- Gather the ingredients.
- Sift the confectioners' sugar into a bowl and set aside.
- In a saucepan over low heat, melt the butter.
- Whisk in the cocoa powder and milk and continue cooking and stirring until thickened.
- Remove the chocolate mixture from the heat and whisk in the confectioners' sugar. Thin out with more milk, if needed, or add more confectioners' sugar if a thicker icing is desired.
- Glaze the cake with the chocolate glaze, or frost, as desired.

CHOCOLATE LOAF CAKE & FUDGE FROSTING

- Pour boiling water over baking chocolate, stir and let cool. Whisk dry ingredients together in a small bowl, set aside.
- Cream butter and vanilla. Add brown sugar and mix well. Add eggs one a time beating well after each egg. Add dry ingredients and mix well. Blend in sour cream and chocolate mixture. Combine well.
- Pour into greased, wax paper-lined 9x5x3 aluminum loaf pan. Bake at 325 degrees for about 1 hour and 15 minutes. Until toothpick comes out clean. Cool 10 minutes and turn out onto a serving platter and cool completely and frost with recipe below.
- Frosting: Bring to a boil and boil for 1 minute the following: 1 cup granulated sugar 1/4 cup milk 1/4 cup butter 1 ounce (square) chocolate Remove from heat after boiled for 1 minute and stir in 1/2 tsp. vanilla
CHOCOLATE FUDGE LOAF CAKE!

- Preheat your oven to 180C/160C Fan, and line a 2lb loaf tin!
- In a microwave proof bowl, add the chocolate and butter and heat and mix until melted. I usually do 30 second bursts!
- Add the coffee granules to a mug, and pour over the boiling water and mix until smooth - add the coffee mix into the chocolate/butter and mix until smooth.
- In a separate bowl, add the flour, cocoa powder, baking powder, bicarbonate of soda and sugar to a large bowl and whisk until distributed.
- In another bowl, mix together the buttermilk and eggs.
- Add the three mixes together - I pour the chocolate/coffee mix and the egg/buttermilk mix into the dry ingredients and fold until smooth. You do not need to use a stand mixer as you may over-mix it.
- Pour the mixture into the lined 2lb loaf tin - bake in the oven for 55-60 minutes, or until baked through!
- Leave to cool fully once baked!
- Make sure your butter is at room temperature!
- Beat the butter on it's own for a few minutes to soften!
- Add in the icing sugar and cocoa powder 1/2 at a time, and beat until combined.
- Add the vanilla, and then the evaporated milk a little at a time beating fully in-between each go!
- Slather the frosting onto the top of the loaf cake, and then decorate how you want - chocolates and more!
- Sprinkle on your favourite sprinkles and enjoy!

- Heat the oven to 180C/160C fan/gas 4. Oil and line the base of two 18cm sandwich tins. Sieve the flour, cocoa powder and bicarbonate of soda into a bowl. Add the caster sugar and mix well.
- Make a well in the centre and add the golden syrup, eggs, sunflower oil and milk. Beat well with an electric whisk until smooth.
- Pour the mixture into the two tins and bake for 25-30 mins until risen and firm to the touch. Remove from oven, leave to cool for 10 mins before turning out onto a cooling rack.
- To make the icing, beat the unsalted butter in a bowl until soft. Gradually sieve and beat in the icing sugar and cocoa powder, then add enough of the milk to make the icing fluffy and spreadable.
- Sandwich the two cakes together with the butter icing and cover the sides and the top of the cake with more icing.

- In the bowl of an electric mixer, beat room temperature butter until lightly fluffy. Add the sifted powdered sugar 1 spoon at a time and mix well. It will get light in color and bigger in volume.
- If the frosting is too thick, slowly add more milk or half and half, one tablespoon at a time, until it reaches the desired consistency.
