Frito Chili Casserole is the perfect comfort dinner. Delicious layers of crunchy Fritos, Southwestern chili, and lots of gooey cheese make for a winning weeknight meal!

Ingredients

1 lb ground beef
1 onion (chopped)
4 oz green chiles (chopped, (1 can))
4 oz black olives (sliced, (1 can))
16 oz chili ((1 can))
16 oz chili beans ((1 can))
15 can corn (drained, (1 can))
1 c. salsa
1 Tbsp taco seasoning
10.5 oz Fritos ((1 bag))
2 c. cheese (shredded)

Steps:

Preheat oven to 350-degrees. Gather ingredients.
In a large skillet, cook ground beef and onions until cooked through and onions become transparent. Discard grease if needed.
Stir in chiles, olives, chili, chili beans, corn, salsa, and taco seasoning. Bring to a simmer for about 10 minutes, stirring often.
Crush Fritos and spread half of them evenly in a 9x13 deep baking dish. Add chili mixture and top with remaining crushed Fritos.
Bake for 25 minutes. Add cheese and bake an additional 10 minutes or until cheese is melted.

1 1/2 - 2 c corn chips
3 c leftover chili
1 1/2 c shredded, cheddar cheese
TOPPINGS
green onions, sour cream, tomatoes

Steps:

1. Preheat oven to 350 degrees. In a casserole dish, spread corn chips. Then layer with half of the chili and then half of the shredded cheese. Repeat with remaining chili and cheese. Bake for 15-20 minutes until cheese is melted and chili is bubbly. Top with toppings of your choice.

Put 2 cups Fritos in baking dish.
Arrange onion and half the cheese on top of Fritos.
Pour chili over the cheese.
Top with remaining Fritos and cheese.
Bake at 350* for 15 minutes, or until hot.

Preheat the oven to 350°F. Spray a 3 quart baking dish or an 12 x 8 inch baking dish with cooking spray.
On the stove top in a medium size pot, saute the diced onion and pepper in a couple of drizzles of olive oil. Cook until the vegetables begin to soften and brown. Add the minced garlic and saute for 1 minute.
Add the ground beef and cook until no pink remains. Season with seasoned salt and black pepper to your taste.
