OLD-FASHIONED STACK CAKES

Old-Fashioned Stack Cakes image

My grandmother has always fixed these at Christmas and they are the first thing everyone asks about. "Where is the stack cake?" The super thin layers are what make this recipe stand out...delicious! -Stephanie Gilbert, Whitesburg, Kentucky

Time 40m

Yield 3 stack cakes (6 slices each).

Number Of Ingredients 13

1/2 cup butter, softened
1 cup sugar
2 large eggs
2 teaspoons vanilla extract
4 cups all-purpose flour
4 teaspoons baking powder
1-1/2 teaspoons ground ginger

Repeat with remaining batter., To assemble, place 1 cake layer on a serving plate; spread with 2 tablespoons apple butter. Repeat layers 4 times; top with a sixth layer. OPEL'S CHOCOLATE STACK CAKE

Opel's Chocolate Stack Cake image

It appears that I clipped this recipe out of a magazine it's so old. The lady's name is Opel Forshee, which I don't know her personally but she looks like a very sweet little lady. I have made this recipe many times and it is certainly a hit with my family. It's also quite an impressive cake. NOTE: this recipe makes 10 really...

Number Of Ingredients 15

2 c all-purpose flour
1 c self-rising flour
1 1/4 tsp baking soda
1/2 tsp baking powder
4 eggs, room temperature
2 c granulated sugar
1 1/2 c buttermilk
3/4 c vegetable or canola oil
1 tsp pure vanilla extract
CHOCOLATE ICING:
3 c plus 1 tbsp granulated sugar
1/2 c cocoa powder
9 to 10 oz evaporated milk, undiluted
1 1/2 stick butter
1 1/4 tsp pure vanilla extract

Steps:

  • 1. Preheat oven to 350. Combine both flours, baking soda and baking powder and set aside.
  • 2. CAKE: Beat eggs in a large mixer bowl and add sugar, stirring to mix. In a seperate bowl, combine buttermilk and oil, mixing well. Add flour mixture and buttermilk mixture alternately to egg mixture, beginning and ending with flour mixture, beating well after each addition. Stir in vanilla. Pour 2/3 cup batter into greased and floured round cake pans (I use 8" pans). Bake at 350 for 8 minutes or until layers begin to brown around edges. Allow to cool in pans 5 minutes, remove cake from pans and stack layers, placing a paper towel between each layer. Repeat with remaining batter until 10 layers are baked. PLEASE NOTE: Prepare icing after layers are baked.
  • 3. ICING: Combine sugar & cocoa in a large heavy saucepan. Add milk & combine well. Cook over medium heat, stirring constantly until sugar melts. Add butter, stirring until melted. Allow to come to a boil then continue boiling for 7 minutes. Remove from heat then add in vanilla. Icing will be thin at this point but will harden later. Ice cooled layers while icing is warm.
  • 4. ASSEMBLE: Start stacking layers and be generous with icing between layers because there is plenty. Once last layer is on top, ice generously. Icing will run down the cake, which actually will ice the sides. Keep spooning icing back on top as it puddles.
  • 5. Note: the icing will start to get gooey as it cools but then will harden later. This cake is better made the day before serving. This allows the icing to harden properly. If you can't make it a day ahead, make it in the morning to serve that evening.

CHOCOLATE LITTLE LAYER CAKE

Chocolate Little Layer Cake image

This recipe came to The New York Times in 2009 from Martha Meadows of somewhere between Slocomb and Hartford, Ala., where the worth of a cook can be measured in cake layers. In this corner of the country, everyone knows whose cakes are tender and whose consistently reach 12 thin layers or more. Ms. Meadows learned to bake 15-layer cakes from her mother, who cooked each layer one at a time in a cast-iron hoe-cake pan. The cake is frosted with warm boiled chocolate icing. Here is our tribute to that.

Time 2h30m

Yield One 12-layer cake

Number Of Ingredients 16

2 sticks butter, more to grease pans
2 1/2 cups sugar
1/3 cup shortening
5 eggs
2 teaspoons vanilla
5 cups cake flour
1 teaspoon salt
2 teaspoons baking soda
5 teaspoons baking powder
2 cups milk
5 cups of sugar
1/3 cup cocoa
1 stick butter, cut into pieces
1 15-ounce can evaporated milk
1/2 cup whole milk
2 teaspoons vanilla

Steps:

  • Preheat oven to 400 degrees. Grease three 9-inch cake pans and line with rounds of parchment or waxed paper.
  • In a mixer, cream together butter, sugar and shortening until fluffy, about 3 minutes. Beat in eggs one at a time and continue to mix on medium until eggs are well incorporated. Stir in vanilla.
  • Sift flour, then add salt, baking soda and baking powder. Sift a second time. With mixer on low, alternately add flour mixture and milk in about 4 additions, then increase speed to medium. Beat until smooth, about 4 to 5 minutes, scraping down sides of bowl.
  • Spread 3/4 cup batter in each pan. Bake 6 to 8 minutes, or until cake springs lightly when pressed with a finger. Flip cake out of pan onto paper towels or cake rack while still very warm. Repeat with second set of layers.
  • When first layers go into oven, start to make icing. Put sugar and cocoa in a deep, heavy-bottomed saucepan and mix well. Turn heat to medium-high and add butter and milks, bringing to a boil. Boil for about 4 minutes, stirring continually, careful to watch that it does not boil over. Lower heat to simmer, add vanilla and stir occasionally for another 7 to 10 minutes. If using a candy thermometer, cook to the point just before soft ball stage or about 230 degrees.
  • Begin icing first layers, still warm, when second batch is in the oven. Flip layers over so that top side faces up. Use about 4 tablespoons of icing per layer. Icing will be thin but will firm up as it cools. Stack layers, then continue icing and stacking as layers are baked.
  • When all layers are iced and stacked, glaze top and sides of cake. Contours of layers will be visible through icing. If icing hardens too much while frosting cake, set back on low heat and stir until it is spreadable.

Yield One stacked cake to serve a crowd

Number Of Ingredients 21

Dry Ingredients
21 ounces (4 1/4 cups) all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon cinnamon
Creaming Ingredients
6 ounces (1 1/2 sticks) unsalted butter
10 ounces (1 1/4 cups) superfine granulated sugar
3/4 cup molasses
2 eggs
1/2 cup buttermilk
For the Dried Apple Filling
8 to 12 cups dried apples
2 pounds (4 cups) superfine granulated sugar
2 teaspoons cinnamon
2 teaspoons nutmeg
2 tablespoons molasses
3 cups water
For Serving
Confectioners' sugar

Steps:

  • 1. Preheat the oven to 350°F and place the rack in the middle position.
  • 2. Combine the dry ingredients in a bowl and whisk to combine. Set aside.
  • 3. Combine the butter and sugar in the bowl of a standing mixer fitted with the paddle attachment and mix on medium speed until wet and grainy.
  • 4. Add the molasses. Scrape the sides of the bowl with a flexible spatula to get all of the molasses into the mixture.
  • 5. Add the eggs one at a time. Scrape all the way to the bottom of the bowl and mix on low speed.
  • 6. Alternately add the buttermilk and the dry mixture about a quarter at a time. Stop the mixer to scrape the bowl and turn it on again on low speed for about 10 seconds. The mixture should be stiff like a soft cookie dough.
  • 7. Shape the dough into a ball and wrap it in plastic wrap. Refrigerate for 30 minutes.
  • 8. Divide the dough into 6 or 8 equal portions and place each one on a round piece of parchment paper a little larger than a 9-inch cake pan. Roll out the dough to the size of the parchment. Place the cake pan over the disk and trim away the excess around the edge.
  • 9. Leaving the parchment paper underneath, lift the disks onto baking sheets and bake them for approximately 10 minutes, or until the top surface appears dry and a wooden skewer inserted in the center comes out clean.
  • 10. Slide the disks off the baking sheet onto a flat surface to cool.
  • 11. To make the filling, combine all the ingredients in a large, heavy-bottom saucepan and bring to a light simmer. Immediately transfer to the work bowl of a food processor fitted with the steel blade and pulse into a thick paste.
  • 12. To assemble the cake, spread about 1 cup of the filling onto each layer, taking care to center each disk on top of the one beneath it. Repeat until all the layers are used. Do not put apple filling on top of the cake.
  • 13. Wrap the cake well and refrigerate it for up to 24 hours. This gives the apple filling time to work itself into the cake. Dust with confectioners' sugar and serve chilled.
