MODELING CHOCOLATE
A modeling chocolate recipe that has no lumps, is smooth and easy to work with. Can be made from candy melts or real chocolate. Used by the pros.

- Melt candy melts in a plastic or microwave-safe bowl in the microwave or stove-top sauce pan.
- Warm corn syrup and add food coloring. Remember that your final product will be lighter than the color of your corn syrup. You can also add color later if you want.
- Fold mixture together with a spatula until mixture starts to seize and resembles soft serve ice cream.
- It is important to not over-mix or your modeling chocolate will get oily.
- Wrap in plastic and let set until chocolate is firm but still pliable. Usually a couple of hours depending on how hot it is in your room.
- Unwrap chocolate and knead until smooth, smashing any hard lumps with your fingers.
- Re-wrap chocolate and place back in plastic wrap to set up until hard.

EASY CHOCOLATE BARK
This chocolate bark recipe is so easy to make, and ready in a hurry! I typed up my favorite dark chocolate trail mix chocolate bark recipe below. Use this technique and change it up using the ideas provided within the post. Recipe yields about 25 pieces.

- If you have time, toast the nuts/seeds: Preheat the oven to 350 degrees Fahrenheit. Toast the nuts/seeds on a rimmed baking sheet until fragrant and turning lightly golden on the edges, about 6 to 9 minutes. Transfer the nuts to a cutting board and roughly chop them.
- In the meantime, melt the chocolate in a microwave-safe bowl in 30-second increments, stirring after each one. Don't overdo it. The chocolate is done when it's about 90% melted-keep stirring off the heat and the pieces should completely dissolve. (Alternately, you can use melt it in a heat-proof bowl set over a saucepan of gently simmering water.)
- Cover a large, rimmed baking sheet with parchment paper. Use a silicone or rubber spatula to spread chocolate evenly over the center area of the baking sheet-aim for about 1/4″ thickness (it won't reach the edges).
- Sprinkle the nuts evenly over the chocolate, followed by the dried fruit. If you're adding flaky salt, crush it between your fingers as you sprinkle it over the chocolate. Lightly use your palms to press the toppings into the chocolate.
- If you're in a hurry, place the pan on a flat surface in the refrigerator to harden for about 15 minutes. If you're not, let the chocolate cool at room temperature for 2 to 4 hours, until completely hardened.
- Once the chocolate is completely hardened, use your hands to break it into about 25 pieces. Serve immediately, or cover and store at room temperature for up to 1 week.

- Preheat oven to 350°F. Butter two 8-by-2-inch round cake pans; dust with flour, tapping out excess. In a large bowl, whisk together flour, sugar, cocoa, baking powder, baking soda, and salt. Whisk in eggs, buttermilk, water, vanilla, and oil.
- Divide batter evenly between prepared pans. Bake until tops spring back when lightly pressed, about 30 minutes. Transfer pans to a wire rack; let cool 15 minutes. Invert cakes onto rack, remove parchment, then turn top-side up (to prevent sticky tops from sticking to rack); let cool completely.
- Spread 1 1/2 cups frosting over top of one cooled cake layer. Top with remaining layer. Spread a thin coat (about 1 cup) of frosting over top and sides of cake to create a "crumb coat." Refrigerate about 20 minutes, then frost top and sides of cake with remaining frosting. (For a more refined look, trim domed top of cake flat before layering and frosting.)

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour two nine inch round pans.
- In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, oil and vanilla, mix for 2 minutes on medium speed of mixer. Stir in the boiling water last. Batter will be thin. Pour evenly into the prepared pans.

- Clean the balloons. Using a damp paper towel, clean each balloon to remove any powder, residue or dust.
- Dollop the chocolate. Drop the melted bittersweet chocolate, 1 tablespoon at a time, 2–3 in. apart on a parchment paper-lined baking sheet. There should be eight circles.
- Drizzle. Drizzle 1 tablespoon of white chocolate over the bittersweet chocolate. Swirl the white chocolate slightly into the bittersweet chocolate with a toothpick or wooden skewer.
- Dip the balloons. Holding the tied end, dip 1 balloon halfway into the bowl of melted bittersweet chocolate, rocking it back and forth slightly to coat.
- Attach the balloons. To secure the balloons to the baking sheet, lightly press each balloon dipped side down on top of one of the chocolate dollops.
- Pop the balloons. Using a toothpick or wooden skewer, gently pierce each balloon. Peel each ballon out of its chocolate bowl.
- Fill the bowls. Fill the chocolate bowls with ice cream, fresh fruit, candy or any of your favorite sweet treats. Pro Tip: Almost any treat can be served in these bowls, just so long as its not hot.
