EASY CHILI EGG PUFF BAKE



Easy Chili Egg Puff Bake image

This is really a mix and bake casserole, it makes a great easy brunch! You can add in some green onions if you wish, the jalapeno is only optional, this dish can be served hot or cold.

10 large eggs
1 cup flour
1 pint small-curd cream-style cottage cheese
1/2 cup melted butter
1 teaspoon baking powder
salt (I use about 1/2 teaspoon)
black pepper
1 lb monterey jack cheese, shredded
2 (4 ounce) cans diced green chilies
1 small jalapeno pepper, seeded and finely chopped (to taste) (optional)
parmesan cheese

Steps:

  • Set oven to 350 degrees.
  • Butter a 13 x 9-inch baking dish.
  • In a bowl beat the eggs until light and lemon coloured.
  • Add in the rest of the ingredients except the chilies; blend until well combined.
  • Stir in the chilies.
  • Transfer the mixture into prepared baking disg.
  • Sprinkle the top with grated Parmesan cheese.
  • Bake for about 35-45 minutes or until the top is browned and the center appears to be firm.

12 large eggs
1/2 cup all-purpose flour, (scooped and leveled (70g))
1 teaspoon baking powder
1/2 teaspoon salt
1 pint cottage cheese ((about 2 cups))
3 cups shredded Mexican cheese blend ((or any combination of cheddar, monterey jack, and pepper jack))
6 Tablespoons salted butter, (melted)
8 ounces mild diced green chilies

Steps:

  • Preheat oven to 350 degrees F. Butter a 9x13-inch baking dish.
  • In a large bowl using an electric hand mixer or stand mixer, beat eggs until light.
  • Add flour, baking powder, and salt. Mix well.
  • Add cottage cheese, Mexican cheese blend, butter, and green chilies. Mix until combined. Pour into prepared baking dish. Bake immediately or cover and refrigerate overnight.
  • Bake, uncovered, for 35-40 minutes or until edges on top are browned and center is set and appears firm. Cool 5 minutes before cutting and serving.

1 pint (16 oz) small curd cottage cheese
2 cups cheddar cheese (shredded)
2 tbsp butter (melted)
2 4 oz cans diced green chilies (drained)

Steps:

  • Pre-heat oven to 350 degrees F.
  • Beat the eggs until light and lemon colored. Add the flour, baking powder, salt, cottage cheese, shredded cheese, and melted butter, blending smoothly. Stir in the chilies - the main ingredient for some heat.
  • Pour mixture into a 9×13 baking dish. Bake in the preheated oven for 35 minutes or the center appears firm.
  • Allow to cool for at least 15 minutes before serving.

Sturdier than a souffle but lighter than scrambled eggs, this casserole of eggs, chiles, and two cheeses is a family favorite. If you like, offer picante sauce to spoon over individual portions. From the Sunset Microwave Main Dishes cookbook. Please note: This cookbook states that these recipes were cooked and tested on a 700-watt microwave. If you have a 1,000- or 1,100-watt microwave, I would recommend lowering the cooking power.

1/4 cup butter or 1/4 cup margarine
6 large eggs
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup small curd cottage cheese
2 cups shredded monterey jack cheese
1 (4 ounce) can diced green chilies
picante sauce (optional)

Steps:

  • Place butter in a shallow 2-quart microwave-safe baking dish. Microwave on High fr about 45 seconds or until butter is melted. Break eggs into dish and beat with a wire whisk until blended. Then mix in flour, baking powder, salt, cottage cheese, 1-1/2 cups of the monterey jack cheese, and chiles until blended. Smooth to make an even layer.
  • Microwave, uncovered, on Medium-High for 5 minutes. Remove dish from oven and stir, bringing cooked edges of mixture toward center of dish and allowing uncooked portion to flow to edges. Then microwave, uncovered, on Medium-High for 5 more minutes, giving dish a half-turn after 2-1/2 minutes (if your microwave does not have a turntable). Sprinkle egg puff with remaining 1/2 cup of monterey jack cheese. Microwave,uncovered, on High for 2 minutes or until cheese is melted and puff appears barely set in center. Let stand, uncovered, for 10 minutes; puff should feel firm in center when lightly touched.
  • Offer picante sauce to spoon over individual portions, if desired.

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch casserole dish.
  • Sift together flour, baking powder and garlic powder. In a separate bowl, beat eggs well. Gradually stir in flour mixture. Blend in cheeses, green onions, chilies and butter. Pour batter into prepared casserole dish.
  • Bake in preheated oven until firm and a toothpick inserted into center of the loaf comes out clean, about 35 to 45 minutes.
