This secretly healthy chocolate hummus recipe is surprisingly delicious.

1 can black beans
3 1/2 tbsp regular or dutch cocoa powder
1/2 cup sweetener of choice
1/3 cup fat source of choice (see note)
1/4 tsp salt
2 tsp pure vanilla extract
optional chocolate chips or add-ins of choice

Steps:

  • *Feel free to sub chickpeas or white beans for the black beans. Or you can use 1 1/2 cups cooked beans instead of canned.To make the chocolate hummus, drain and rinse beans well. Combine all ingredients except add-ins in a food processor until completely smooth like brownie batter. Stir in chocolate chips if using. (A few commenters had success with a blender, but a food processor will yield a smoother texture.) Leftovers can be covered and refrigerated 4-5 days. 1 (15 ounce) can garbanzo beans, drained and rinsed
½ cup unsweetened cocoa powder
2 tablespoons maple syrup, or to taste
1 teaspoon vanilla extract

2 tablespoons almond milk, or more as needed

Steps:

  • Place chocolate chips in a microwave-safe bowl and heat in the microwave until melted, 1 to 3 minutes.
  • Combine melted chocolate chips, garbanzo beans, cocoa powder, maple syrup, vanilla extract, and salt in the bowl of a food processor. Add almond milk 1 tablespoon at a time while blending to desired smoothness.

2 15-ounce cans chickpeas, undrained
1/3 cup tahini, well stirred
4 cloves garlic, minced
3 tablespoons fresh lemon juice
1 1/2 teaspoons ground cumin
Kosher salt
1 tablespoon extra-virgin olive oil, plus more for topping
1 pound ground lamb or beef
Freshly ground pepper
1 teaspoon hot paprika
1/4 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1 15-ounce can diced fire-roasted tomatoes
1/2 cup chopped fresh parsley and/or cilantro
Warmed pita and prepared cucumber salad, for serving

Steps:

  • Bring the chickpeas and their liquid to a simmer in a medium saucepan over medium heat. Drain, reserving the liquid. Set aside 1/4 cup chickpeas for topping. Process the remaining chickpeas in a food processor with 1/2 cup chickpea liquid, the tahini, half of the garlic, 2 tablespoons lemon juice and 1/2 teaspoon each cumin and salt to make a silky puree, scraping down the sides as needed, 2 to 3 minutes. If the hummus is too thick, add more chickpea liquid 1 tablespoon at a time; season with salt.
  • Heat the olive oil in a large nonstick skillet over medium-high heat. Add the lamb and season with 1/2 teaspoon salt and a few grinds of pepper. Cook until browned, 3 to 5 minutes. Pour off all but about 3 tablespoons drippings. Stir in the remaining garlic, 1 teaspoon cumin, the paprika, cinnamon and allspice; cook, stirring, until toasted, about 1 minute. Add the tomatoes and simmer until thickened, 4 to 5 minutes. Stir in the remaining 1 tablespoon lemon juice and half of the herbs.
  • Divide the hummus among bowls. Top with the lamb mixture, the reserved chickpeas, remaining herbs and a light drizzle of olive oil. Serve with pita and cucumber salad.

  • Preheat the oven to 375 degrees F. Set a wire rack over a baking sheet.
  • Spread the brown sugar on a plate. Coat the bacon on both sides of with the brown sugar, pressing to adhere. Lay the slices on the rack.
  • Bake until dark brown and almost completely crisp (the bacon will continue to crisp as it cools), 20 to 25 minutes. Transfer to paper towels to cool. Crumble or chop before using.

1 cup packed light brown sugar
3/4 teaspoon cayenne pepper
1 pound thinly sliced bacon
2 teaspoons vegetable oil

Steps:

  • Preheat the oven to 350 degrees F. Line a broiler pan with aluminum foil, and position broiler rack on top of pan. Lightly coat the rack with the vegetable oil.
  • Combine the brown sugar and cayenne in a shallow dish, stirring to mix well. Press 1 side of each slice of bacon firmly into the spiced sugar to coat well. Arrange the slices of bacon on top of the broiler rack in a single layer, sugared-side up. If there is any sugar remaining in the dish, sprinkle it on top of the bacon slices evenly. Bake until the bacon is crisp and the sugar is bubbly, 15 to 20 minutes. Transfer to paper towels to drain briefly, then to a plate or serving dish to cool. (Can be made several hours ahead) Serve warm or at room temperature.

WHISKEY MAPLE SUNDAES WITH CANDIED BACON



Whiskey Maple Sundaes with Candied Bacon image

2 cups heavy cream
1/2 cup pure maple syrup
1/4 cup corn syrup
Pinch kosher salt
3 tablespoons whiskey
6 slices bacon (your favorite variety)
6 tablespoons pure maple syrup
3 tablespoons packed light brown sugar
1/2 gallon chocolate ice cream
Two 1.4-ounce toffee bars, chopped

Steps:

  • For the whiskey sauce: Combine the heavy cream, maple syrup, corn syrup and salt in a medium saucepan and stir. Cook over medium-low heat, stirring constantly, until the sauce has reduced and thickened, about 25 minutes. (The sauce should bubble slightly as it's cooking). Stir in the whiskey and take off the heat.
  • Pour into a container and let cool to room temperature, then refrigerate until completely chilled, about 2 hours.
  • For the candied bacon: Preheat the oven to 350 degrees F.
  • Set a wire rack on a rimmed baking sheet and lay the bacon slices on the rack. Microwave the maple syrup and brown sugar together in a small bowl until just melted, 15 to 20 seconds, then stir or whisk to combine. Brush the mixture on both sides of the bacon.
  • Bake, rotating the pan halfway through, until crisp, about 15 minutes. Remove and let the bacon cool on the rack for a few minutes, then gently lift the bacon off the rack and set it back down. (Doing this will ensure it doesn't stick to the rack when it cools.)
  • For the sundae: Using a 2-ounce scoop, put 3 scoops of ice cream in a dish. Drizzle some of the chilled maple whiskey sauce over the ice cream. Cut a slice of bacon in half and arrange in the dish. Top with the chopped toffee bars. Repeat 5 more times and enjoy!

12 slices bacon, about 1/4-inch thick
Finely ground black pepper
1/3 cup light brown sugar

Steps:

  • Preheat the oven to 325 degrees F.
  • Put bacon slices in a bowl, season them with pepper and toss with the brown sugar. Cover a baking sheet with parchment or foil and arrange the bacon in a single layer on top. Sprinkle any sugar left in the bowl over the bacon. Top with another layer of parchment or foil and top it, squarely, with another baking sheet. The baking sheet will flatten the bacon as it cooks.
  • Place the tray in the center of the oven and bake for 20 minutes. Check the bacon by lifting the top tray and parchment. If it is not golden brown and fairly crispy, resist the temptation to turn up the oven temperature, and cook it for 10 to 15 minutes longer. Check it again. Keep in mind that when you remove the tray and transfer the bacon to a serving platter or individual plates, the bacon will "crisp" up a little more. Be patient!

  • Combine 1/2 cup brown sugar and 2 1/2 teaspoons gochugaru (Korean red pepper flakes) and spread on a plate. Coat one 12-ounce package thick-cut bacon in the sugar mixture, pressing each slice on both sides to adhere.
