1 pound boneless beef top loin steak, trimmed and cut into thin strips
3 garlic cloves, minced
1 to 2 tablespoons canola oil
1 package (14 ounces) frozen pepper strips, thawed
1-1/3 cups chopped sweet onion
2 plum tomatoes, chopped
1 can (4 ounces) chopped green chilies
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon pepper
Hot cooked rice

Steps:

  • In a large skillet or wok, stir-fry beef and garlic in oil until meat is no longer pink. Remove and keep warm., Add peppers and onion to pan; stir-fry until tender. Stir in the tomatoes, chilies, salt, oregano, pepper and beef; heat through. Serve with rice.

1-1/2 pounds boneless beef top round steak
1 can (10 ounces) diced tomatoes and green chiles
1 medium onion, chopped
2 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon chili powder
1 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon pepper
2 cans (15 ounces each) pinto beans, rinsed and drained
3 cups hot cooked rice
1/2 cup shredded cheddar cheese
6 tablespoons sliced ripe olives
6 tablespoons thinly sliced green onions
6 tablespoons guacamole

Steps:

  • Place round steak in a 3-qt. slow cooker. In a small bowl, combine the tomatoes, onion, garlic and seasonings; pour over steak. Cover and cook on low for 8-9 hours or until meat is tender. , Remove meat from slow cooker. Add beans to tomato mixture. Cover and cook on high for 30 minutes or until beans are heated through. When cool enough to handle, slice meat. In individual bowls, layer the rice, meat and bean mixture. Top with cheese, olives, onions and guacamole.

Grilled ham steak brushed with a spicy glaze of jalapeno jelly, garlic and cilantro.

1 Cook's® Bone-in Thick-Cut Ham Steak (about 2 pounds)
1 jar 10-ounces Jalapeno Pepper Jelly (about 3/4 cup)
2 cloves garlic, minced
1/4 cup chopped fresh cilantro

Steps:

  • 1. Prepare grill for medium heat.
  • 2. Combine jelly and garlic in small saucepan; cook over medium heat 2 minutes, or until jelly is completely melted, stirring occasionally. Remove from heat. (Or, combine in small microwavable bowl. Microwave on HIGH 1 minute, or until jelly is melted.) Stir in cilantro. Reserve 1/4 cup jelly mixture; set aside.
  • 3. Grill ham steak 5 minutes; turn over. Brush with half of the remaining jelly mixture; continue grilling 10 minutes, until ham reaches an internal temperature of 160 degrees F when tested in center with meat thermometer, turning ham steak over and brushing with remaining jelly mixture after 5 minutes.
  • 4. Serve with the reserved jelly mixture.

3 tablespoons tequila
1 teaspoon grated lime rind
3 tablespoons fresh lime juice
1 tablespoon olive oil
1 1/4 teaspoons dried chipotle powder
1 teaspoon oregano leaves
3/4 teaspoon fresh ground black pepper
1/2 teaspoon ground cumin
1/2 teaspoon kosher salt
2 teaspoons minced garlic
4 beef top sirloin steaks (1-inch thick about 6 oz. each)
cooking spray
1 small avocado
2 green onions, chopped
2 tablespoons chopped fresh cilantro
2 tablespoons light sour cream
1/4 teaspoon kosher salt
1 pinch cayenne pepper
1 (15 ounce) can black beans, rinsed and drained
1 cup frozen whole kernel corn, thawed
1/2 cup chopped red bell pepper
1/4 cup chopped green onion
1/4 cup chopped fresh cilantro
2 -3 jalapeno peppers, seeded and minced
3 tablespoons fresh lime juice
1 tablespoon olive oil
1 teaspoon minced garlic
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper

Steps:

  • For the Steak: Stir together tequila, lime rind and next 8 ingredients in a large bowl until blended. Trim fat from steaks; add steaks to marinade, turning to coat. Cover and chill 8 hours, turning occasionally or, if desired, let stand at room temperature up to 2 hours.
  • Remove steaks from marinade. Bring marinade to a boil in a small saucepan over medium heat and boil 2 minutes.
  • Heat a grill pan coated with cooking spray over medium-high heat. Grill steaks 5 to 6 minutes on each side or to desired degree of doneness, basting occasionally with marinade.
  • Remove steaks from grill pan, and place on a serving plate. Dollop each with Guacamole Butter. Spoon Fiesta Black Bean Salsa around steaks, and serve immediately with remaining Guacamole Butter.
  • For the Guacamole Butter: Peel and coarsely chop small avocado, discarding pit.
  • Process avocado, chopped green onions and remaining ingredients in a food processor or blender until smooth, stopping to scrape down sides. Place mixture in a bowl; cover and chill until ready to serve.
  • For the Fiesta Black Bean Salsa: Stir together all ingredients in a large bowl. Cover and let stand at room temperature until ready to serve.
