Copycat Chipotle Fresh Tomato Salsa image

Maybe you've made salsa at home; but have you made this one... Add this Chipotle Fresh Tomato Salsa to anything that needs a bit of a kick.

Number Of Ingredients 8

1 1/2 lbs tomatoes, coarsely chopped, about 6 medium tomatoes
1/2 cup red onion, finely chopped
1/2 jalapeno pepper, seeded, stemmed, and finely chopped
1 tablespoon fresh lemon juice, from one lemon
1 tablespoon fresh lime juice, from 2 limes
2 teaspoons kosher salt
1/4 cup fresh cilantro, coarsely chopped
1 (13 ounce) bag tortilla chips, for serving

Steps:

  • In a medium bowl, combine tomatoes, red onion, jalapeno, lemon juice, lime juice and salt.
  • Let stand for 10 minutes at room temperature to blend flavors. Stir in cilantro. Taste salsa and adjust amount of jalapeno pepper and salt as desired.
  • Serve with tortilla chips.

Spicy! Try using this on grilled chicken or rubbing some on corn on the cob. If you like spicy popcorn, try melting some of this and pouring it over your next batch. Easy to freeze and use when you need it. Will keep 3-6 months frozen.

1/2 cup butter, softened (1 stick)
2 -3 chipotle chiles (canned)
2 teaspoons adobo sauce (from canned chipotle chiles)

Steps:

  • Puree all in a blender or food processor.
  • Place the butter on a sheet of plastic wrap and cover.
  • Roll the butter up, forming it into a long log shape and place in the refrigerator or freezer until ready to use.
  • Serve the rolled up log or cut off slices as needed.
  • Goes great on grilled chicken and corn on the cob.

What a wonderful addition to any meal! Perfect on warm bread or slathered across corn on the cob. Yummers!

1/2 c butter, softened
1-2 canned chipotle peppers, diced (seeds removed, if desired)
2 Tbsp sauce that comes with the peppers
1 Tbsp freshly squeezed lime juice
1 Tbsp chopped, fresh cilantro
Dash garlic powder

Steps:

  • 1. In a small bowl whip the butter, with an electric mixer, until smooth and fluffy.
  • 2. Add the minced peppers, chipotle sauce, lime juice, cilantro, and garlic powder. Whip until incorporated.
  • 3. Transfer to a serving bowl, cover and chill. (The longer it sits, the deeper the color and richer the flavor.)
  • 4. Just before serving put a teaspoon of the cold butter on cooked steak or burgers and allow it to melt over the top.
  • 5. For bread, leave softened for easier spreading. Makes 24 servings.

This smokey spicy tomato jam recipe is very easy using the Ball® FreshTECH Automatic Jam & Jelly Maker.

3 cups diced tomatoes, blossom end & stem removed (about 1 1/2 lbs)
3 chipotle chiles in adobo, chopped
2 tablespoons adobo sauce
3 tablespoons pectin (Ball Real Fruit Classic)
1/2 teaspoon butter
1/4 teaspoon salt
3 1/3 cups granulated sugar

Steps:

  • SPRINKLE pectin evenly over bottom of the Pot fitted with the Stirrer. Add diced tomatoes, chopped chipotle peppers and adobo sauce evenly over pectin. Add butter/margarine to help reduce foaming.
  • PRESS Jam button - the cook time will automatically default to 21 minutes. Press Enter.
  • WAIT 4 minutes for appliance to sound 4 short beeps indicating that it is time to add sugar. Add sugar gradually while Stirrer continues running. Place the Glass Lid on the Pot.
  • THE APPLIANCE will continue to automatically stir your ingredients while it cooks. Stay within earshot of the Jam & Jelly Maker, the appliance will beep again at the end of the process signaling jam cooking is complete. Press Cancel, unplug the appliance and immediately remove Glass Lid.
  • REMOVE Stirrer using a pot holder. Skim foam, if necessary, from top of jam.
  • Can be used right away, refrigerated, or process jars that is filled to 1/4 inch head space in a hot water canner for 10 minutes, covered with one inch of water.
