When I was growing up, my mom made these delicious candies every Christmas. They were my favorite then and still are today. -Sue Gronholz, Beaver Dam, Wisconsin

Yield 1-1/4 pounds.

Number Of Ingredients 5

1 teaspoon butter, softened
1 cup sugar
3/4 cup light corn syrup
2 ounces unsweetened chocolate, chopped
1-1/2 cups heavy whipping cream, divided

Steps:

  • Line a 9x5-in. loaf pan with foil and grease the foil with butter; set aside., In a large heavy saucepan, bring the sugar, corn syrup and chocolate to a boil over medium heat; stir until smooth. Add 1/2 cup cream; cook, stirring constantly, until a candy thermometer reads 234° (soft-ball stage). Add another 1/2 cup cream; return mixture to 234° (soft-ball stage). Add the remaining cream; cook to 245° (firm-ball stage)., Immediately pour into prepared pan (do not scrape saucepan). Let stand until firm, about 5 hours or overnight. Using foil, lift candy out of pan. Discard foil; cut candy into 1-in. squares using a buttered knife. Wrap individually in waxed paper; twist ends.

1 cup butter, softened
4 ounces cream cheese, softened
1 cup packed brown sugar
1 large egg yolk
1 teaspoon maple flavoring
2-3/4 cups all-purpose flour
FILLING:
30 caramels
6 ounces cream cheese, softened

Steps:

  • In a large bowl, cream butter, cream cheese and brown sugar until light and fluffy. Beat in egg yolk and flavoring. Gradually beat flour into creamed mixture. Refrigerate 2 hours or until easy to handle., In a microwave-safe bowl, melt caramels; stir until smooth. Stir in cream cheese until blended; set aside. Divide dough in half. Roll each portion between two pieces of waxed paper to 1/4-in. thickness. Spread caramel mixture over dough to within 1/2 in. of edges., Roll up tightly jelly-roll style, starting with a long side. Wrap rolls in plastic wrap; refrigerate 4 hours or until firm., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/4-in. slices. Place 1 in. apart on greased baking sheets. Bake 12-14 minutes or until golden brown. Remove from pans to wire racks to cool.

  • Preheat the oven to 225°. Grease the sides of a 9 inch springform pan (sides should be 3 inches high). Line the bottom of the pan with parchment paper.
  • In a large mixing bowl, beat the cream cheese and sugar on high speed for 3 minutes or until smooth and creamy. Add the eggs and egg yolks 1 at a time, scraping down the sides of the bowl occasionally. Add the vanilla and salt then beat for 30 seconds to blend well. Beat in the sour cream on low speed until well combined, be sure to stop the mixer to scrape down the sides of the bowl.
  • Pour half of the batter into the prepared pan. Drop 5 to 6 tablespoons each of hot fudge sauce and caramel sauce on top of the batter then use a knife to swirl the sauces into the batter. Pour the remaining batter on top and repeat with the caramel and chocolate sauce swirl. The springform pan will be very full.
  • Place the springform pan in the center of the oven. Bake for 75 minutes. The cheesecake will appear jiggly in the center, this is normal, it will firm up after it is completely cooled (if your concerned that it hasn't cooked long enough, check the center of the cheesecake with an instant read thermometer. It should read 150°F). Turn off the oven and let the cake sit in the oven for 1 hour, keep the door closed while it slowly cools down. Remove from oven and cool on a rack for 1 hour until it reaches room temperature. When cooled, cover with plastic wrap and place in the refrigerator for 8 to 12 hours. (The cheesecake will be jiggly in the center when you remove it from the oven but will firm up after it is refrigerated.)
