BACON, CHEDDAR, & CHIVE SAVORY PANCAKES



Bacon, Cheddar, & Chive Savory Pancakes image

Wonderfully easy to make from scratch and easily adapted to a whole host of personalized ingredients, these pancakes are sure to be a dinner hit with kids and adults alike.

2 cups all purpose flour
2 tbsp sugar
1/8 tsp salt
2 large eggs
1.5 cups milk
1/3 cup melted butter ((about 75 grams))
1 tbsp baking powder
3/4 cup cheddar cheese (grated (about 85 g), plus some to serve)
1/4 cup chives (chopped (or scallion greens), plus some to serve)
6 strips bacon (finely chopped)
sour cream (to serve)

Steps:

  • Cook the chopped bacon in a skillet until crispy. Drain the fat and set the bacon aside.
  • Preheat a griddle (if using) or skillet over medium heat.
  • Combine flour, salt, and sugar in a large bowl. Add the eggs, milk, and melted butter and mix thoroughly until well combined.
  • Stir in baking powder, taking care to get it thoroughly mixed into the batter. Let the batter stand for 5 minutes.
  • Add the cheese, cooked bacon, and chives into the batter, stirring until just combined.
  • Pour the batter onto the preheated griddle/pan (see note below about adding butter); I like to use about 1/2 cup of batter per pancake, but you can go bigger or smaller depending on your personal preferences. Cook until the bottom is browned, the edges are looking solid, and bubbles are coming up through the center of the pancake. Flip over and cook for an additional 2 minutes or so, then set aside to cool.
  • Garnish with sour cream, and additional cheese and chives.

These savory, pan-fried pancakes are layered with softened butter and filled with the mild onion flavor of chives and scallions.

2 cups flour
1 teaspoon salt
1 cup water
1/2 tablespoon sesame oil
1/2 cup thinly sliced scallion
1/2 cup sliced chives
3 tablespoons unsalted butter, room temperature
vegetable oil, for frying
1/4 cup low sodium soy sauce
1 tablespoon rice wine vinegar
2 teaspoons sugar
1 teaspoon sesame oil
1 teaspoon garlic powder
1/4 teaspoon ground ginger

Steps:

  • Whisk together the dipping sauce, making sure the sugar dissolves, and set aside.
  • Whisk together the flour and salt in a large bowl.
  • Bring 1 cup of water to a boil in a small saucepan.
  • Measure out 3/4 cup of water and pour over the flour mixture.
  • Mix together with a fork. Add the sesame oil and mix. The dough will be shaggy.
  • Add 2 more tablespoons of the remaining hot water. And mix with a wooden spoon until the shabby dough comes together.
  • Shape into a mound in the bowl, then transfer to a floured surface. Knead for 7-10 minutes, incorporating more flour as needed, until the dough becomes smooth.
  • Shape the dough into a ball, wrap in plastic wrap, and cover with a towel. Let rest for 1 hour at room temperature.
  • Meanwhile, combine the scallion and chives in a bowl and set aside.
  • Flour a surface and shape the dough into a thick log. Cut into 6 portions.
  • Work with one portion of dough at a time, keeping the others covered with a damp towel.
  • Flatten the dough portion by hand. Use a rolling pin to roll into a very thin rectangle, about 12 x 8 inches, with the long side facing you.
  • Brush all over with a thin layer of softened butter. Sprinkle evenly with 1/4 teaspoon of salt and about 2 tablespoons of the scallion-chive mixture.
  • Tightly roll the dough away from you so you're left with a log. Gently roll the log back and forth on the surface with your hands so that the log has an even thickness throughout.
  • Starting at one end, roll the dough into a tight coil, tucking the end piece underneath. This should resemble a cinnamon bun. Then flatten slightly with the palm of your hand. Place on a parchment-lined baking sheet and cover with a damp towel.
  • Repeat with remaining portions of dough, then let rest at room temperature under the damp towel for 15 minutes.
  • Cut 4 small squares of parchment paper and flour a work surface.
  • Place a bun onto the floured surface and roll into a 6-1/2 inch round. Place back onto the parchment-lined baking sheet and top with a small square of parchment paper. Cover with the damp towel.
  • Continue rolling out the remaining dough portions, stacking with parchment squares between dough rounds.
  • Heat about 1/2 tablespoon of vegetable oil in a nonstick skillet over medium low heat. Cook for 2-3 minutes per side until golden brown.
  • Transfer to wire rack set inside a baking sheet. Repeat with remaining pancakes.
  • Cut each pancake into 4 wedges and serve with the dipping sauce.

3/4 pound (1 large) russet (baking) potato
2 slices of cooked lean bacon, crumbled fine
2 tablespoons finely chopped fresh chives or green part of scallion
2 tablespoons olive oil
sour cream as an accompaniment if desired

Steps:

  • Peel the potato, grate it coarse, and press it between several thicknesses of paper towel to remove any excess moisture. In a bowl stir together the potato, the bacon, the chives, and salt and pepper to taste. In a large heavy skillet heat the oil over moderately high heat until it is hot but not smoking, form the potato mixture into 4 patties, and cook the patties, tamping them down with a spatula, for 5 to 7 minutes on each side, or until the pancakes are golden brown and cooked through. Serve the pancakes with the sour cream.

Bacon Pancake Dippers image

Skip the forks and use your fingers to dip these pancake-coated bacon strips into maple syrup. Something magical happens when a crispy piece of bacon gets a warm hug from a pillowy soft pancake... A flavor and texture explosion takes place. In this recipe, I spoon pancake batter around and then directly on top of the cooked bacon strip so the bacon remains crunchy while the batter cooks all the way through.

12 slices bacon
1 1/2 cups all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup milk of choice
1/2 cup sour cream
1 large egg
2 tablespoons unsalted butter, melted, plus more for cooking
Maple syrup, for serving

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.
  • Arrange the bacon in a single layer on the prepared baking sheet, spacing the slices apart so they aren't touching.
  • Bake the bacon until it reaches your desired level of crispiness, 10 to 15 minutes. Remove from the oven and set aside.
  • In a large bowl, whisk together the flour with the sugar, baking powder, baking soda and salt.
  • In a medium bowl, whisk together the milk, sour cream, egg and 2 tablespoons melted butter.
  • Add the wet ingredients to the dry ingredients and mix just until combined. (The batter should be lumpy.)
  • Grease a griddle or large nonstick skillet with butter.
  • Working in batches, arrange slices of the cooked bacon on the griddle, spacing them at least 3 inches apart. Spoon the pancake batter around and on top of each bacon strip and cook until bubbles form across the outside edges of the batter. Flip the pancake dippers once and continue cooking until they are cooked through. Repeat with the remaining bacon and pancake batter.
  • Serve the pancake dippers warm with maple syrup for dipping.
