Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 12

1 teaspoon chipotle chile powder
Kosher salt and freshly ground pepper
3 tablespoons vegetable oil
1 1/4 to 1 1/2 pounds beef tri-tip steak, fat trimmed
1 small onion, diced
2 cloves garlic, thinly sliced
1 pound frozen chopped collard greens, thawed and drained
1/4 cup apple cider vinegar
1/4 cup ketchup
2 tablespoons honey
1 tablespoon Worcestershire sauce
1 tablespoon dijon mustard

Steps:

  • Preheat the oven to 400 degrees F. Mix the chile powder, 1/2 teaspoon salt and 1/4 teaspoon pepper; rub on the steak. Heat a large cast-iron skillet over medium-high heat. Add 1 tablespoon vegetable oil, then add the steak; sear 3 minutes per side. Transfer the skillet to the oven and cook until a meat thermometer inserted sideways into the steak registers 135 degrees F for medium rare, 15 to 20 minutes. Transfer the steak to a cutting board.
  • Meanwhile, heat the remaining 2 tablespoons vegetable oil in a medium skillet over medium heat. Add the onion and garlic and cook, stirring, until soft, 5 minutes. Add the collard greens and 1/2 cup water and cook, stirring occasionally, until warmed through, 10 minutes. Add 1 tablespoon vinegar, and salt and pepper to taste.
  • Whisk the ketchup, the remaining 3 tablespoons vinegar, the honey, Worcestershire sauce, mustard and 1/2 cup water in a bowl. Return the cast-iron skillet to medium-high heat; add the ketchup mixture and cook until thickened, 3 to 5 minutes. Slice the steak against the grain. Serve with the sauce and collard greens.

SOUTHERN CALIFORNIA COLLARD GREENS

Southern California Collard Greens image

Provided by Food Network Kitchen

Categories     side-dish

Time 1h40m

Yield 6 to 8 servings

Number Of Ingredients 11

4 pounds young collard greens (about 4 bunches)
3 tablespoons olive oil
1 onion, julienned
2 garlic cloves, smashed
2 large ham hocks (about 2 pounds), smoked and cooked
2 bay leaves
2 quarts chicken broth, low sodium
1/4 cup apple cider vinegar
1 tablespoon sugar
1 teaspoon red pepper flakes
Seasoned salt

Steps:

  • To prepare the greens: cut away the tough stalks and stems from the collards, and discard any leaves that are bruised or yellow. Fill the sink with water and salt (the salt helps to remove any impurities). Wash the collards thoroughly to remove the grit, 2 or 3 times, until the water runs clear. Dry thoroughly. Stack up several leaves and hand shred them into ribbon-like pieces (chiffonade). Repeat until all the leaves are shredded.
  • Coat a 6-quart stockpot with olive oil and place over medium heat. Add the onion and garlic, stir to coat, then add the ham hocks and bay leaves; cook about 8 minutes. Pack in the greens, pushing them down into the pot. Add the broth, vinegar, sugar, and red pepper flakes.
  • Bring up to a hard boil for 10 minutes, until greens start to wilt. Turn the greens over with a wooden spoon, do not stir. Lower to a gentle boil, cover the pot, and let cook for 45 minutes. Taste the "pot liquor" (broth) and check the seasoning, add seasoned salt. Cover and let cook for 15 more minutes.

CHIPOTLE COLLARD GREENS

_**Editor's Note:** This recipe originally accompanied a story on Mother's Day. For the complete story and more of Jamie and Bobby Deen's recipes, [click here](/cooking/holiday/mothers_day/deen)._ When Tabasco started making chipotle hot pepper sauce, we started using it to spike up our regular recipe for collards. It's a match made in heaven.

Provided by Jamie Deen

Yield Makes 4 to 6 servings

Number Of Ingredients 7

2 large bunches collard greens (about 2 pounds), ribs removed
2 tablespoons unsalted butter
1 onion, halved and sliced
2 cloves garlic, chopped
2 cups water
1 to 2 teaspoons chipotle hot pepper sauce
1/2 teaspoon salt

Steps:

  • 1. Stack the collard greens and roll up the stack. Cut the roll into 1/2-inch-thick slices. Set aside.
  • 2. In a medium pot, melt the butter over medium-high heat. Add the onion; sauté about 5 minutes or until golden. Reduce heat to medium. Add the garlic; sauté for 5 minutes more.
  • 3. Add the water and collard greens to the pot; season with hot sauce and salt. Cook, uncovered, for 25 minutes, tossing the greens occasionally. Taste and adjust seasonings, if necessary.

  • Drain the soaked peas and rinse. Place in a large pot and add enough water to cover by 2 inches. Bring to a boil over high heat. Adjust heat to maintain a gentle simmer, cover and cook until tender, 30 to 45 minutes. (Alternatively, cook peas in a pressure cooker or slow cooker.) Reserve 1 1/2 cups of the cooking liquid and drain the peas.
  • Heat oil in the pot over medium heat. Add shallots and a pinch of salt and cook, stirring frequently, until deeply browned, 10 to 15 minutes. Use a slotted spoon to transfer half the shallots to a paper-towel-lined plate.
  • Add collards to the pot and toss until bright green and wilted, about 3 minutes. Add the reserved cooking liquid and chipotles. Bring to a boil. Adjust heat to maintain a simmer, cover and simmer for 15 minutes.
  • Gently stir in the peas. Cover and simmer until the collards are very tender, about 10 minutes more. Stir in lime juice and the remaining 1/2 teaspoon salt. Top with the shallots and serve with rice, if desired.
