My family requests this chiles rellenos dish regularly-it's easy to prepare and makes a nice hors d'oeuvre or complement to a Mexican or Spanish meal. A friend I worked with shared the recipe with me several years ago. -Fran Carll, Long Beach, California

3 cups shredded Monterey Jack cheese
1-1/2 cups shredded cheddar cheese
2 cans (4 ounces each) chopped green chiles, drained
2 large eggs
2 tablespoons 2% milk
1 tablespoon all-purpose flour

Steps:

  • Preheat oven to 375°. Sprinkle half of each cheese onto bottom of a greased 8-in. square baking dish. Layer with chiles and remaining cheeses., Whisk together eggs, milk and flour; pour over top. Bake, uncovered, until set, 25-30 minutes. Cool 15 minutes before cutting.

1 stick butter or margarine
10 eggs, slightly beaten
1/2 c flour
1 tsp baking powder
1/2 tsp salt
1 c chopped green chile (canned is ok)
1 pt small curd cottage cheese
1 lb shredded cheddar & monterey jack

Steps:

  • 1. Melt butter and cool. Pour into large bowl; add eggs, beating slightly. Add in all other ingredients and mix well.
  • 2. Pour into a buttered 13" x 9" x 2" pan. Bake at 400 degrees for 15 minutes - THEN lower to 350 degrees for 30 minutes.

Chili Cheese Grilled Cheese Bites image

The classic chili cheese flavors are getting the grilled cheese treatment! We make a quick, spreadable chili, then we encompass it with several layers of cheese. The secret is cooking the bread on melted Cheddar to add an outer, cheesy crunch that seals off the inside.

8 ounces 80/20 ground beef
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin
1/2 teaspoon mustard powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
Kosher salt
1/4 cup plus 2 tablespoons tomato paste (3 ounces)
Twelve 1/2-inch slices brioche (about 10 ounces)
1/4 cup cream cheese (2 ounces)
8 ounces shredded sharp yellow Cheddar (about 2 cups)

Steps:

  • Preheat a cast-iron skillet over medium-high heat. Place the beef in a thin, single layer and cook, undisturbed, until the bottom begins to brown, about 5 minutes.
  • Meanwhile, make the seasoning. Mix the garlic powder, cayenne, cinnamon, cumin, mustard powder, onion powder and paprika and 2 teaspoons salt in a small bowl. Check to make sure the bottom of the beef is a brown color, add the seasoning, then stir to combine and cook for 4 minutes. Stir in the tomato paste and cook until the mixture is brick red, about 1 minute. Stir in 3 ounces of water, then remove from the heat.
  • Preheat a large nonstick pan or griddle over medium heat.
  • Place 4 of the bread slices on a work surface. On each slice, spread 1 tablespoon (0.5 ounce) of cream cheese, then top with 1 heaping tablespoon of Cheddar and set aside.
  • Spread 2 heaping tablespoons of the chili on 4 more of the bread slices.
  • Place 2 heaping tablespoons of Cheddar on the top left corner of the pan, spreading it out so it resembles the shape of a brioche slice as much as possible. Repeat three more times to create 4 squares or rectangles.
  • Place each cheese-topped bread slice, cheese-side up, on top of a square of melting Cheddar. Top each with a chili-topped bread slice, chili-side up. Cook until the cheese starts to turn dark, golden yellow around the edges and is slightly crispy, about 5 minutes. Transfer the sandwiches to a plate.
  • Place 2 heaping tablespoons of Cheddar on the top left corner of the pan, spreading it out so it resembles the shape of a brioche slice as much as possible. Repeat three more times to create 4 squares or rectangles.
  • Place each of the 4 remaining bread slices on top of a square of melting Cheddar. Top with the sandwiches, chili-side down. Cook until the bottoms are crunchy and golden, about 5 minutes more. Transfer to a cutting board. Cut each sandwich into 4 squares and serve immediately.

6 beaten eggs
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon cayenne pepper sauce
3 (4 oz) cans with juice diced green chiles
1 1/2 cups grated Monterey Jack cheese
1 1/2 cups grated sharp cheddar cheese

Steps:

  • Preheat the oven to 300 °F.
  • Spray a 12 by 8-inch baking dish with cooking spray.
  • In a bowl, add the eggs, salt, pepper and cayenne pepper sauce. Mix together well.
  • Add the chiles and both cheeses to a large bowl. Pour the liquid ingredients into the cheese mixture and stir well. Pat the mixture down into the prepared baking dish and bake until the center is firm, about 45 minutes. Allow to cool, then cut into small squares and serve.

This is a family favorite and it is very easy to make. We originally discovered it as an appetizer, but I think it is great for brunch. I also make it just for myself and freeze the squares to have for lunch in the future. The recipe is very open to substitutions. Fresh green chiles can be used if you happen to live where you can get them and the recipe can probably be made without them or with any amount according to your tastes.

1 (4 ounce) can diced peeled green chilies, drained
8 ounces grated monterey jack cheese or 8 ounces sharp cheddar cheese
1 cup biscuit mix
1 cup light cream (evaporated milk also works)
4 eggs
1/4 teaspoon salt
1/4 cup sliced pimento stuffed olive

Steps:

  • Sprinkle chiles and cheese in the bottom of a lightly greased 9-inch square baking pan.
  • Combine biscuit baking mix, cream or milk, eggs, and salt in a medium-sized bowl.
  • Beat until thoroughly blended.
  • Pour over chili-cheese mixture.
  • Bake in a 375º for 30 minutes or until puffed, golden, and a skewer inserted in center comes out clean.
  • Let stand 10 minutes before slicing.
  • Garnish with olive slices, if you wish.
  • To freeze ahead: Freeze squares in a single layer on a large baking sheet.
  • Transfer to a plastic bag when frozen.
  • To reheat: arrange squares in a single layer on a large baking sheet and bake at 350º for 15 minutes.

Everyone loves these. There are a lot of versions out there, just thought I would throw this one in the mix. Got this recipe from Diane Doherty, dare I say 25 years ago :-) yummy, yummy.

1 pt cottage cheese
10 eggs
1/2 c flour
1 tsp baking powder
dash of salt (optional)
3 c shredded jack or cheddar, or both
2 4 oz cans of chopped green chiles

Steps:

  • 1. Preheat oven to 350 degrees. Grease 13 x 9 Pan
  • 2. In large mixer bowl beat eggs, stir together flour, baking powder and salt. Add to eggs and mix well; fold in cheese, cottage cheese and chiles. Pour in to greased pan.
  • 3. Bake 40 minutes. Let stand 10 minutes. Cut into small squares.

1 - 7oz can(s) diced jalapenos (optional)
4 c cheddar cheese, shredded

Steps:

  • 1. Butter or spray a 9X13(or similar size)baking dish
  • 2. Mix the ortega chili's with the Jalapenos and spread half the mixture on the bottom of the baking dish
  • 3. Mix the eggs, cheese and herbs and seasoning together and spread half this mixture over the top of the chili's.

  • Slice butter into large chunks and place in a 9×13 pan. Place pan in oven and preheat to 400 degrees. (Keep an eye on this if you get delayed in the following steps so your butter doesn’t burn!)
  • Whisk together flour, baking powder and salt in a large mixing bowl. Add 1-2 eggs and whisk mixture until there are no lumps. Add in remaining eggs and whisk until smooth. Stir in green chiles, cottage cheese, and jack cheese and stir until just combined.
  • Remove pan from oven and tilt pan so the butter coats all over then carefully pour butter into egg mixture and stir to combine. Pour mixture back into warm pan.
  • When oven is preheated place pan in oven and cook for 15 minutes. Reduce heat to 350 and cook for an additional 35-40 minutes, or until top is golden and slightly browned. Let cool for 10 minutes before slicing into squares and serve.
