This is one of my favorite pies! It would be a great addition to a holiday meal or a summer picnic.

- Place 2 ounces chocolate and 2 tablespoons butter in a microwave-safe bowl. Melt in the microwave on 30% power for 2 1/2 minutes, stirring occasionally. Spread over the bottom and up the sides of the pie crust. Place crust in the freezer.
- Beat cream cheese using an electric mixer until smooth. Beat in sour cream, sugar, and vanilla bean paste. Remove crust from freezer and pour in filling.
- Combine strawberries and jam in a bowl and spread on top of the cream cheese layer.
- Combine remaining chocolate and butter in a microwave-safe bowl. Heat in the microwave until melted, about 1 minutes. Drizzle over the pie using a spoon. Refrigerate pie for about 30 minutes before serving.

STRAWBERRY CREAM PIE WITH CHOCOLATE COOKIE CRUST
A chocolate cookie crust makes this strawberries-and-cream pie taste a bit like Neapolitan ice cream, but other crumbly cookies or sweet crackers work too. The best strawberries have a heady scent - they should smell like candy - and likely won't need sweetening. But strawberry sweetness varies greatly, so taste one and toss them all with a little sugar as needed.

- Make the crust: Heat oven to 350 degrees with a rack in the middle position. Place cookies, sugar and salt in a food processor and process until finely ground. (You should have about 1 1/2 cups). Add butter and pulse until the mixture looks like wet sand.
- Transfer mixture to a standard 9-inch pie plate. Using the bottom of a flat-bottomed measuring cup, press the mixture up the sides and into the bottom of the pie plate. Bake on the middle rack until dry and set, 20 to 25 minutes. (If the crust slumps or puffs while it bakes, gently press it back into place while still warm with the measuring cup and proceed.) Let cool completely.
- Make the filling: Place 3 tablespoons cold water in a small bowl. Sprinkle gelatin over top and let stand until softened, about 5 minutes. In a large bowl, whisk together sour cream and vanilla until smooth. Combine cream, sugar and 1/4 teaspoon salt in a small pot and bring to a simmer over medium heat. Whisk in gelatin mixture until completely dissolved, then whisk cream mixture into sour cream. Pour filling into cooled crust and refrigerate until set, at least 2 hours and up to 2 days. (If making ahead, wrap tightly once set).
- Toss strawberries with sugar, if needed, and let sit for 10 minutes. Pile strawberries and any accumulated juices on top of pie just before serving.

- Melt 3/4 cup of of the white chocolate chips in the microwave (30 second intervals) for about 1-2 minutes, being careful not to burn. Set aside. Beat the heavy cream, vanilla extract, and 1/2 cup of the confectioners sugar with an electric mixer in a bowl until it becomes thick. In a separate bowl, beat together the softened cream cheese, the other 1/2 cup of confectioners sugar, and the cup of melted white chocolate. Gently fold the whipped cream into the cream cheese mixture. Spread the cream cheese mixture into the chocolate pie crust. (I recommend not putting all of the cream in the crust at first. There is a lot of cream and it will overflow as you stuff in the quart of strawberries.) Then, press the sliced berries into the mixture ALL over it. Find every single available nook & cranny, and shove a berry in it! Melt the remaining white chocolate in one bowl & melt the milk chocolate in another. Drizzle the melted milk chocolate on first...then the white chocolate. Make sure the drizzles are thin and spread out because if you pour the chocolate on top (like i did) it is impossible to cut when the chocolate chips harden again.

- Gently rinse strawberries and dry on paper towels (berries must be completely dry). Line cookie sheet with waxed paper.
- In 1-quart saucepan, melt chocolate chips and shortening over low heat, stirring frequently. Remove from heat.
- Dip lower half of each strawberry into chocolate mixture; allow excess to drip back into saucepan. Place on waxed paper-lined cookie sheet.
- Refrigerate uncovered about 30 minutes or until chocolate is firm, or until ready to serve. Store covered in refrigerator so chocolate does not soften (if made with oil, chocolate will soften more quickly at room temperature).

CHOCOLATE COVERED STRAWBERRIES
This is the simplest version of chocolate covered strawberries I know. Paraffin was originally used instead of shortening. Turn the strawberries upside down and insert by the toothpicks into a piece of styrofoam for easy cooling, or simply place them on a sheet of wax paper. White chocolate may be drizzled over the milk chocolate for a fancier look. They are perfect for weddings when decorated with frosting bow ties, bells, butterflies, roses, etc.

- In a double boiler, melt the chocolate and shortening, stirring occasionally until smooth. Holding them by the toothpicks, dip the strawberries into the chocolate mixture.
- Insert toothpicks into the tops of the strawberries.

- Combine flour and salt; cut in butter and shortening until crumbly. Gradually add ice water, tossing with a fork until dough holds together when pressed. Shape dough into a disk. Wrap and refrigerate 1 hour or overnight., On a floured surface, roll dough to fit a 9-in. pie plate. Trim and flute edge. Refrigerate 30 minutes. Preheat oven to 425°. Line unpricked crust with a double thickness of foil. Fill with pie weights. Bake on a lower oven rack until light golden brown, 15-20 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes. Cool on a wire rack. Reduce oven setting to 325°., In a large bowl, whisk eggs, sugars, melted chocolate, milk, flour and vanilla. Gradually whisk in butter. Pour into crust. Cover edge with foil to prevent overbrowning., Bake at 325° until a knife inserted in the center comes out clean, 35-40 minutes. Remove foil. Cool on a wire rack. Refrigerate, covered, for 3 hours or until chilled.

- To make the butter pie crust, use a pastry blender to cut the butter into the flour and salt until all of the butter is pea sized or smaller. Adding one tablespoon at a time of the cold water, work the dough together just until it sticks together. Take care not to over mix or over work the dough. Shape into a dish and tightly wrap with plastic wrap. Refrigerate at least and hour.
- Roll dough out on a heavily floured surface until it is of even thickness and can fit into a 9 inch pie dish. Poke holes in dough across entire surface of dough to allow steam to escape. Cover with parchment paper and weigh down paper with pie weights or dry beans. Bake crust in 375 F degree oven for 20 minutes, then remove the weights and paper and continue cooking for another 10-20 minutes until the crust is golden brown.
- When crust is done cooking, turn off oven, add chocolate chips, and allow crust to sit in hot oven for a few minutes to allow chocolate to melt. Once melted, use a pastry brush to evenly spread the chocolate across the bottom and up the sides of the crust. Refrigerate to set.
- Mash 2 cups of the strawberries and add water. In a separate dish, combine sugar and cornstarch in a small bowl. Combine both the mashed strawberries with water with the sugar and cornstarch mixture in a medium saucepan. Place saucepan over medium-high heat and bring to a boil, stirring constantly. Allow to boil while stirring for 2-3 minutes until thickened, stirring constantly. I find a wooden spoon with a flat end works best. Remove from heat and stir in butter. Allow to cool enough that you can touch it without getting burnt and pour over strawberries in pastry shell.

- Make strawberry reduction: Add half of the strawberries to a large skillet with sugar. Mash berries with a potato masher or a fork until all of the strawberries are broken down. Turn on the heat to medium high and cook, stirring frequently, until the strawberries have reduced by half and thickened, about 8-10 minutes. Transfer to a container and let cool.
- Make ganache: Place chocolate in a heat proof bowl. In a pot heat heavy cream until bubbling around the edges. Pour cream over chocolate, making sure all the chocolate is submerged. Let sit for 10 minutes. Then whisk together until silky smooth.
- Assemble tart: Spread the reduced strawberries on the bottom of the fully baked chocolate tart. Pour over half of the chocolate and spread evenly. Arrange the strawberries, cut side down on top of the chocolate ganache. Drizzle chocolate ganache on top of strawberries.
