1 1/2 cups almond flour
1 teaspoon baking powder
1/2 teaspoon salt
5 tablespoons butter (softened )
1 3/4 cups granulated sweetener of choice (white, brown, sugar free, etc.)
3/4 cup cocoa powder
3 large eggs (* See notes)
1 teaspoon vanilla extract
1/2 cup chocolate chips (optional)

Steps:

  • Preheat the oven to 180C/350F. Line an 8 x 8-inch pan with parchment paper and set aside.
  • In a small bowl, whisk together your dry ingredients. In a separate larger bowl, whisk together your softened butter, sweetener, eggs, cocoa powder, and vanilla extract, until combined.
  • Gently add in your dry ingredients and mix until fully incorporated. If using chocolate chips, fold them through at the end.
  • Transfer your brownie batter into the lined pan. Bake for 35 minutes, or until a skewer comes out just clean. Remove from the oven and allow to cool completely, before slicing.

1 cup butter, softened
1 cup sugar
1 large egg, room temperature
1 teaspoon almond extract
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup sliced almonds
1 large egg white
1/2 teaspoon water

Steps:

  • Preheat oven to 325°. In a large bowl, beat butter and sugar until light and fluffy, 5-7 minutes. Beat in egg and extract. Combine flour, baking soda and salt; gradually add to creamed mixture. , Roll into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Flatten slightly with a fork. Sprinkle with almonds, pressing to adhere as needed. In a small bowl, beat egg white and water. Brush over cookies. , Bake until edges and bottoms are lightly browned, 14-16 minutes. Cool for 2 minutes before removing from pans to wire racks.

Almond cookies like these are thought to resemble coins, making them particularly popular as a symbol of good fortune during the Chinese New Year. Traditional recipes are made with lard and flavored with almond extract. We used butter and almond flour in these to boost the nutty flavor and create a crumbly texture similar to pecan sandies. Enjoy them year-round, particularly with a cup of tea or coffee.

1 cup all-purpose flour (see Cook's Note)
1/3 cup almond flour (or almond meal)
1/2 teaspoon baking soda
1/4 teaspoon fine sea salt
1 stick (8 tablespoons) unsalted butter, at room temperature
1/4 cup granulated sugar
1/4 teaspoon almond extract
2 large egg yolks, at room temperature
15 whole blanched almonds

Steps:

  • Sift the all-purpose flour, almond flour, baking soda and salt together into a large bowl. Whisk any bits of almond flour left in the sifter into the sifted flour mixture.
  • Combine the butter and sugar together in the bowl of a stand mixer fitted with a paddle attachment. Beat on medium-high speed until light and fluffy, about 4 minutes. Add the almond extract and 1 egg yolk and beat until the mixture is smooth and combined, about 2 minutes. Scrape down the sides and the bottom of the bowl with a rubber spatula. Reduce the speed to medium low, add the flour mixture and beat until no streaks of flour remain, about 2 minutes.
  • Wrap the dough in plastic and refrigerate for 1 hour.
  • When ready to bake, position a rack in the center of the oven and preheat to 350 degrees F. Line a baking sheet with parchment.
  • Whisk together the remaining egg yolk and 1 tablespoon of water in a small bowl. Set aside.
  • Scoop the dough by tablespoons (you can use a 1/2-ounce ice cream scoop) and place 2 inches apart on the prepared baking sheet. Roll each scoop into a ball and return it to the baking sheet. Flatten each with your palm into a 2-inch round. Gently press an almond onto each and brush with the egg wash.
  • Bake, rotating the baking sheet halfway through, until the cookies are golden brown on the edges, 16 to 18 minutes. Let cool for 5 minutes on the baking sheet, then transfer to a wire rack to cool completely, about 10 minutes.
  • Store the cookies in a tightly sealed container at room temperature for up to 5 days.

1 carton (8 ounces) frozen whipped topping, thawed, divided
1/4 teaspoon almond extract
1/2 cup chopped almonds

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in chocolate syrup and extract. Combine flour and salt; gradually add to chocolate mixture., Pour into a greased 13x9-in. baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean (brownies may appear moist). Cool on a wire rack., For frosting, in a microwave-safe bowl, melt chocolate chips and 1 cup whipped topping; stir until smooth. Cool. Fold in extract and remaining whipped topping. 2 cups vanilla wafer crumbs
1 cup ground blanched raw almonds
1 (14 ounce) can condensed milk
1 teaspoon almond extract
1 egg yolk, beaten, with
1 1/2 teaspoons water
20 whole blanched almonds

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Lightly grease a 9 inch square pan with butter.
  • In a medium sized bowl stir the vanilla wafer crumbs and ground almonds.
  • Stir in condensed milk and almond extract until mixture is moistened.
  • Spread batter evenly in pan.
  • Brush top of batter with some of the egg yolk mixture.
  • Press whole blanched almonds onto top making 4 by 5 rows, spacing evenly.
  • Brush surface with remaining egg yolk wash.
  • Bake brownies for about 25 minutes.
  • Cool completely in pan.
  • Cut brownies leaving a whole blanched almond in the middle of each brownies.
  • Remove brownies carefully with spatula.

1/4 cup all-purpose flour
3/4 teaspoon coarse salt

  • Preheat oven to 350 degrees. In a microwave-safe 8-inch square baking dish, combine chocolates and butter. Microwave on high in 30-second increments, stirring each time, until melted, about 2 minutes. Whisk mixture to combine. Let cool slightly.
