My picky boyfriend always eats seconds of this. It's like enchiladas without the tortillas. Serve over rice -- we like to serve with yellow rice or Mexican rice. You will want something to soak up all the delicious sauce.

¼ cup all-purpose flour
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon ground black pepper
1 pound skinless, boneless chicken breast halves - cut into bite-size pieces
1 tablespoon olive oil
½ cup diced onion
½ cup chopped green bell pepper
1 tablespoon butter
¾ cup low-sodium chicken broth
2 chipotle peppers in adobo sauce
½ cup sour cream
¼ cup chopped cilantro

Steps:

  • Place the flour, garlic powder, salt, and black pepper into a large plastic bag. Close the bag and shake a few times to mix the seasonings, and drop in the chicken pieces, a few at a time. Shake the bag to coat the chicken with seasoned flour.
  • Heat the olive oil in a large skillet over medium heat, and cook and stir the onion and green pepper in the oil until the onion is translucent, about 6 minutes. Stir in butter, and allow to melt. Add the seasoned chicken to the skillet, and cook and stir until the chicken pieces are browned on all sides, about 10 minutes.
  • Increase heat to medium-high, and pour in chicken broth; stir in the chipotle peppers with adobo sauce. Bring to a boil, and reduce the chicken broth by half, stirring often, about 10 minutes. Remove from heat, stir in the sour cream to make a smooth sauce, and sprinkle with cilantro to serve.

This is a tasty chicken dish with smoky flavors coming from both the tasso (a Cajun cured ham) and the chipotle.

1 lb chicken tenders, trimmed
1/4 cup tasso, diced
1 shallot, minced
2 garlic cloves, minced
2 tablespoons butter
1 tablespoon olive oil
1/4 cup flour
2 tablespoons dried chipotle powder
1 tablespoon dried ancho chile powder
1 teaspoon hot sauce (or more to taste, chipotle flavored)
1 teaspoon dried cilantro
1/2 teaspoon cumin
salt and pepper
1 cup white wine (dry, such as Sauvignon Blanc or Pinot Grigio)
2 cups half-and-half

Steps:

  • Mix the chicken with the chipotle and ancho chile powders, cilantro, cumin, salt and pepper. Allow the chicken to sit for a bit and come to room temperature, about 15 minutes. Dredge the spiced chicken in the flour.
  • Melt the 1 T butter with the olive oil and brown the chicken on both sides, about 5 minutes total. The chicken should not cook through at this point. Remove the chicken from the pan and set aside.
  • Add the additional 1 T butter and saute the tasso until it is browned. Add the shallot and garlic and saute an additional minute.
  • Deglaze the pan with the wine, stirring, and add the half and half and the hot sauce. Bring to a boil over medium heat and add the chicken back into the pan, including any juices.
  • Cook over medium heat until the sauce has thickened and the chicken is cooked through. Taste the sauce and add more salt, pepper, or hot sauce as desired. Serve over pasta or rice.

12 ounces uncooked penne pasta
1 1/2 tablespoons vegetable oil
1 lb boneless skinless chicken breast, cut into 3/4-inch chunks
1/3 cup onion, chopped
1 teaspoon garlic, minced
2 cups prepared alfredo sauce
1 tablespoon chipotle chile in adobo
2 teaspoons chili powder
2 teaspoons maple syrup
1/2 teaspoon salt
8 slices cooked bacon, heated in microwave and chopped
2 tablespoons fresh cilantro, chopped

Steps:

  • Cook penne following package directions; drain.
  • While penne is cooking, heat oil in a large skillet over medium-high heat and cook chicken for about 4 minutes or until cooked through.
  • Remove to a plate and reserve.
  • Reduce heat to medium.
  • Add onion to the skillet and cook for 3 minutes, stirring occasionally.
  • Add garlic and cook 30 seconds.
  • Stir in the Alfredo sauce, chipotle, chili powder, maple syrup and salt.
  • Cook over medium-high heat until bubbly.
  • Stir in the chicken.
  • Place the pasta back into the pot and stir in the Alfredo and chicken mixture.
  • Spoon pasta onto a large serving platter and garnish with the bacon and cilantro.

6 chipotle chiles, seeds removed and soaked in water for 30 minutes
7/8 cup chicken stock
2 tablespoons oil
3 onions, sliced
6 boneless skinless chicken breasts
sour cream, to serve

Steps:

  • Preheat the oven to 350°F
  • Place the soaked chilies in a blender. Measure the soaking liquid in a jug and make up to 1 2/3 cups with the stock.
  • Pour the liquid into the blender and process on high until smooth.
  • Heat the oil in a frying pan, add the onions and cook for 5 minutes until soft.
  • Place the onions in an ovenproof dish. Add the chicken breasts and season with salt and freshly ground black pepper.
  • Pour the chipotle puree over the chicken covering each piece and cook in the oven for 1 hour until the chicken is thoroughly cooked.
  • Serve the chicken with soured cream, Mexican rice and frijoles de olla.

4 -5 boneless skinless chicken breasts
1 vidalia onion, diced
1/2 cup mayonnaise
1/2 cup sour cream
chipotle chile in adobo (canned)
salt
pepper

Steps:

  • Cook chicken breasts in water with salt & pepper until very tender.
  • Shred chicken & put in medium sized bowl. Put the diced onion in with chicken. Set aside.
  • In a blender or food processor mix mayonnaise, sour cream, and between 3/4 to the whole can of chipotle peppers until well blended & smooth. The amount of peppers depend, of course, on taste.
  • Add mayonnaise mixture to shredded chicken & onion. Mix well. If you like more moisture in a "salad" type dish add more mayo and sour cream in equal parts to get the consistency you like.
  • Serve with Low-carb bread, pork rinds, or by itself. This will surely help you drink a healthier amount of water! But don't be afraid, not super hot.

1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano, crushed
1 tablespoon olive oil
4 (4 -6 ounce) boneless skinless chicken breast halves
1/4 teaspoon chili powder

3/4 cup colby-monterey jack cheese, shredded (3 ounces)

Steps:

  • Coat a 2-quart round casserole with nonstick spray; set aside.
  • Coat an unheated large nonstick skillet with nonstick spray.
  • Heat skillet over medium-high heat.
  • Add corn; cook about 5 minutes or until corn begins to lightly brown.
  • Add potatoes; cook and stir 5 to 8 minutes longer or until potatoes begin to brown.

3/4 cup milk
3 canned chipotle chiles
6 cloves garlic, minced
1/2 teaspoon ground cumin
1/2 teaspoon onion powder

2 tablespoons butter or 2 tablespoons margarine
1 1/2 tablespoons flour
1/2 cup heavy cream
1/4 cup sour cream
8 ounces queso cheese, grated (monterrey jack ok)
minced chipotle chile (to garnish)

Steps:

  • Preheat oven to 350 degrees F.
  • Place chicken in an ovenproof baking dish, and place in preheated oven, and bake for 25 minutes.
  • Meanwhile, combine milk, canned chipotles, garlic, cumin, onion powder, and salt in a blender or food processor and puree until smooth.
  • Heat butter and flour in a large skillet and blend until smooth; add heavy cream and sour cream, whisking until smooth.
  • Stir in chipotle puree, and stir constantly until mixture comes to a boil and thickens; remove from heat.
  • After chicken has baked 25 minutes, remove from oven and drain any fat.
  • Pour chipotle cream over chicken and top with grated queso cheese.
  • Replace chicken in oven and bake for about 20 minutes more, or until cheese just starts to brown.
  • Remove from oven and serve with extra sauce spooned over chicken and garnished with minced chipotle chiles, if desired.
  • Goes good with steamed rice (and extra sauce on top).

4 chicken pieces (bone-in or boneless chicken breasts, thighs or drumsticks)
2 tablespoons butter, melted

1 (12 ounce) can evaporated milk

Steps:

  • Preheat oven to 375 degrees.
