FROZEN BANANA BITES
A simple dessert that people love! You can use anything you want in place of the toffee: sprinkles, nuts, cookie crumbs, or whatever! This is also really good with dark chocolate.

Steps:
- Cover a baking sheet with waxed paper.
- Spoon a thin layer of peanut butter on top of each banana slice. Insert a toothpick through the peanut butter layer into the banana. Place banana bites onto the prepared baking sheet; freeze for 30 minutes to overnight.
- Melt chocolate and shortening in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
- Cover another baking sheet with waxed paper.
- Remove 2 to 4 banana bites from the freezer at a time; coat each bite with chocolate mixture. Place coated banana bites on the second baking sheet; sprinkle each with toffee bits. Repeat until all the bites are coated. Return banana bites to freezer until set, at least 1 hour. Allow bites to sit in room temperature for about 15 minutes before serving.

These are so colorful and festive looking it makes you feel like it's a party when you look at an assortment of them. And they couldn't be easier to make, even your kids could do it. You can use white chocolate too, for a more wintry or icy look.

- Dipping decorations: granola, chopped nuts, sprinkles, jimmies, crushed cookies, and toasted coconut
- Line a sheet pan with waxed paper. Cut 1-inch off the end of each banana. Insert a popsicle stick into the cut-end of each banana, pushing the stick halfway in, leaving the other end exposed for use as a handle. Place the bananas on the sheet pan and freeze 1 hour.
- Melt the chocolate and butter in a bowl over a saucepan of simmering water, stirring occasionally.
- Arrange the dipping decorations on several flat plates. Working with 1 banana at a time, dip it in the chocolate and turn to completely coat (spoon some on, if needed). Roll the dipped banana in the desired decorations, transfer to the sheet pan, and return to the freezer.
- Once frozen, store the bananas in an airtight container.
- Serving suggestion: To serve at a kid's party, paint a hunk of styrofoam and stick the banana handles in the top, so they stand upright.

- Cut off a inch off the bottom of each unpeeled banana, and gently insert a popsicle stick into each one. Then unpeel bananas. Place banana's onto a baking sheet and freeze until frozen.
- In a double boiler melt chocolate chips and shortening. Dip frozen bananas into melted chocolate, then roll in coconut, chopped nuts, sprinkles, or anything you want.
- Eat immediatly or freeze to eat them another time. Enjoy!

- Slice bananas into 1/2-inch pieces. Cover a baking sheet in parchment paper or waxed paper to prevent sticking. Arrange banana slices flat on baking sheet without touching, and freeze for at least 30 minutes.

- Prepare your work space. Place a cutting board for the banana slices to your left. In front of you arrange bowls for the toppings and leave a space for the bowl of melted chocolate. To your right, set a parchment or silicone baking mat-lined baking sheet for placing the dipped banana slices. Have 2 forks handy. Your work will flow from left to right (reverse if you are left-handed).
- Melt the chocolate. Fill the bottom of the double-boiler or saucepan with an inch of water and bring to a simmer. Cover with the top of the boiler or place a metal or glass bowl on the saucepan. Place the chocolate in the bowl. Let the chocolate melt, stirring occasionally, until the chocolate is completely melted. Remove the bowl with the chocolate and transfer to your work station. - Add the coconut oil to the chocolate. Add the coconut oil to the chocolate and stir until completely combined. The coconut oil will help loosen the chocolate and make a thinner coat over the bananas.
