My late mother's recipe for chicken wings for potlucks. Now I am asked to bring this dish to parties.

2 cups soy sauce
2 cups brown sugar
2 tablespoons garlic powder
5 pounds chicken wings, split and tips discarded

Steps:

  • Stir the soy sauce, brown sugar, and garlic powder together in a saucepan over medium heat; cook and stir until the sugar melts completely. Remove from heat and allow to cool.
  • Place the chicken wings in a large bowl. Pour the soy sauce mixture over the wings and toss to coat evenly. Cover the bowl with plastic wrap. Allow chicken to marinate in refrigerator overnight or 8 hours.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Pour the chicken wings and marinade into a 9x13-inch baking dish. Cover the baking dish with aluminum foil.
  • Bake in the preheated oven until thoroughly hot, about 45 minutes. Remove the aluminum foil from the baking dish and continue baking uncovered another 15 minutes. Serve hot.

FRIED SWEET-AND-SPICY CHICKEN WINGS



Fried Sweet-and-Spicy Chicken Wings image

Number Of Ingredients 6

3 cups (720 milliliters) Thai sweet chile sauce
3/4 cup (120 milliliters) sriracha, or more if you prefer it spicier
12 whole chicken wings, cut in half at the joint, with tips discarded or saved for stock
2 cups (450 grams) tempura flour
2 1/2 quarts (2.8 liters) vegetable oil, for frying
2 cups (450 grams) cornstarch

Steps:

  • Stir the sweet chile sauce and sriracha together in a large bowl. You will be frying the wings and rolling them in this sauce while they're hot.
  • Rinse the chicken wings in cold water, drain briefly and place in a shallow baking dish while still damp. Sprinkle the wings evenly with the tempura flour and massage until a thin batter forms.
  • Heat the oil in a large 6-quart Dutch oven or heavy-bottom pot over high heat. Using a deep-fry thermometer, bring the temperature of the oil to 365 degrees F.
  • Pour the cornstarch into a second large bowl. Dredge the chicken wings through the cornstarch, shake to remove any excess. Working in 3 batches, fry the wings until cooked through and golden brown, 8 to 10 minutes, turning them occasionally. The internal temperature of the chicken should be 165 degrees F.
  • Drain the wings on paper towels briefly, then roll them in the prepared sauce. Serve hot.

My new favourite chicken wing recipe, I got this from my mother-in-law who is a great cook. This recipe works well if you boil the wings before adding the sauce and baking them... just reduce baking time accordingly. Can be doubled or halved easily with excellent results

2 -3 lbs chicken wings
1 dash salt
1 dash pepper
1 dash paprika
1/2 cup honey
1/4 cup soya sauce
4 tablespoons brown sugar
1 garlic clove, crushed (can use garlic power for ease)
1/4 cup ketchup

Steps:

  • Season cleaned wings with salt, pepper and paprika.
  • Place in shallow baking dish.
  • Mix remaining ingredients and pour over wings.
  • Bake uncovered at 325, basting every 15 minutes, for 1 - 1 1/2 hours.

GRANDMOTHER'S CHINESE CHICKEN WINGS

16 whole chicken wings, flap segments removed and saved for stock
1/3 cup sake
1/3 cup soy sauce
4 tablespoons brown sugar (see Cook's Note)
3 tablespoons mirin
3 tablespoons oyster sauce
4 large thin slices fresh ginger
2 cloves star anise
1 dried hot chile
1 cinnamon stick
Shaved green onions, for garnish
Sesame seeds, for garnish

Steps:

  • Place a 14-inch nonstick saute pan over high heat. Add the chicken and dry-sear to lightly brown the chicken. Add the sake, soy sauce, 1/3 cup water, brown sugar, mirin, oyster sauce, ginger, star anise, dried chile and cinnamon stick and bring to a simmer. Cook, covered, about 12 minutes.
  • Uncover and simmer until the pan is almost dry, tossing frequently to coat the wings, 10 to 12 minutes. Skim off the fat if you like, and serve, garnishing with scallion shavings and sesame seeds. I like to emulsify the chicken fat into the sauce by turning up the heat at the last minute to boil the fat into the other liquids.

I started making these wonderful gooey chicken wings when my children were teenagers; now I will make them for my grandchildren but will use low sodium soy sauce.

2 pkg chicken wings or 18 count. when cut will make 18 wings and 18 drummets
1 1/2 c soy sauce, low sodium
3/4 c dark brown sugar
1/2 tsp dry mustard>can substitute yellow mustard
1 Tbsp granulated garlic
1/4 tsp sesame oil if desired

Steps:

  • 1. Wash and dry chicken and set aside. Using heavy duty aluminum foil line a large deep baking dish. Preheat oven to 300 degrees.
  • 2. In a large mixing bowl combine all ingredients. Place all wings in bowl and thoroughly coat chicken. Pour wings and sauce into baking dish and cover with regular aluminum foil.
  • 3. Bake for 30 minutes; turn wings over and cook another 30 minutes. Uncover chicken and continue baking for approximately another 30 minutes or until wings are brown and sticky.
  • 4. Oven temperature and cooking time may vary according to altitude.

SOY GLAZED CHINESE CHICKEN WINGS

An easy chicken wing appetizer cooked on top of the stove. Prep and cook times do not include overnight marinating. Buy sesame oil and store in your refrigerator - it is pretty essential when called for and will get rancid tasting if left out for weeks or months. Also take care not to use too much, it is very flavorful.

2 tablespoons soy sauce
2 tablespoons dry sherry
1 tablespoon sugar
1 tablespoon cornstarch
3 garlic cloves, minced, divided
1 teaspoon red pepper flakes
12 chicken wings, tips removed and sectioned (about 2 1/2 pounds)
2 tablespoons vegetable oil
3 green onions, cut into 1 inch pieces
1/4 cup chicken broth
1 teaspoon sesame oil
1 tablespoon sesame seeds, toasted

Steps:

  • Combine soy sauce, sherry, sugar, two-thirds of the minced garlic, and red pepper flakes in a large bowl to create marinade. Stir in wings and turn to coat. Marinate overnight in the refrigerator, turning 2 or 3 times.
  • Heat vegetable oil in wok or large skillet over hight heat. Drain chicken wings, reserving liquid. Cook wings, in batches, 10 to 15 minutes until browned on all sides, turning occasionally. Remove each batch and set aside. Pour off any remaining oil.
  • Add remaining garlic and onions to wok or skillet and cook 30 seconds. Add wings and chicken broth, cover and cook 5 minutes or until wings are tender, stirring occasionally to prevent sticking.
  • Combine reserved marinade with cornstarch, stirring until smooth. Add mixture to wok or skillet and stir fry about a minutes turning until wings are coated and appear evenly glazed. Turn off heat and add sesame oil; mix well. Sprinkle with toasted sesame seeds and serve.

Chinese Marinade:
1 1/4 cups soy sauce
1 1/4 cups rice wine or sake
1 cup water
12 whole scallions, ends trimmed, smashed with the flat side of a knife
10 cloves garlic, smashed with the flat side of a knife
2 1/2-inch chunk fresh ginger, peeled, then cut into 10 slices about the size of a quarter, each smashed with the flat side of a knife
3 1/2 to 4 pounds chicken wings (about 20), rinsed and drained

Steps:

  • Stir the Chinese Marinade ingredients in a saucepan and heat until boiling. Reduce the heat to low and simmer for 10 minutes. Let the marinade cool slightly.
  • With a sharp knife separate the drumettes from the wingtips at the joint. Place all the pieces in a bowl or a deep pan and add the still-warm marinade. Stir to coat, cover with plastic wrap, and let the wings marinate for several hours, or overnight if possible, in the refrigerator.
  • Preheat the oven to 500°F. Line a cookie sheet with aluminum foil and arrange the wings on the cookie sheets. Brush liberally with the marinade. Roast for about 40 minutes, turning once, until the wings are cooked and crispy brown at the edges. Serve hot, at room temperature, or cold as an appetizer or an entr e with a vegetable and steamed rice.
