This succotash recipe is a classic American dish of tender, creamy butter beans sautéed with sweet corn, bell pepper and more for a wonderful side dish.

Number Of Ingredients 10

1 tablespoon vegetable oil (or use bacon grease)
1 tablespoon butter + 1-2 tablespoons for later (if desired)
1 large red onion (chopped)
1 large green bell pepper (chopped (or use jalapeno peppers for a spicier version))
4 cloves garlic (minced)
3 cups fresh corn kernels (frozen is ok to use, thawed)
1.5 pounds butter beans (or baby lima beans - fresh hydrated, or thawed from frozen)
Salt and pepper to taste
1 cup cherry tomatoes (sliced in half)
2 tablespoons fresh chopped basil (or use other fresh herbs)

Steps:

  • Heat 1 tablespoon vegetable oil and 1 tablespoon butter together in a large pan over medium heat. Swirl to combine.
  • Add the onion and bell pepper and cook for 5 minutes to soften.
  • Add the garlic and cook 1 minute, until it becomes fragrant.
  • Add the corn, butter beans, and salt and pepper to taste. Stir and cook 5 minutes, or until the corn is golden in color and the beans are cooked to your preference.
  • Stir in 1-2 tablespoons of butter (if desired) along with the cherry tomatoes and fresh chopped basil, about 1 minute to warm.
  • Serve!

Brown Sugar Skirt Steak with Succotash image

Brown sugar, salt and pepper make up the super-simple rub that gives this grilled skirt steak its beautiful crust. A succotash-inspired salad of black-eyed peas, grilled corn and ripe tomatoes is the perfect foil.

1/4 cup dark brown sugar
Kosher salt and freshly ground black pepper
1 pound skirt steak, trimmed and cut into 4 portions
2 medium red tomatoes (about 1 pound), cut into 1/2-inch-thick wedges
1/2 cup sour cream
1/4 teaspoon cumin
Zest and juice of 1 lime
2 tablespoons olive oil, plus more for oiling the grill grates
4 ears yellow corn, shucked
1 large red onion (about 8 ounces), sliced into 1/2-inch rounds
One 15-ounce can black-eyed peas, drained and rinsed
1/2 cup roughly chopped fresh parsley or cilantro

Steps:

  • Prepare a grill or large grill pan for medium-high heat. Mix the brown sugar, 1 tablespoon salt and 2 teaspoons pepper together in a small bowl. Rub the mixture into the steaks and set aside for 15 minutes.
  • Put the tomatoes in a large mixing bowl. Sprinkle with salt and pepper and let sit at room temperature while you prepare the rest of the ingredients.
  • Whisk together the sour cream, cumin, lime zest and juice and a pinch of salt and pepper in a small bowl and set aside.
  • Meanwhile, lightly oil the grill grates. Brush the corn and onions liberally with the oil, sprinkle with salt and pepper and put on the grill. Grill the corn until lightly charred, turning the ears occasionally, and the onions until charred and tender, flipping as needed, 6 to 8 minutes for both. Transfer the vegetables to a cutting board to cool slightly.
  • Grill the steaks until crisp, about 4 minutes per side for medium rare. Set aside to rest for 5 minutes.
  • While the steaks rest, cut the corn away from the cobs and quarter the onion rounds. Add the corn, onions, black-eyed peas and half of the parsley to the bowl with the tomatoes and toss gently to combine. Season with salt and pepper.
  • Slice the steaks across the grain and divide among 4 plates. Divide the succotash among the plates, top with a dollop of the reserved sour cream mixture and garnish with the remaining parsley or cilantro. Serve immediately.

BACON-WRAPPED SCALLOP TOURNEDOS WITH SUMMER SUCCOTASH



Bacon-Wrapped Scallop Tournedos with Summer Succotash image

8 slices thick-cut bacon
2 pounds (about 24) extra large sea scallops
Salt and freshly ground black pepper
3 tablespoons unsalted butter
2 cups corn kernels (from 2 ears)
2 cups fresh lima beans, peeled, blanched in boiling salted water for 30 seconds; or thawed frozen lima beans
1 large tomato, cored, cut into small cubes
3 tablespoons chopped fresh sage leaves
8 (8-inch) skewers

Steps:

  • Build a multi-level fire in the grill: Leave 1/4 of the bottom free of coals, bank the coals in the remaining 3/4 of the grill so that they are 3 times as high on one side as on the other. When the coals are all ignited and the temperature has lowered to medium (hold hand about 5-inches above grill grid, over the area where coals are deepest, for 4 to 5 seconds), the grill is ready to cook.
  • In a large skillet, cook the bacon over medium-high heat until it has rendered a good amount of fat, but has not begun color or crinkle up, about 4 minutes (The bacon should be cooked halfway, it should remain pliable). Remove from the heat.
  • Thread the scallops onto skewers, putting 3 on each skewer, zig-zagging with a piece of bacon around each trio of scallops, securing it at the top and bottom with toothpicks, or secure with a second skewer. Sprinkle the skewers generously with salt and pepper, then place on grill over the side with fewer coals and cook until scallops are opaque all the way through, about 5 to 7 minutes per side.
  • Melt the butter in a large skillet over medium heat. Add the corn, lima beans, tomato, sage, and salt and pepper, to taste. Cook, stirring occasionally, until all the ingredients are nice and hot, about 5 minutes.
  • To serve, place about 1/4 of the succotash on each plate, top with 2 skewers.
  • Cook's note: Try to use the largest scallops available, if dry scallops are available, it's even better. When grilling scallops watch carefully for any flare-ups.

This recipe could hardly be easier. It doesn't need to be watched super carefully because you actually want it to burn a little bit because there is nothing tastier than charred corn. This dish is incredibly versatile and can be served as a side dish or incorporated into a taco or Mexican salad dish or you can chop some avocado and tomatoes and make an easy "grilled" corn salsa.

26 -32 ounces frozen corn, NOT thawed (I prefer white and yellow mix)
1 medium pasilla chiles or 1 medium poblano chile
1 cup chopped onion (sweet onion or red onion)
1 teaspoon olive oil
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon ground black pepper
1/2 teaspoon dried mexican cilantro

Steps:

  • Chopp onion and chile such that the pieces are comparable in size to the kernels of corn.
  • In a large skillet (that you have a lid for), heat oil over medium-high heat.
  • Add chopped onion and chile and cook until onions are translucent but still firm (3-5 minutes).
  • Pour frozen corn into skillet. Stir as much as possible and then cover.
  • Cook covered for about 3 to 5 minutes.
  • Stir corn mixture. Corn should be thawed at this point.
  • Cook for about 5 minutes without stirring. You want to corn to char a little bit but not too much.
  • When corn get some dark brown spots from the heat (but ideally not black), remove from heat.
  • Season with salt, pepper, garlic powder and dried cilantro.
  • Serve and enjoy!
