6-10 star anise (or use 2 tablespoons star anise powder)
1 tablespoon fennel seeds (or use 1 teaspoon ground fennel)
1-2 teaspoons Szechuan peppercorns (or use 1 teaspoon ground Szechuan pepper - use white peppercorns for milder flavor)
1 6- inch stick Chinese cinnamon (you can sub for other cinnamon - or use 1 teaspoon ground cinnamon)
10 whole cloves (or use 1/2 teaspoon ground cloves)

Steps:

  • Heat a large pan to medium-high heat. Add the whole seasonings and lightly toast them over dry heat, 1-2 minutes. Stir part way through. Be sure to not let the spices burn.
  • Remove from heat and transfer toasted spices to a spice grinder. Grind until well blended. You can also use a mortar and pestle to pulverize the ingredients by hand.
  • Use as desired. Store in a sealed container in a cool, dark place.

2 tablespoons aniseed
2 tablespoons fennel seed
2 tablespoons ground cinnamon
2 tablespoons whole cloves
2 tablespoons whole peppercorns

Steps:

  • In a spice grinder or with a mortar and pestle, combine all ingredients (in batches if necessary); grind until mixture becomes a fine powder. Store in an airtight container for up to 6 months.

There are many different versions of this seasoning. Here is another one - sans fennel, that I found in my collection of recipes. It's a nice seasoning to use on fish, chicken or pork. I have even used it in baking (cookies & muffins) for a different flavour profile.

1 1/2 teaspoons allspice, ground
1 1/2 teaspoons anise seeds, crushed

1 kg chicken piece
1 medium onion, finely chopped
1 -3 garlic clove, finely chopped
1/3 cup soy sauce
2 tablespoons peanut oil
2 teaspoons five-spice powder

Steps:

  • Place the chicken pieces in a large dish or plastic bag.
  • Mix the remaining ingredients and pour over the chicken.
  • Marinate refrigerated overnight or for 1 to 2 hours if time is short.
  • Transfer the chicken to a baking dish and brush with the marinade.
  • Cook uncovered in a preheated 350F (180C) oven, brushing once or twice with the marinade, until the chicken is done, about one hour.

2 tbsp cinnamon or 2 cinnamon sticks
1 tbsp fennel seed
6 star anise
2 tsp Sichuan peppercorn
1 tsp whole clove

Steps:

  • Toast the whole spices in a small pan until they are aromatic and have turned a shade or two darker. Don't be tempted to skip this stage, as it really enhances the flavours.
  • Tip into a spice grinder (or use a pestle and mortar), then add the ready-ground spices and dried herbs if required, and crush to a fine powder. Store in a sealed jar for up to six months.
