1 cup butter, softened
1/2 cup sugar
1 large egg yolk
1 teaspoon vanilla extract
1/2 teaspoon salt
2-1/4 cups all-purpose flour
1/2 cup dried cranberries, chopped
6 tablespoons finely chopped crystallized ginger, optional

Steps:

  • In a bowl, cream butter, sugar, egg yolk, vanilla and salt until light and fluffy. Gradually add flour. Stir in cranberries and, if desired, ginger. Divide the dough in half; form each half into a 6x3x1-in. block. Cover with plastic wrap and refrigerate 3 hours or up to 2 days. , Preheat oven to 350°. Unwrap logs; cut the dough into 1/4-in.-thick slices. Place on ungreased parchment-lined baking sheets. Bake 12-15 minutes or until edges are golden. Remove to wire racks to cool.

150 g unsalted butter
2/3 cup caster sugar
1/4 cup cocoa
1/3 cup desiccated coconut
1 egg, lightly beaten
125 g Savoiardi cookies, chopped
3/4 cup dried cranberries
drinking chocolate, to dust

Steps:

  • Grease a 29cm x 19cm slice pan.
  • Combine butter, sugar & cocoa in a saucepan over medium heat and cook, stirring often until sugar dissolves.
  • Transfer mixture to a bowl and stir in coconut, egg, savoiardi and cranberries.
  • Press mixture into pan and cover & refrigerate for 3 hours until firm.
  • Dust with drinking chocolate and cut into squares to serve.

1 ½ cups graham cracker crumbs
½ cup butter, melted
1 ½ cups sweetened dried cranberries (such as Craisins®)
1 (14 ounce) can sweetened condensed milk
1 ¼ cups pecan halves
1 cup flaked coconut
¾ cup white chocolate chips
¾ cup bittersweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking dish with parchment paper or grease.
  • Mix graham cracker crumbs and butter together in a bowl; press into the prepared baking dish.
  • Stir cranberries, sweetened condensed milk, pecans, coconut, white chocolate chips, and bittersweet chocolate chips together in a bowl; gently spread over the graham cracker crust.
  • Bake in the preheated oven until edges are golden brown, 25 to 28 minutes; cool on a wire rack.
