This Easy Chickpea Stew recipe is a vegetable stew recipe that comes together in about 30 minutes and has an intoxicating combination of flavors. It's one of my favorite chickpea dinner recipes and it's also one those easy one pot meals you can pull together any night of the week.

3 tablespoons extra-virgin olive oil
1 cup onions, chopped
1 cup red pepper, chopped
1 cup carrots, chopped
1 cup red potatoes, cut into quarters
2 cups cauliflower, cut into florets
2 cloves garlic, minced
1 tablespoon fresh ginger, peeled and minced
1/2 teaspoon jalapeno, minced
1-1/2 teaspoons cumin
1 teaspoon smokey paprika
1/2 teaspoon turmeric
2-3 tablespoons tomato paste
3 cups vegetable broth
1 15-ounce can chickpeas, drained and rinsed
3/4 cup unsweetened coconut milk

Steps:

  • In a medium size Dutch oven (or other pot), heat the olive oil.
  • Add the onions and red pepper and cook over medium high heat, stirring for about 5 minutes or until golden brown.
  • Add the carrots and red potato and cook for another 3-4 minutes. Add the cauliflower, garlic, ginger and jalapeno, and cook another 2-3 minutes.
  • Add the cumin, paprika, turmeric and tomato paste and stir to blend into the vegetables.
  • Add the vegetable broth and chickpeas and bring to a simmer.
  • Cove pot and simmer over low heat for about 12 - 15 minutes or until the vegetables are tender.
  • Add the coconut milk and bring back to a simmer.
  • Serve with chopped cilantro.

This recipe is healthy but stylish. It has many layers of flavor, but is balanced. It looks fancy, but is cheap. I have found at the supermarket tinned squid with its black sauce and was looking for a good way to cook it to avoid pasta... the marriage with chickpeas is a winner! Plus, all the main ingredients can be stocked in the cupboard, ready for when you need an emergency special and warming dish.Carb countTinned chickpeas: 9% ->36 grTinned squid: 4.7% -> 5 grJuice of 1/2 lemon: 7% -> 1.5 grTOT: 40 gr, 20 gr per portion

1 can of chickpeas ((400 gr including the water))
1 can of squid pieces in salsa negra
1 onion (in small pieces)
1 garlic clove (in small pieces)
1 bay leave ((optional))
Juice of ½ lemon
A pinch of dried chilly

Steps:

  • Fry the onion in a bit of oil, when it starts being softer add the garlic. Let it cook for a few minutes.
  • Add the chickpeas (drained) and season with salt and pepper. If you have it, add a bay leave.
  • Cover and cook on medium heat for around 15 minutes, or until the chickpeas are soft. Then squeeze the juice of half a lemon in the stew, add the squid pieces and the dish is ready!

SQUID, PRAWN & CHICKPEA NDUJA STEW

2 tbsp olive oil
1 onion, finely chopped
1 fennel, finely chopped, fronds reserved
2 garlic cloves, sliced
1 tbsp nduja or 1 cooking chorizo, skin removed, crumbled
400g can chopped tomatoes
100ml red wine
250ml chicken stock
400g can chickpeas, drained
200g prepared squid
200g king prawns (peeled weight)
small handful of flat-leaf parsley, chopped
1 lemon, zested

Steps:

  • Heat the olive oil in a large, flameproof shallow casserole dish over a medium heat, and cook the onion, fennel and garlic for 12 mins, stirring occasionally until soft and just turning golden. Stir in the nduja or chorizo and sizzle for 2 mins until the oils are released and the veg starts to take on the red colour.
  • Tip in the tomatoes, then rinse the can out with the wine and pour it in, along with the stock. Stir in the chickpeas. Season and bring to a simmer, then cook for 20 mins until the sauce is rich. Season to taste.
  • Stir in the squid and prawns so they're completely mixed into the sauce, then simmer for about 5 mins more until the squid and prawns are cooked through. Scatter with the parsley, lemon zest and reserved fennel fronds before serving.

This dish combines the warm spices commonly found in Moroccan tagines in a comforting vegetarian stew. The roasted kale and chickpeas add texture and a pleasant bite that serve as counterpoints to the caramelized onions and sweet carrots. We love to finish it with a sprinkle of Aleppo pepper or hot paprika.

Number Of Ingredients 15

2 tablespoons plus 2 teaspoons Hungarian paprika
4 teaspoons ground ginger
2 teaspoons freshly ground black pepper
2 teaspoons ground turmeric
1/2 cup olive oil, plus more for serving
3 cloves garlic, chopped
1 large onion, chopped
Kosher salt
2 carrots, peeled and cut on the bias into 1-inch pieces
1 small poblano pepper, stemmed, seeded and chopped
One 14-ounce can diced tomatoes, preferably fire-roasted
2/3 cup Castelvetrano olives, pitted
Two 15-ounce cans chickpeas, drained and chickpea liquid reserved
1 small bunch curly kale, stemmed and torn into 3-inch pieces
Serving suggestions: labneh, chopped fresh parsley, Aleppo pepper, lemon wedges and toasted pita

Steps:

  • Mix the paprika, ginger, pepper and turmeric in a small bowl until combined; set aside.
  • Heat 1/4 cup of the oil in a large heavy pot or Dutch oven over medium-high heat. Add the garlic, onions and 1 tablespoon salt and cook, stirring and scraping occasionally, until the onions are very soft and golden brown, about 15 minutes. Add the carrots and poblano and cook until the colors brighten but the vegetables are not yet tender, about 3 minutes. Add half of the paprika mixture and stir to coat. Cook until the spices are very fragrant, 1 to 2 minutes. Add the tomatoes, olives, all of the chickpea liquid, half of the chickpeas and 1 cup water and bring to a boil. Reduce the heat to low, then cover and simmer until the vegetables are tender and the chickpeas are very soft, 35 to 45 minutes.
  • Meanwhile, position 2 oven racks in the upper and lower thirds of the oven and preheat to 400 degrees F.
  • Toss the kale, 2 teaspoons salt and the remaining 1/4 cup olive oil, chickpeas and paprika mixture in a large bowl until combined. Divide the kale mixture between 2 rimmed baking sheets and roast, tossing once, until the kale is charred in places, 15 to 25 minutes.
  • Serve the stew with the roasted kale and chickpeas and top with labneh, parsley, a sprinkle of Aleppo pepper, a squeeze of lemon and toasted pita.

SPICED CHICKPEA STEW WITH COCONUT AND TURMERIC



Spiced Chickpea Stew With Coconut and Turmeric image

Spiced chickpeas are crisped in olive oil, then simmered in a garlicky coconut milk for an insanely creamy, basically-good-for-you stew that evokes stews found in South India and parts of the Caribbean. While the chickpeas alone would be good as a side dish, they are further simmered with stock, bolstered with dark, leafy greens of your choosing and finished with a handful of fresh mint. When shopping, be sure to avoid low-fat coconut milk, coconut milk meant for drinking or cream of coconut: All are very different and would not be suitable here.

1/4 cup olive oil, plus more for serving
4 garlic cloves, chopped
1 large yellow onion, chopped
1 (2-inch) piece ginger, finely chopped
Kosher salt and black pepper
1 1/2 teaspoons ground turmeric, plus more for serving
1 teaspoon red-pepper flakes, plus more for serving
2 (15-ounce) cans chickpeas, drained and rinsed
2 (15-ounce) cans full-fat coconut milk
2 cups vegetable or chicken stock
1 bunch Swiss chard, kale or collard greens, stems removed, torn into bite-size pieces
1 cup mint leaves, for serving
Yogurt, for serving (optional)
Toasted pita, lavash or other flatbread, for serving (optional)

Steps:

  • Heat 1/4 cup oil in a large pot over medium. Add garlic, onion and ginger. Season with salt and pepper, and cook, stirring occasionally until onion is translucent and starts to brown a little at the edges, 3 to 5 minutes.
  • Add 1 1/2 teaspoons turmeric, 1 teaspoon red-pepper flakes, and the chickpeas, and season with salt and pepper. Cook, stirring frequently, so the chickpeas sizzle and fry a bit in the spices and oil, until they've started to break down and get a little browned and crisp, 8 to 10 minutes. Remove about a cup of chickpeas and set aside for garnish.
  • Using a wooden spoon or spatula, further crush the remaining chickpeas slightly to release their starchy insides. (This will help thicken the stew.) Add coconut milk and stock, and season with salt and pepper.
  • Bring to a simmer, scraping up any bits that have formed on the bottom of the pot. Cook, stirring occasionally, until stew has thickened, 30 to 35 minutes. (Taste a chickpea or two, not just the liquid, to make sure they have simmered long enough to be as delicious as possible.) If after 30 to 35 minutes, you want the stew a bit thicker, keep simmering until you've reached your desired consistency. Determining perfect stew thickness is a personal journey!
  • Add greens and stir, making sure they're submerged in the liquid. Cook until they wilt and soften, 3 to 7 minutes, depending on what you're using. (Swiss chard and spinach will wilt and soften much faster than kale or collard greens.) Season again with salt and pepper.
  • Divide among bowls and top with mint, reserved chickpeas, a sprinkle of red-pepper flakes and a good drizzle of olive oil. Serve alongside yogurt and toasted pita if using; dust the yogurt with turmeric if you'd like.

4 red peppers
2 x 400g cans chickpea , rinsed and drained
huge bunch parsley , roughly chopped
1 red chilli , deseeded and chopped
2 garlic cloves , finely chopped
100ml olive oil
600g cleaned squid , sliced into rings, tentacles kept whole
200g cooking chorizo , cut into chickpea-size chunks
juice and zest 1 large lemon

Steps:

  • Cook the peppers whole under a grill, on a barbecue or griddle, until completely charred. Place the peppers in a bowl, cover with a plate until cool enough to handle, then peel, deseed and finely slice. In a large bowl mix the peppers and any juices with the chickpeas, parsley, chilli and garlic. Set aside.
  • Heat a large frying pan until smoking. Working quickly and carefully, add a splash of oil to the pan, then the squid. Stir-fry for about 30 secs. Scatter the chorizo over the squid, continue to cook for 30 secs more, then tip into the bowl with the peppers. Season everything with salt and pepper, then dress with the remaining oil, lemon juice and lemon zest. Mix together, pile onto a platter and let everyone help themselves.
