When we go out for Chinese food, my husband always orders chicken chow mein. I created this recipe using richer-flavored tamari sauce rather than soy. -Beth Dauenhauer, Pueblo, Colorado

1 tablespoon cornstarch
2/3 cup reduced-sodium chicken broth
1 teaspoon reduced-sodium soy sauce
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 pound sliced fresh mushrooms
2/3 cup thinly sliced celery
1/4 cup sliced onion
1/4 cup thinly sliced green pepper
2 tablespoons julienned carrot
1 teaspoon canola oil
1 garlic clove, minced
1 cup cubed cooked chicken breast
1 cup cooked brown rice
2 tablespoons chow mein noodles

Steps:

  • In a small bowl, combine the cornstarch, broth, soy sauce, salt and ginger until smooth; set aside., In a large skillet or wok, stir-fry the mushrooms, celery, onion, pepper and carrot in oil for 5 minutes. Add garlic; stir-fry 1-2 minutes longer or until vegetables are crisp-tender., Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Add chicken; heat through. Serve with rice; sprinkle with chow mein noodles.

Number Of Ingredients 20

3 ounces dried chuka soba noodles, or other Chinese egg noodles
1/4 cup, plus 2 tablespoons peanut oil
Kosher salt
1/2 cup chicken broth, homemade or low-sodium canned
3 tablespoons oyster sauce
1 tablespoon dark soy sauce, plus more for the table
2 teaspoons cornstarch
1 teaspoon sugar
1 boneless, skinless chicken breast (about 6 ounces), cut into thin 2-inch-long strips
1 teaspoon dark Asian sesame oil
1 heaping tablespoon minced peeled fresh ginger
3 cloves garlic, minced
1 scallion, white and green minced
Freshly ground black pepper
1/2 medium yellow onion, thinly sliced
1 stalk celery, thinly sliced on the diagonal
10 dried shittake mushrooms, rehydrated, drained, and thinly sliced
1/3 cup thinly sliced canned water chestnuts
6 ounces fresh mung bean sprouts
3 cups cooked white rice, hot

Steps:

  • Boil the noodles according to package instructions. Drain in a colander in the sink and rinse under cold running water. Shake the colander to drain off excess water and pat the noodles dry with a towel. Heat 1/4 cup of the peanut oil in a large seasoned or non-stick skillet over high heat. Add the noodles, spreading them out to evenly cover the skillet, and fry, turning once, until golden brown and crispy, about 8 minutes. (Break the noodles up, by stirring, near the end of the cooking). Transfer noodles to a paper towel-lined plate and season with salt to taste. Set aside. Discard any excess oil and wipe out the pan. Whisk together the chicken broth, oyster sauce, soy sauce, cornstarch, and sugar in a small bowl, and set aside. Season the chicken with the dark sesame oil, salt, and pepper, and set aside. Heat the skillet over high heat. Heat the remaining 2 tablespoons peanut oil until very hot. Add the ginger, garlic, and scallion and stir-fry, until fragrant, about 30 seconds. Add the chicken and stir-fry, until lightly browned, about 1 1/2 minutes. Add the onion, celery, and mushrooms and stir-fry, until crisp-tender, about 2 minutes. Add the water chestnuts and spread the ingredients to the outside of the pan to form a well in the center. Pour the chicken broth mixture into the well, bring to a boil, and stir to coat the chow mein mixture. Stir in the bean sprouts and remove from the heat. Season generously to taste with pepper. Transfer chicken chow mein to a warm platter and top with the fried noodles. Serve immediately with rice. Pass more soy sauce at the table.

2 tablespoons margarine or 2 tablespoons butter, melted
1/4 teaspoon onion powder
2 1/2 cups crisp rice cereal (rice crispies)
1 (8 ounce) can crushed pineapple, drained thoroughly
2 cups chopped cooked chicken or 2 cups turkey
1 can reduced-fat cream of mushroom soup or 1 can regular condensed cream of mushroom soup
1 1/4 cups chopped celery
2 tablespoons chopped green onions
4 1/2 teaspoons soy sauce

Steps:

  • Preheat oven to 350.
  • Combine margarine and onion powder.
  • Gradually add cereal, stirring until all pieces are evenly coated.
  • Set aside.
  • Combine pineapple, chicken, soup, celery, green onion and soy sauce.
  • Stir in 1 cup reserved cereal mixture.
  • Pour into ungreased 2qt. baking dish.
  • Sprinkle with remaining 1 1/2 cups cereal mixture.
  • Bake 30 minutes or until top is lightly browned.

This is a dish my mother made regularly for us when we were growing up in the 60's and was the one I always requested for my birthday meal. Prep time includes pre-cooking the chicken.

2 cups diced cooked chicken
1 can cream of mushroom soup
1 (9 ounce) can pineapple tidbits, well drained
1 tablespoon soy sauce
1 cup celery, slices
2 tablespoons chopped green onions
2 1/2 cups chow mein noodles

Steps:

  • Combine all ingredients except noodles, mixing well.
  • Gently fold in 1 cup of noodles.
  • Spoon into 8x8x2 inch baking dish.
  • Sprinkle with remaining noodles.
  • Bake in 350 oven for 50 minutes or until hot.

I got this recipe years ago from a chinese cookbook.It is delicious and very easy to prepare.This is one of my daughters fav. chicken dish. It is best eaten immediately and the skin of the chicken is really crispy.

2 pieces boneless chicken thighs (300g)
3 tablespoons soy sauce
1 1/4 tablespoons sugar
1 1/4 tablespoons rice wine (or water)
2 slices lemons

Steps:

  • Marinate chicken with the soy sauce,sugar and wine for at least 30 minutes or overnight.
  • Place chicken onto a baking pan, skin side up and bake in a preheated oven of 450F for 25 - 30 minutes or until cooked and skin is golden brown.
  • Squeeze lemon juice over chicken and serve immediately.

1 (3 lb) chicken, cleaned
2 bunches green onions
1 tablespoon light soy sauce
1 tablespoon sesame oil
2 teaspoons salt
1/2 cup peanut oil, heated to smoking point

Steps:

  • Fill a large kettle with water and bring to a boil. (An 8-quart pot two-thirds filled with water works great for a 2 1/2 to 3-pound bird.)
  • When the water boils, place the whole cleaned chicken into it. When the water stops boiling, take the chicken out.
  • Cover the pot and when the water again boils, place the chicken back in the pot. Cover the pot and turn off the heat. Leave the chicken in the pot and the pot on the burner. After one hour, the chicken is done. Remove, and cool.
  • Debone the chicken and tear the meat into small strips.
  • Place them on a large platter.
  • Clean the green onions, and split each onion down the middle. Then cut them up into 1/2-inch pieces and place over the mound of chicken.
  • Pour the soy sauce and the sesame oil over the chicken.
  • Pour the salt over the onions.
  • When you are ready to serve, pour the hot peanut oil over onions and chicken.
  • Toss like salad and serve.
