3 cups all-purpose flour
1 1/2 teaspoon baking soda
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup walnuts (chopped)
1 cup bittersweet chocolate chips
4 bananas (ripened)
1 1/2 cups sour cream
2 eggs
3/4 cup applesauce
1 teaspoon vanilla extract
1 cup sugar
1/2 cup brown sugar (packed)
2 teaspoon cinnamon (ground)
1/2 cup walnuts (chopped)
1 cup powdered sugar
1 teaspoon vanilla extract
2 tablespoon milk

Steps:

  • Preheat oven and prepare cake pan: Preheat your oven to 350 F degrees. Spray a 10 inch angel food cake pan with cooking spray. Set aside.
  • Combine dry ingredients: In a large bowl combine the flour, baking soda, baking powder, salt, walnuts and chocolate chips.
  • Combine wet ingredients: In another medium bowl mash the bananas using a fork or a potato masher. Add the sour cream, eggs, applesauce, vanilla extract and granulated sugar and whisk everything together.
  • Combine wet and dry: Pour the wet ingredients into the bowl with the flour and using a spatula mix everything together.
  • Prepare filling: In another small bowl combine all the filling ingredients together.
  • Assemble cake: Spread 1/3 of the batter into the prepared cake pan. Sprinkle 1/3 of the filling over the batter and repeat 2 more times to finish the rest of the batter and filling.
  • Bake: Place the cake pan in the oven and bake for about 1 hour or until a toothpick inserted in the center comes out clean. Cool the cake in the pan for 10 minutes then remove and continue cooling on a wire rack.
  • Make glaze: Meanwhile, make the glaze by whisking all the ingredients together in a small bowl, adding more milk if needed. The glaze should be smooth and thin enough to drizzle.
  • Drizzle with glaze, cut and serve: Drizzle the glaze over the cake, cut into slices and serve.

2 large ripe bananas, mashed
2 eggs
120 ml flavorless oil
250 ml warm water
120 ml milk
2 tsp coffee
1/2 tsp salt
400 grams sugar
250 grams flour
80 grams cocoa powder
1 1/2 tsp baking powder
1 1/2 tsp baking soda

Steps:

  • In a pan heat the milk and add the coffee to it. Mix well and set aside (make sure this mixture is not too hot while adding it to the other ingredients)
  • In a large bowl combine the dry ingredients: flour, sugar, salt, cocoa powder, baking powder and baking soda. Mix well
  • In another bowl, beat together all the wet ingredients : eggs, coffee & milk mixture, water and oil. To this mixture add mashed bananas and mix well
  • Combine both the mixtures dry & wet together. Beat together and pour the batter in a baking dish
  • Bake at 180 degrees C in a 9-inch baking dish for 40 to 50 mins or until and inserted skewer comes out dry

Sugar substitute equivalent to 3/4 cup sugar
1/3 cup packed brown sugar
2 teaspoons vanilla extract
2 large eggs, room temperature
1/2 cup water
1-1/3 cups all-purpose flour
1/2 cup nonfat dry milk powder
3 tablespoons baking cocoa
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed ripe bananas (about 2 medium bananas)
Confectioners' sugar

Steps:

  • Preheat oven to 375°. Coat a 9-in. square baking pan with cooking spray., Cream butter, sugar substitute and brown sugar until light and fluffy. Add vanilla and eggs, one at a time, beating well after each addition. Stir in water. Whisk together flour, milk powder, cocoa, baking powder, baking soda and salt; add to creamed mixture just until combined. Stir in bananas., Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean and cake begins to pull from sides of pan, 23-28 minutes. Cool completely in pan on a wire rack. Dust with confectioners' sugar.

1 teaspoon vanilla
2 1/2 cups mashed mashed ripe bananas (about 5)
3 cups flour
2 teaspoons baking powder
2 teaspoons baking soda
1 cup sour cream
3/4 cup firmly-packed brown sugar
1 teaspoon cinnamon (or more if desired)
1 (300 g) package semi-sweet chocolate chips

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch baking pan.
  • In a bowl, cream butter and sugar on medium speed of electric mixer.
  • Add in the eggs and beat until smooth.
  • Add in vanilla and mashed bananas; mix until smooth.

5 tablespoons water
2 cups spelt flour
3 tablespoons cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
1½ cups mashed ripe banana ((4 to 5 bananas))
3/4 cup coconut sugar
1/2 cup non-dairy milk ((at room temperature, see note 1))
1/3 cup melted coconut oil
1 teaspoon vanilla extract
1/4 teaspoon fine sea salt
3/4 cup chopped walnuts
1/2 cup chopped dark chocolate
1 cup rolled oats, divided
3/4 cup walnuts
1/4 cup coconut sugar
3 tablespoons melted coconut oil
1/2 teaspoon cinnamon

Steps:

  • Preheat: Preheat oven to 350°F (177°C).
  • "Flax egg": In a small bowl, whisk together flax and water. Set aside for 10 minutes to thicken.
  • Walnut Streusel: Add ½ cup of the oats to a food processor, pulse into powder. Transfer oats to a medium bowl. Pulse walnuts until finely chopped. Transfer walnuts to the bowl. Add remaining ½ cup (whole) oats, sugar, coconut oil, cinnamon, and salt. Stir until clumps form. Set aside.
  • Dry ingredients: In a large bowl, whisk together spelt flour, cocoa powder, baking powder and baking soda. Set aside.
