ORIENTAL CABBAGE SALAD WITH CHICKEN
This salad has been very popular whenever I've brought it to picnics, potlucks, and barbeques. It travels well and can be prepared a few hours in advance of the party. Be prepared to share this recipe because people Ü will ask for it!

Steps:
- Combine cabbage, scallions, ramen noodles (reserve ramen flavor packet for dressing) and chicken; refrigerate for up to six hours.
- Just before serving shake together canola oil, sesame oil, rice wine vinegar, sugar, salt, pepper, and ramen flavor packet; pour dressing over salad and toss; add sesame seeds and almonds; toss until evenly mixed.
- NOTE: I like to make the salad and salad dressing seperately a few hours in advance of whatever party I'm going to ~ I just dress the salad at the last minute so that it stays nice and crunchy.

this is a great family recipe that has evolved over the years, especially in the flavor department. it is delicious! everyone that has tried it always goes back for more! lol! i have made it so many times and it hardly ever lasts a whole day!

Steps:
- add cabbage, carrots, green onions to a large bowl or dish.
- add chicken.
- crunch ramen noodles over the salad. it is easiest to break them up in the bag first.
- mix together sugar and vineger till sugar is dissolved. add oils and whisk well.
- pour dressing over salad.
- top with sesame and/or sunflower seeds.
- salt and pepper to taste, you can also sprinkle a little of the oriental seasoning from the ramen noodle pack, but not too much.
- let marinade in fridge for about 2 hours before eating.
- enjoy!
GRACE'S AWESOME CHINESE CHICKEN SALAD
A quick and easy chicken salad with the most awesome rice vinegar dressing! Great use for leftover chicken. I got this recipe from a lovely co-worker, Grace (she says she always doubles the onion amount). Best served within one hour of mixing. Enjoy!

Steps:
- Heat oil in a wide frying pan over medium-high heat. Crumble noodles (do not use seasonings); add crumbled noodles with almonds and sesame seeds to hot oil. Cook, stirring until browned (3 to 4 minutes).
- Lift out mixture from frying pan; drain.
- In a salad bowl, combine noodle mixture, chicken, cabbage and onions. Season with salt to taste.
- Mix together ingredients for Rice Vinegar Dressing and pour over salad; toss lightly until well coated.
- Serve within 1 hour of mixing.

- Set seasoning packet from noodles aside. Crumble the noodles into a large bowl; add the cabbage, chicken, onions and sesame seeds. In a jar with a tight-fitting lid, combine the vinegar, sugar, water, oil, salt, pepper and contents of seasoning packets; shake well. Pour over cabbage mixture and toss to coat. Cover and refrigerate for 8 hours or overnight.
