A simple recipe for chocolate fairy cakes from Mary Berry's Complete Cookbook. Decorate them with a simple swirl of icing, Maltesers, edible flowers, chunks of your favourite chocolate bar.

Number Of Ingredients 12

40g (1½ oz) cocoa powder
About 4tbsp boiling water
3 eggs
175g (6oz) baking spread
175g (6oz) caster sugar
115g (4½ oz) self-raising flour
1 rounded tsp baking powder
2 x 12-hole muffin tins and 24 paper cases
60g (2oz) butter
30g (1oz) cocoa powder
About 3tbsp milk
250g (8oz) icing sugar

Steps:

  • Line two 12-hole muffin tines with paper cases. Sift the cocoa powder into a bowl, pour in the boiling water, and mix into a thick paste. Add the remaining cake ingredients and mix with an electric hand whisk (or beat well with a wooden spoon).
  • Divide the mixture equally among the 24 paper cases. Bake in a preheated oven at 200˚C for about 10 minutes until well risen and springy to the touch. Cook in the cases on a wire rack.
  • Make the icing. Melt the butter, then pour it into a bowl. Sift in the cocoa powder and stir to mix. Stir in the milk and then sift in the icing sugar a little at a time to make a glossy, spreadable icing. Spread the icing over the cakes and leave to set before serving.

140g soft butter
140g golden caster sugar
3 medium eggs
100g self-raising flour
25g cocoa , sifted
85g milk chocolate , broken
85g soft butter
140g icing sugar , sifted
235g/1.5oz packs white chocolate maltesers, mini foil-wrapped chocolate eggs We use Fairtrade Divine milk chocolate eggs from Waitrose

Steps:

  • Heat oven to 190C/fan 170C/gas 5 and put 16 gold cases into a fairy-cake tin. Tip all the ingredients for the cake into a mixing bowl and beat for 2 mins with an electric hand-whisk until smooth. Divide between the cases so they are two-thirds filled, then bake for 12-15 mins until risen. Cool on a wire rack.
  • For the frosting, microwave the chocolate on High for 1 min. Cream the butter and sugar together, then beat in the melted chocolate. Spread on the cakes and decorate with Maltesers and chocolate eggs.

Everyone loves to make fairy cakes. Why not? But this recipe shows you how to make them even better.

Steps:

  • First, preheat the oven to 180 degrees and line a fairy cake tin with cake cases.
  • Take your softened fat and place it in a bowl. Then proceed to beat it as if you were creaming it(DO NOT ADD IN SUGAR AT THIS STAGE).
  • Next, add in the sugar (make sure it has been sieved to achieve most air) and cream the two ingredients together.
  • Using a separate bowl (this will have to be quite large), beat the egg. To make your cakes extra fluffy keep beating it even if you think it is done. The perfect outcome would be to end up with a "blob" of "froth" but that is not an easy feat. Then, spoon around a quarter of the egg to the beaten fat and beat it in thoroughly. To achieve best results make a well for the egg and when first starting to beat it in, mix the mixtures together like you would cement. After that, pour the mix into the rest of the egg and again, beat thoroughly. if you are adding an extract to this recipe then now is the time to do it, beating into the mix.
  • Fold in the flour (after it has been sieved). if you are unsure as to how to do this then draw figures of eight around the bowl, coming up at the top and bottom.
  • As with he eggs, beat the milk but this time continue unti it is a "blob" of "froth". Then, fold this into the mixture. the cake mix should be a good consistency, softly dropping off the spoon. Finally, spoon into the cake cases
  • Bake for around 10 minutes or until golden brown and when inserted, a skewer comes out clean. Then leave to cool.

Originally from Leith's Recipe of the Day but with a couple of adaptions. I like to use whole nut chocolate. These are recipes I've kept for years, used time and time again and then moved house. I lost them six years ago and found them recently. It's like finding old much-loved friends. I want them safe. Please computer, don't die!

170 g butter
170 g caster sugar
3 eggs
170 g self-raising flour
85 g chocolate (drops)
2 oranges, juice and zest of
110 g icing sugar, sifted
1 orange, juice and zest of
200 g chocolate, chopped
50 ml milk

Steps:

  • Preheat oven to 190°C.
  • Line 2 muffin pans (12 hole) with paper cases.
  • Cream butter and sugar until light and fluffy.
  • Mix eggs together in a separate bowl and gradually beat into creamed mixture a little at a time, adding 1 tablespoon of flour if the mixture begins to curdle.
  • Stir in chocolate and orange zest.
  • Fold in flour, adding orange juice to bring mixture to a dropping consistency.
  • Divide mixture between cases so each is two-thirds full.
  • Bake in middle of oven for about 20 minutes or until the cakes are well risen, golden and feel spongy to fingertips.
  • Cool on a wire rack.
  • Make icing.
  • Orange: Place icing sugar and orange zest in a bowl, add enough orange juice to mix to a fairly stiff consistency.
  • Icing should hold a trail when dropped from a spoon but gradually find its own level.
  • It needs little liquid.
  • Chocolate: Melt chocolate and milk together.
  • (I use a microwave oven for this- take care, chocolate burns easily.) Stir well to mix.
  • Ice cakes with orange icing and swirl the chocolate on top.
