1/2 cup (1 stick) unsalted butter, room temperature, plus more for pan
6 ounces blackberries (1 1/3 cups)
1 1/4 cups plus 2 tablespoons sugar
1 1/2 cups all-purpose flour
1/2 teaspoon coarse salt
1/4 teaspoon baking powder
2 large eggs, lightly beaten
1/2 teaspoon pure vanilla extract
1/2 cup sour cream, room temperature

Steps:

  • Preheat oven to 350 degrees. Lightly butter a 5-by-9-inch loaf pan and line with parchment, leaving a 2-inch overhang on all sides; butter parchment. In a food processor, puree blackberries with 2 tablespoons sugar. In a medium bowl, whisk together flour, salt, and baking powder.
  • In a large bowl, using an electric mixer, beat together butter and 1 1/4 cups sugar until light and fluffy, 5 minutes. Add eggs and vanilla and beat to combine, scraping down bowl as needed. With mixer on low, add flour mixture in 3 additions, alternating with sour cream, beginning and ending with flour mixture.
  • Transfer half the batter to pan and dot with 1/2 cup blackberry puree. Repeat with remaining batter and puree. With a skewer or thin-bladed knife, swirl batter and puree together. Bake until golden brown and a toothpick inserted in center of cake comes out clean, about 1 1/4 hours. Let cool in pan on a wire rack, 30 minutes. Lift cake out of pan and place on a serving plate; let cool completely before slicing.

1 package (8 ounces) cream cheese, softened
4 eggs
1/4 cup sugar
1/2 teaspoon vanilla extract
1 package devil's food cake mix (regular size)
1-1/4 cups water
1/2 cup canola oil
1 package (10 ounces) frozen sweetened sliced strawberries, thawed

Steps:

  • In a small bowl, combine the cream cheese, 1 egg, sugar and vanilla; set aside. In a large bowl, combine the cake mix, water, oil and remaining eggs. Beat on low speed for 30 seconds; beat on medium for 2 minutes. , Pour half of the batter into a greased 13x9-in. baking pan. Drop half of the cream cheese mixture by tablespoonfuls over the batter. Repeat layers. Cut through batter with a knife to swirl the cream cheese mixture. , Bake at 350&Deg; for 35-40 minutes or until a toothpick inserted in the center comes out clean (cake may crack). Cool on a wire rack., Meanwhile, in a blender, cover and process strawberries until pureed. Serve with cake.

8 ounces semisweet chocolate, premium
1 1/2 cups butter, softened
1 (8 ounce) package cream cheese, softened
3 cups sugar
6 large eggs, room temp
1 tablespoon vanilla
3 cups all-purpose flour
4 tablespoons semisweet chocolate, grated
4 tablespoons confectioners' sugar

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 10 inch tube pan and lightly dust with flour.
  • Melt the chocolate in the top of a double boiler or in a heatproof bowl set over a pan of hot water. Set aside.
  • With an electric mixer, cream the butter, cream cheese and vanilla until smooth.
  • Add sugar beat until light and fluffy, approximately 5 minutes.
  • Add the eggs two at a time.
  • Gradually incorporate the flour mixture on low speed.
  • Pour half of the batter into the prepared pan.
  • Stir the chocolate into the remaining batter and then pour into the plan.
  • With a metal spatula or knife, swirl the two batters to create a marbled effect.
  • Bake, 60-75 minutes, or until cakes tests done. Cover with foil halfway through the baking.
  • Let stand for 15 minutes.
  • Turn out the cake onto a wire rack to unmold.
  • To serve, sift together grated chocolate and confectioners' sugar. Dust on top of cake.

1 jar (10 ounces) seedless blackberry or black raspberry spreadable fruit, divided
2/3 cup butter, softened
1-1/2 cups sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
3/4 cup baking cocoa
1-1/2 teaspoons baking soda
1 teaspoon salt
2 cups sour cream
Confectioners' sugar, optional
RASPBERRY CREAM:
1 package (10 ounces) frozen sweetened raspberries, thawed
1 carton (8 ounces) frozen whipped topping, thawed
Fresh raspberries and blackberries, optional

Steps:

  • Place 3/4 cup of spreadable fruit in a microwave-safe bowl. Cover and microwave on high for 30-50 seconds or until melted; stir until smooth and set aside. , In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla. Combine the flour, cocoa, baking soda and salt. Combine sour cream and melted fruit spread; add to creamed mixture alternately with dry ingredients, beating well after each addition., Pour into a greased and floured 10-in. fluted tube pan. Cool for 10 minutes before removing from pan to a wire rack. , Place remaining spreadable fruit in a microwave-safe bowl.
