Steps:

  • Add flour, 1/2 cup sugar, salt, and baking powder to a mixing bowl; stir to combine.
  • Add in milk and butter; stir to combine.
  • Spread batter into a greased 8-inch square baking pan.
  • Sprinkle blueberries evenly over batter.
  • Sprinkle with 1/3 cup sugar and drizzle with vanilla.
  • Bake at 350° for 40-45 minutes or until a pick comes out clean.

3 tablespoons white sugar
⅓ cup orange juice
⅔ cup all-purpose flour
¼ teaspoon baking powder
1 pinch salt

  • Preheat oven to 375 degrees F (190 degrees C).

½ lemon
1 ⅛ cups white sugar
4 ½ tablespoons butter, softened

1 ½ tablespoons cornstarch
1 pinch ground cinnamon
¾ cup boiling water

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease an 11x7 inch baking dish.
  • Spread the blueberries out to cover the entire bottom of the baking dish. Squeeze the juice from the lemon over them. In a medium bowl, stir together the butter and 1 1/8 cups sugar until smooth. Stir in flour and baking powder alternately with the milk until smooth. Batter will be thin. Spoon over the berries, and spread evenly.

1/2 cup butter
2 cups water
1 1/2 cups sugar
2 cups blueberries (or any fruit available)
1 1/2 cups self rising flour
1/2 cup shortening
1/2-2/3 cup milk

Steps:

  • Preheat over to 350. Melt butter into a 9X13 pan.
  • Boil water and sugar together in a pot to make a simple syrup.
  • To make dough take flour and cut in shortening. Once well mixed add in milk using the least amount at first. Flour surface and roll dough (or flatten with hands) until about 1/4 inch thick and rectangular shaped. Place your fruit in the center and roll the dough around like a jelly roll. Once you have your roll cut small 1/4 thick slices off- they will look like pinwheels. Place each pinwheel in the pan where the fruit is in the center and the dough covers all sides. Sprinkle with a small amount of sugar or brown sugar (even brown sugar and cinnamon if using apples) then pour simple syrup mixture over the top.
  • Bake at 350 for 40-45 mins and enjoy. Goes great warm with a scoop of vanilla ice cream.

1 1/2 lbs fresh blueberries
4 -5 tablespoons sugar
3/4 cup all-purpose flour, plus
1 teaspoon all-purpose flour, divided
1 1/2 teaspoons fresh lemon juice
1/4 teaspoon almond extract
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons unsalted butter, chilled and cut into bits
1/2 cup well-shaken buttermilk

Steps:

  • In a 9 inch glass or ceramic pie plate, toss blueberries, 2 to 4 tablespoons sugar, 1 tablespoon flour, lemon juice, and almond extract; let stand abut 30 minutes, or until mixture is juicy.
  • Preheat oven to 400 degrees.
  • In a bowl, sift together remaining flour, baking powder, baking soda, salt and 1 teaspoon sugar.
  • Blend in butter with fingertips or pastry blender until mixture resembles coarse meal.
  • Stir in buttermilk using a fork, until just combined.
  • Drop rounded tablespoons of dough over filling, leaving spaces for topping to expand.
  • Sprinkle with remaining sugar.
  • Back on center rack of oven until topping is golden, about 30 minutes.

¼ cup cold water
1 cup milk
1 cup self-rising flour

¼ cup melted butter, or to taste
1 pinch ground cinnamon, or to taste
1 teaspoon coarse sugar, for garnish

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine blueberries, 1/2 cup sugar, and lemon juice in a saucepan with enough water to just cover; bring to a boil. Cook, stirring occasionally, over medium-high heat until the berries pop and the sugar is dissolved completely, 3 to 5 minutes. Stir cornstarch into 1/4 cup cold water; stir into blueberry mixture. I've tinkered and tinkered, and this is the very best blueberry cobbler recipe I've found. Cakey/biscuit topping with a slight crunch on top and ooey gooey delicious blueberries hidden on the bottom. It can also work with other fruit fillings. Works best with delicious fresh blueberries and is the perfect summer treat.... An amalgamation of mine and my grandmother's cobbler recipe.... I think it is the best! Serve plain or with whipped cream. Enjoy!

2 ½ cups fresh or frozen blueberries
1 teaspoon vanilla extract
½ lemon, juiced

4 teaspoons baking powder
6 tablespoons white sugar
5 tablespoons butter
1 cup milk
2 teaspoons sugar

Steps:

  • Lightly grease an 8 inch square baking dish. Place the blueberries into the baking dish, and mix with vanilla and lemon juice. Sprinkle with 1 cup of sugar and 1/2 teaspoon of flour, then stir in the tablespoon of melted butter. Set aside.
  • In a medium bowl, stir together 1 3/4 cups of flour, baking powder, and 6 tablespoons sugar. Rub in the 5 tablespoons butter using your fingers, or cut in with a pastry blender until it is in small pieces. Make a well in the center, and quickly stir in the milk. Mix just until moistened. You should have a very thick batter, or very wet dough. You may need to add a splash more milk. Cover, and let batter rest for 10 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Spoon the batter over the blueberries, leaving only a few small holes for the berries to peek through. Mix together the cinnamon and 2 teaspoons sugar; sprinkle over the top.
  • Bake for 20 to 25 minutes in the preheated oven, or until the top is golden brown. A knife inserted into the topping should come out clean - of course there will be blueberry syrup on the knife. Let cool until just warm before serving. This can store in the refrigerator for 2 days.
