1/2 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
3/4 cup milk
2 ounces unsweetened chocolate
3 tablespoons butter
4 eggs, separated
1 teaspoon vanilla extract
1/4 teaspoon cream of tartar
Confectioners' sugar, optional

Steps:

  • In a large saucepan, combine the sugar, cornstarch and salt. Add milk. bring to a boil; cook and stir for 2 minutes or until thickened. Add the chocolate and butter; cook until chocolate and butter are melted; stir until smooth. Remove from the heat. Add 1/3 cup chocolate mixture to the egg yolks; return all to the pan, stirring constantly. Stir in vanilla; cool slightly., In a large bowl, beat egg whites until foamy. Add cream of tartar; beat until stiff peaks form. Fold into the chocolate mixture. , Pour into a greased 2-qt. souffle dish. Bake at 350° for 45-50 minutes or until a knife inserted in the center comes out clean. Dust with confectioners' sugar if desired. Serve immediately.

1 teaspoon melted butter, or as needed
2 tablespoons white sugar
2 ounces 70% dark chocolate, broken into pieces
1 tablespoon butter
1 tablespoon all-purpose flour
4 ⅓ tablespoons cold milk
1 pinch salt
1 pinch cayenne pepper
1 large egg yolk
2 large egg whites
1 pinch cream of tartar
1 tablespoon white sugar, divided

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a rimmed baking sheet with parchment paper.
  • Brush bottom and sides of 2 (5-ounce) ramekins lightly with 1 teaspoon melted butter; cover bottom and sides right up to the rim. Add 1 tablespoon white sugar to ramekins. Rotate ramekins until sugar coats all surfaces. Pour off extra sugar.
  • Place chocolate pieces in a metal mixing bowl. Place bowl over a pan of about 3 cups hot water over low heat. Do not let water boil or come to a simmer.
  • Melt 1 tablespoon butter in a skillet over medium heat. Sprinkle in flour. Whisk until flour is incorporated into butter and mixture thickens, about 1 minute. Reduce heat to low. Whisk in cold milk until mixture becomes smooth and thickens, 2 or 3 minutes. Remove skillet from heat. Transfer mixture to bowl with melted chocolate. Add salt and very small pinch of cayenne pepper. Mix together thoroughly. Add egg yolk and mix to combine. Leave bowl above the hot (not simmering) water to keep chocolate warm while you whip the egg whites.
  • Place 2 egg whites in a mixing bowl; add cream of tartar. Whisk until mixture begins to thicken and a drizzle from the whisk stays on the surface about 1 second before disappearing into the mix, 2 or 3 minutes. Add 1/3 of sugar and whisk in. Whisk in a bit more sugar about 15 seconds; whisk in the rest of the sugar. Continue whisking until mixture is about as thick as shaving cream and holds soft peaks, 3 to 5 minutes.
  • Transfer a little less than half of egg whites to chocolate. Mix until egg whites are thoroughly incorporated into the chocolate, 1 or 2 minutes. Add the rest of the egg whites; gently fold into the chocolate with a spatula, lifting from the bottom and folding over. Stop mixing after the egg white disappears. Divide mixture between 2 prepared ramekins. Place ramekins on prepared baking sheet.
  • Bake in preheated oven until scuffles are puffed and have risen above the top of the rims, 12 to 15 minutes.

2 tablespoons butter, melted
½ cup chocolate, melted
1 teaspoon espresso powder
1 tablespoon water
1 egg yolk
1 tablespoon icing sugar
1 egg white
2 tablespoons caster sugar
butter, softened, for greasing
cocoa powder, for dusting

Steps:

  • Line 2 espresso cups or 2 small ramekins with softened butter followed by cocoa powder. Ensure all sides are coated with the cocoa as this will stabilise the sides of the soufflé when it rises.
  • In a large bowl, stir together the melted butter and melted chocolate until fully combined and smooth.
  • Stir in the espresso powder, followed by the water.
  • Stir in the egg yolk.
  • Add in icing sugar. Stir until combined and smooth.
  • In a separate bowl, whisk the egg white until soft peaks form.
  • Gradually add the caster sugar and whisk until stiff peaks form and they become glossy.
  • Fold 2 tablespoons of the whipped egg whites into the chocolate mixture and fold until fully incorporated. Gradually fold in the remaining whipped egg whites. Be careful not to over stir, as this will knock the air out, which will stop the soufflé from rising to its full potential!
  • Quickly pour the mixture into the prepared espresso cups or ramekins.
  • Using a knife, carefully pull across the top of each soufflé so that the top is completely flat.
  • Neaten the edges of the cups by running your thumb around the rim of the cup. This will help the soufflé to rise straight.
  • Chill the soufflés in the fridge for 30 minutes (optional) and then preheat the oven to 200°C (400°F).
  • Bake for 15 minutes.
  • Dust with a little cocoa powder and serve immediately.
  • Enjoy!

Number Of Ingredients 6

300ml whole milk
350g caster sugar
100g unsalted butter
1 tsp vanilla extract
100g dark chocolate, chopped (we used Green & Blacks, 70%)
chopped nuts, toffee pieces, mini chocolate buttons

Steps:

  • Line an 18cm square tin with greaseproof paper.
  • Put the milk, sugar and butter in a heavy-based saucepan. Heat gently, stirring continuously with a wooden spoon, until the sugar has dissolved and the butter has melted.
  • Bring to the boil for 15-20 mins, still stirring all the time. The mixture will bubble up - when it does, take it off the heat and keep stirring it until it sinks back down. Then return it to the heat.
  • Start to take the temperature after about 15 mins (continuing to stir or it will burn on the bottom). The time it takes to come up to temperature may vary, particularly in a cold kitchen. Once it reaches 115C on a temperature probe, remove it from the heat and stir in the vanilla extract and a good pinch of sea salt. Leave to cool for 5 mins.
  • Stir in the chopped chocolate and the mixture and keep stirring until the chocolate has melted. Quickly pour the mixture into your prepared tin and leave to set at room temperature.
  • Before the fudge has completely set, you can add rows of different toppings like nuts, toffees or mini chocolate buttons - just scatter them over the surface and gently press into the fudge until they stick. Make sure the fudge is only slightly warm when you do this - if it's too hot the toppings can melt. Once set, cut the fudge into small pieces and store in a sealed container.

2 cups white sugar
½ cup cocoa
1 cup milk
4 tablespoons butter
1 teaspoon vanilla extract

Steps:

  • Grease an 8x8 inch square baking pan. Set aside.
  • Combine sugar, cocoa and milk in a medium saucepan. Stir to blend, then bring to a boil, stirring constantly. Reduce heat and simmer. Do not stir again.
  • Place candy thermometer in pan and cook until temperature reaches 238 degrees F(114 degrees C). If you are not using a thermometer, then cook until a drop of this mixture in a cup of cold water forms a soft ball. Feel the ball with your fingers to make sure it is the right consistency. It should flatten when pressed between your fingers.
  • Remove from heat. Add butter or margarine and vanilla extract. Beat with a wooden spoon until the fudge loses its sheen. Do not under beat.
  • Pour into prepared pan and let cool. Cut into about 60 squares.

I love this recipe, clipped from a UK Family Circle magazine a few years ago, because it SAYS it's healthy. Oh, ok then, I guess I'll eat it.

90 g caster sugar (superfine)
60 g unsweetened cocoa powder
25 g low-fat margarine
3 tablespoons plain flour (all purpose)
170 ml skim milk
1/2 teaspoon salt
4 large egg whites

Steps:

  • Preheat oven to 190 degrees Celsius Coat 1/2 litre souffle dish with cooking spray and sprinkle lightly with caster sugar.
  • Combine cocoa with 90 ml hot water in a bowl. Set aside.
  • Melt margarine in a saucepan, add flour and cook 1 minute, strring constantly. Gradually add milk and 50 g sugar, stirring until thickened. Add salt and remove from heat. Add cocoa mixture, and stir well to combine. Let cool slightly for a few minutes.
  • Whisk egg whites until stiff, but not dry. Add remaining sugar, a little bit at a time, mixing after each addition. Gently fold in cocoa mixture, and spoon into prepared souffle dish.
  • Back in preheated oven 35 minutes or until risen and set. Remove fromoven and serve warm. Serve with sweetened Greek yogurt (or thick cream if you want to ignore the healthy thing), if desired.
