CHORIZO STUFFED DATES WRAPPED IN BACON IN RED PEPPER SAUCE



Chorizo Stuffed Dates Wrapped in Bacon in Red Pepper Sauce image

Olive oil
4 cloves garlic, thinly sliced
4 small shallots, thinly sliced
Kosher salt
8 ounces roasted piquillo peppers with their juices
2 cups whole peeled tomatoes with their juices
Freshly ground black pepper
3 tablespoons sherry vinegar
15 Medjool dates, pitted
1 pound ground fresh chorizo
5 to 6 slices bacon, cut into thirds

Steps:

  • For the sauce: Place a heavy-bottomed saucepot over medium heat. When the pan is hot, add a film of olive oil followed by the garlic and shallots with a large pinch of salt. Cook, stirring occasionally, until the vegetables start to soften and become aromatic, about 3 minutes. Then add the piquillo peppers and tomatoes. Stir until everything is combined and bring the mixture up to a simmer. Reduce the heat to medium-low and cook, stirring occasionally, until all the flavors combine and the sauce reduces slightly, about 30 minutes. Season with salt and freshly ground black pepper and add the sherry vinegar. After 30 minutes, puree the sauce until smooth if you prefer (see Cook's Note) or leave a little bit chunky.
  • Preheat your oven to 400 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.
  • While the sauce is cooking, prepare the dates: Make a slit down one side of each date. Stuff the date with the chorizo and then close the incision. Wrap with a piece of bacon and secure with a toothpick where the seams meet. Place on the prepared baking sheet and bake until the bacon on one side is crispy, about 10 minutes. Remove from the oven and remove the picks.
  • Pour the red pepper sauce into a shallow baking dish and arrange the dates on top, soggy-side up. Place back in the oven, uncovered, until the bacon on top is crisp, another 10 minutes or so. Remove from the oven and serve the crispy dates with some sauce spooned around and on top.

This recipe was inspired by one of our favorite tapas dishes. It's just like we like remember it from our first date some 13 years ago. I incorporated 2 Zaar recipes to create this clone. All of this can be made ahead and warmed in the microwave before serving. The Sweet Red Bell pepper sauce really make this dish amazing! UPDATE: 11/2013 The restaurant uses applewood smoked bacon and roasted red pepper "butter sauce" so I will be trying these 2 latest additions and reporting back

1 lb bacon, uncooked, applewood is best
8 ounces pitted dates, the larger the better
1 -2 garlic clove
1/2 large red bell pepper, seeded, quartered
1/2 medium yellow onion
1/4 cup half-and-half cream, a little more if desired, can using whipping cream
1 -2 tablespoon extra virgin olive oil
1/8 teaspoon salt (to taste)

Steps:

  • Preheat oven to 375°F.
  • Soak round toothpicks in water for 15 minutes, this will prevent burning when baking.
  • RED PEPPER SAUCE:.
  • Place garlic cloves w/ peels on a baking dish and bake for 15 minutes.
  • Rub pepper and onion with olive oil.
  • After baking the garlic cloves for 15 minutes, add the red bell pepper and onion to the baking sheet and bake for an additional 15 minutes, or until tender and roasted. It may take a bit longer.
  • Squeeze the roasted garlic out of it's paper into a blender along with the roasted onion and bell pepper. *use a blender or small food processor.
  • Blend until smooth. Slowly add olive oil until blended. * you may use more or less.
  • Add salt.
  • Slowly add half and half until creamy while blending.
  • Serve immediately or cover and refrigerate until ready to serve. Warm in the microwave before serving.
  • BACON WRAPPED DATES:.
  • Cut bacon strips in half (making them 1/2 as long approximately 3").
  • Microwave the strips for 2 minutes.
  • Wrap each date with a 1/2 strip of bacon and secure with a toothpick.
  • Spray a 4 sided cookie sheet with nonstick spray.
  • Place all prepared dates in the cookie sheet.
  • NOTE: If you have mini muffin pan, suspend the bacon wrapped date over each opening and the bacon fat will drip off into the muffin pan. This is my preferred method.
  • Bake for approximately 15 minutes, turning once. *Important to turn.
  • After turning, continue baking for an additional 10 minutes or until bacon brown and crispy or as desired.
  • BAKING TIME may vary. Just be sure to watch carefully.
  • Serve with sweet red pepper sauce for dipping or puddle the sauce on a plate and place the wrapped dates in the sauce.
  • Note: Everything can be prepared and baked ahead of time and served later. Just warm through in the microwave for about 30 seconds.

Don't let anyone tell you otherwise...THESE ARE WONDERFUL. They are always the very first thing to go at a party. When I catered I always told my customers to order 2-3 times more of these than anything else. Most people expect scallops but are pleasantly surprised by the sweet wonderful flavor inside. A combination of sweet, crunchy, salty and smoky is a real winner! You won't be sorry you went out on a limb to try these. You can prep ahead of time, freeze and then pull them out of the freezer and bake right before the party.

1 (4 ounce) package whole almonds, blanched
1 1/2 lbs smoked bacon, thin sliced

Steps:

  • Stuff each date with one almond.
  • Cut bacon into half or thirds.
  • Wrap bacon around date and secure with a round toothpick.
  • Preheat oven to 400 degrees.
  • Place dates on a foil lined (they are messy and this makes them much easier to clean up) baking pan and cook until bacon is crispy (around 15 minutes).
  • Drain on paper towel and serve warm or room temperature.
  • Watch them disappear!

2 lbs Little Smokies sausages (we use Hillshire Farm)
1 lb bacon (real bacon, no turkey bacon or maple flavored)
2 cups light brown sugar

Steps:

  • Line large baking sheet with foil (we don't always do this, but it's easier for cleanup).
  • Cut bacon into thirds, resulting in several 3" strips.
  • wrap each weiner with bacon, line them loosely in the pan as you go.
  • Cover with brown sugar, it'll seem like a lot of sugar, but it cooks down
  • Bake 375 for 45 minutes. Broil at the end until top is crisped.
  • Hurry and get your share before everyone eats them all!

1 garlic clove, minced
1 teaspoon fresh oregano, chopped or 1/2 teaspoon dried oregano
2 tablespoons olive oil
2 red bell peppers

Steps:

  • Adjust broiler rack to within a 4 inches of heat source.
  • Cover broiler pan with foil and preheat broiler.
  • Place peppers on hot foil.
  • Broil for 15-20 minutes, turning each pepper every 5 minutes until skin is blackened.
  • Remove peppers from broiler and place in a brown paper bag.
  • Roll top of bag down and set aside for 15 minutes, this steams the skins which makes removing the skin easier.
  • Peel peppers by cutting around the stem and twisting it, halve peppers and peel the skin back with a knife.
  • Rinse peppers with cold water and remove seeds.
  • Slice pepper halves lengthwise into 1/4 inch strips.
  • Place pepper strips into a jar.
  • Add oregano, garlic and oil.
  • Close the lid and shake to blend.
  • Allow to marinate an hour.
  • We like this served with garlic bread.
  • This will keep one week in the refrigerater in jar.
  • I haven't tried letting it marinate that long but I bet it would be great.
  • Cooking time includes steaming and marinating time.

1/2 lb bacon, sliced into quarters

Steps:

  • Microwave bacon for about 2 minutes, until partially cooked, but not browned.
  • Wrap each date with a strip of bacon and secure with a wooden toothpick.
  • Broil on low 3 minutes, turn dates, and continue broiling 3 to 4 minutes longer, or until browned.
  • Drain on paper towel and serve warm.

2 garlic cloves (minced)
1/2 cup white wine
1 cup chicken broth

1 teaspoon paprika
1/2 teaspoon black pepper
1/4 teaspoon crushed hot chili pepper (or to taste)
2 tablespoons olive oil

Steps:

  • Heat oil in large sauce pan on med high heat.
  • Add onion, then garlic.
  • Stir about 1-2 minutes.
  • Add red pepper and stir around about 5 minutes.
  • Add wine, broth and spices.
  • Reduce heat and simmer about 20 minutes.
  • Pour out of pot to a blender/food processor.
  • Blend until smooth and return to pot.
  • Simmer 15 minutes.
  • Ready to serve.
