410g tin mixed beans in chilli sauce
handful cherry tomatoes , halved
4 tortillas wraps
2 handfuls grated mature cheddar
ready-made guacamole , to serve

Steps:

  • Heat grill to high. Empty beans into a pan, stir in tomatoes and cook over a medium heat for 5 mins. Divide the bean mix between tortillas, sprinkle over a small handful cheese, then roll up the wraps. Put onto a baking sheet, scatter over another handful of cheese, then grill for 2-3 mins until the cheese is golden and bubbling. Serve with the guacamole on the side.

1small onion , sliced
1 tbsp vegetable oil
400g can mixed beans , drained and rinsed
400g can chopped tomatoes
30g sachet fajita seasoning (we like Discovery), or 2 tbsp Cajun seasoning
8 soft corn tortillas wraps (Old El Paso are good)
grated cheese , guacamole and soured cream
handful coriander or parsley, roughly chopped

Steps:

  • Gently fry onions for 5 mins in oil, until softened. Tip in beans, tomatoes and seasoning, then simmer for 10 mins, stirring occasionally.
  • Meanwhile, warm the wraps in the microwave on High for 1 min.
  • Take a large spoonful of beans and spoon along the centre of each wrap. Top with some grated cheese, a spoonful of guacamole and soured cream and a sprinkling of coriander or parsley. Wrap into a cigar shape and eat straight away.

500g pack lean minced beef
350g jar tomato and chilli sauce (we like Loyd Grossman's)
8 large soft flour tortillas or Mediterranean wraps
400g can red kidney beans
142ml carton soured cream
100g bag herb salad

Steps:

  • Cook the meat. Dry fry the beef in a non-stick pan until it has changed colour all over, spooning in a little of the sauce if the meat starts to stick to the pan. Pour in the rest of the sauce, then fill the jar about one-third full with water and rinse it out into the pan. Bring to the boil, then let it bubble away for 15 minutes, stirring occasionally.
  • Do the tortillas. Heat the tortillas in the microwave according to the packet instructions (or dry fry them singly in a frying pan for 1 minute on each side). At the same time, drain and rinse the beans and tip them into the meat. Stir well and heat through for about 5 minutes until the beans are hot and the meat sauce is thick (if it's too runny it will ooze out of the wraps when you eat them).
  • Serve up. Pile the tortillas on a plate and let everyone make their own wraps. The best way to do this is to spread the tortilla with some soured cream, then spoon the meat and some salad in the centre. Now fold up the side of the tortilla nearest to you, and fold in the sides to enclose the filling.

1½ tbsp rapeseed oil
1 onion , sliced
2 peppers , sliced
2 garlic cloves , crushed
1 tbsp ground cumin
1 tbsp ground coriander
2 tsp hot smoked paprika
400g can chopped tomatoes
400g can mixed beans , drained
400g can black beans , drained
pinch of sugar
250g brown rice
½ small bunch coriander , chopped
soured cream or guacamole, to serve (optional)

Steps:

  • Heat the oil in a casserole dish and fry the onion and peppers for 10 mins over a medium heat until the onion is golden brown. Add the garlic and spices, and fry for 1 min. Pour in the tomatoes, both cans of beans, 50ml water, then add the sugar and season. Simmer, stirring regularly, for 15-20 mins until thickened.
  • Meanwhile, cook the rice following pack instructions. Serve the chilli on the rice and scatter over the coriander. Top with a spoonful of soured cream, or guacamole, if you like.

150g thin-cut frying steak , very thinly sliced
1 tsp mild chilli powder
2 good pinches of ground cumin
2 garlic cloves , finely chopped
2 tsp sunflower oil
1 yellow pepper , deseeded, quartered and sliced
1 red onion , thinly sliced
2 tomatoes , chopped
400g can black bean , drained
good handful fresh coriander
4 value soft tortilla wraps

Steps:

  • Put the steak in a bowl with the spices and garlic, and stir well. If you have time, leave to marinate for a couple of hrs. Heat the oil in a wok, then tip in the beef and fry for just 1-2 mins, until it changes colour but is still on the rare side. Remove the beef to a plate.
  • Add the pepper and half the onion, and stir-fry in the juices - add a splash of water to get things going and stop it burning. Stir in the tomatoes and beans, and heat through with plenty of seasoning, then stir in most of the coriander.
  • Meanwhile, heat the tortillas. The best way is directly on the gas flame, as it gives them a lovely charred flavour. Stir the beef into the beans and heat briefly. Serve with the tortillas and the reserved onion and coriander.

1 large onion, chopped
3 garlic cloves, minced
2 teaspoons ground cumin
1 (15 ounce) can black beans, drained and rinsed
2 canned chipotle chiles, chopped
1 teaspoon adobo sauce, from the canned chiles
1/4-1/2 teaspoon salt
4 large burrito-size flour tortillas, warmed
1/3 cup sour cream
2 cups cooked rice
1/2 cup salsa
1/4 cup cilantro leaf

Steps:

  • Add oil to a skillet, heat over medium heat.
  • Add onion and cook, while stirring occasionally, about 5 minutes or until translucent.
  • Add in the garlic and cumin, stir and cook about 1 minute.
  • Add in the black beans, chipotles, adobo sauce, and salt; stir to combine.
  • Simmer about 5 minutes or until heated through (mixture appears dry).
  • Spread a warmed tortilla with 1 1/2 tablespoon sour cream.
  • Place 1/2 cup rice in a horizontal strip about one-third of the way up from the bottom edge of the tortilla. Top with one-fourth of the bean mixture, salsa, and cilantro leaves.
  • Fold in the two sides of the tortilla and roll tortilla away from you (burrito-style).
  • Repeat with remaining ingredients.

Add the chilli, cayenne pepper, paprika, cumin, sugar, tomato, beans, tomato paste and 125 ml (1/2 cup) water. Bring the mixture to the boil, then reduce the heat and simmer for 15-20 minutes, or until it is thickened and reduced.
  • To assemble the wraps, put some of the chilli beans along the middle of each tortilla, sprinkle it with 2 tablespoons of the cheese and roll it up. Put three rolls, seam-side down, on a double layer of foil and seal the foil to form a parcel. Preheat a barbecue flat plate to low-medium direct heat and grill the parcels for 6-8 minutes on each side or until they are heated through.
  • Unwrap the foil parcels and slide the tortillas onto serving plates. Top them with the sour cream, garnish with coriander sprigs and serve them with the lime wedges. Even better, add some guacamole and tomato salsa.
