2 5 oz. cans of tuna in water (well drained)
3 garlic cloves (grated)
1/4 cup finely chopped white onion
1/4 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon lemon juice
1 tablespoon lemon zest
1 large egg
1/4 cup plain breadcrumbs
2 tablespoons mayo
1/4 cup grated Parmesan cheese
1 teaspoon dried parsley
4 tablespoons plain breadcrumbs
3 tablespoons grated Parmesan cheese
2 tablespoons olive oil (divided)

Steps:

  • Start by draining canned tuna from water. I use a small colander to do that.
  • Next, combine it with garlic, onion, salt and pepper, lemon juice and zest, egg, breadcrumbs, mayo, 1/4 cup of grated Parmesan cheese and dried parsley. Mix well.
  • Combine remaining breadcrumbs and grated cheese in a shallow dish. Scoop 1/4 cup of tuna mixture, form into a patty and lightly coat with breading mixture.
  • Fry cake in pan with oil, until nicely browned on each side. Remove from pan and let rest for 5 minutes. Serve with spinach or other greens, additional lemon wedge or even simple aioli.

This is a tasty twist to the traditional tuna cake. The chickpeas are healthy and go very nicely with tuna and the zesty flavor of fresh lemon.

1/2 cup sour cream (low fat or non-fat)
1 tablespoon lemon juice, freshly squeezed
2 teaspoons lemon zest
1 (10 ounce) can chickpeas, drained
1 tablespoon lemon juice, freshly squeezed
2 tablespoons sesame seeds, toasted
1 garlic clove, minced
1 (5 ounce) can tuna, lightly drained and flaked
1 egg
1/2 cup carrot, grated
1/4 teaspoon celery salt
1/4 teaspoon paprika
pepper
2 teaspoons olive oil
1 tablespoon fresh parsley or 1 tablespoon cilantro, chopped

Steps:

  • In a small bowl, mix ingredients for sauce (sour cream, lemon juice and lemon zest). Let sit in refrigerator.
  • In a mini chopper or mixer, blitz the chickpeas with the sesame seeds, lemon juice and garlic. Some chickpea texture is nice, but you can make it smoother if you want to. With a rubber spatula, spoon mixutre into a medium bowl and add tuna, egg, carrot, celery salt, paprika and pepper. Mix well.
  • Preheat a large nonstick frying pan to medium heat and add olive oil. Make 6 equal patties from tuna mixure. Place in the pan and flatten slightly with a spatula. Let cook for 2-4 minutes on each side, until cooked through.
  • Immediately serve each cake with a dollop of the lemon cream and sprinkle with parsley or cilantro.

GRILLED CHICKPEA POLENTA CAKES WITH CHIVE OIL AND LEMON



Grilled Chickpea Polenta Cakes with Chive Oil and Lemon image

2 tablespoons olive oil
1 Spanish onion, finely chopped
2 cloves garlic, finely chopped
2 cups canned chickpeas, rinsed and drained
8 cups chicken stock or water
Salt and freshly ground black pepper
2 cups polenta
1/2 cup olive oil
Chive oil, recipe follows
Finely grated lemon zest
Finely chopped fresh chives
1 cup chopped chives
1 cup extra-virgin olive oil
Salt and pepper

Steps:

  • Heat olive oil in a large saucepan on the grates of the grill. Add the onions and garlic and cook until soft. Add chickpeas, stock and salt and pepper and cook until chickpeas are very soft. *Transfer mixture carefully, in batches, to a blender and blend until smooth. Return the mixture to the saucepan and bring to a boil. Slowly whisk in the polenta, stirring constantly, and continue whisking until mixture begins to bubble. Reduce heat to medium and continue cooking, stirring with a wooden spoon until the mixture is thickened and cooked, about 30 minutes. Season with salt and pepper, to taste.
  • Spread the mixture into a baking sheet, cover with plastic and place in the refrigerator until cold and very firm, about 4 hours. When the polenta is firm, remove from the refrigerator and, using a 2-inch ring mold, cut out circles of the polenta.
  • Preheat a grill to medium-high.
  • Season the polenta circles with salt and pepper on both sides, brush with oil and grill on both sides until golden brown, about 2 to 3 minutes per side. Remove from grill, drizzle with chive oil and garnish with lemon zest and chives.
  • Combine ingredients in a blender and blend for 5 minutes. Season with salt and pepper, to taste.

A healthy and delicious patty with a Middle Eastern flavour that is easily and quickly made from pantry ingredients. Preparation time given does not include optional 30 minute chilling time.

1 cup Greek yogurt
1 bunch fresh coriander, chopped
800 g tinned chickpeas, well rinsed and drained
400 g tuna in brine, well drained
1 medium onion
3 garlic cloves
1 fresh chili (or to taste)
2 tablespoons lemon juice
2 teaspoons ground cumin
1 grated lemon, rind of
2 eggs
flour, for dusting
olive oil

Steps:

  • Mix half the chopped herbs with the yoghurt in a nice bowl, cover and refrigerate.
  • Place onion, lemon juice, garlic, cumin, chilli, and remaining herbs in food processor and chop finely. Empty into large mixing bowl with the grated lemon rind.
  • Place drained chickpeas in food processor and process. Add to onion and spice mixture.
  • Press excess moisture from the tuna and add to chickpeas.
  • Lightly beat the eggs and mix well into the tuna and chickpeas.
  • Season to taste.
  • Shape mixture into approximately 12 - 14 patties and dust lightly with seasoned flour. Place on flour dusted plates and refrigerate for about 30 minutes if possible (this helps to prevent the patties from breaking apart during cooking).
  • Heat oil in large frying pan and fry the patties 3 minutes each side (a total of 6 minutes).
  • Serve with the yoghurt herb sauce.

All the flavor of crab cakes at a fraction of the price. These crispy patties are made with canned tuna and a few basic seasonings you probably already have in your fridge and pantry. Prep these in advance then cook them just before serving or pull them together from scratch for a super quick dinner any night of the week. These tuna cakes are perfect served with mixed greens or your favorite veggie side or tuck them into burger buns for a warm and savory twist on an old-fashioned tuna sandwich.

Two 5- to 6-ounce cans tuna packed in oil or water, drained
2 to 3 slices sandwich bread, torn into small pieces (about 1/2 cup total) or 1/2 cup plain breadcrumbs
1 tablespoon brown or Dijon mustard
1/3 cup mayonnaise
1 large lemon, zested and juiced
1/4 small red onion, finely diced (about 2 tablespoons)
1/4 cup parsley, finely chopped
1 large garlic clove, grated
2 teaspoons seafood seasoning, such as Old Bay seasoning (can substitute Cajun seasoning)
1/2 teaspoon kosher salt
2 large eggs, lightly beaten
Olive oil, for frying
3/4 cup mayonnaise
1 lemon, zested and juiced
2 teaspoons chili powder
1/4 teaspoon cayenne pepper
Lemon wedges, for serving, optional

Steps:

  • For the tuna cakes: Place the drained tuna in a large bowl. Add the bread or breadcrumbs, mustard, mayonnaise, lemon zest and juice, onion, parsley, garlic, seafood seasoning, salt and eggs. Toss until evenly combined. Let sit 5 to 10 minutes to let the ingredients absorb the liquid.
  • Meanwhile, make the lemon chili mayo: Whisk together the mayonnaise, lemon zest and juice, chili powder and cayenne in a small bowl. Set aside.
  • Heat 2 tablespoons of olive oil in a 10- to 12-inch heavy-bottomed nonstick or cast-iron skillet over medium heat.
  • Scoop out about 1/3 cup of the tuna mixture at a time and pat into a round patty shape in your hands, then immediately place it in the skillet. Repeat, working in batches so that you're cooking 3 to 4 tuna cakes at a time, spaced 1 to 2 inches apart. Cook until crisp on the bottom, about 2 minutes, then flip and cook until crisp on the sides and fully cooked through, 2 to 3 minutes.
  • Serve the tuna cakes hot with your favorite side, a drizzle of the lemon chili mayo and lemon wedges, if desired.

150g tub low fat natural yogurt
a good handful of fresh coriander , roughly chopped
2x cans chickpea , drained and rinsed
400g can tuna in brine, drained
1 small onion , finely chopped
1 plump garlic clove , crushed
2 tbsp lemon juice
1 tsp cumin seeds
½ tsp crushed dried chilli
2 tbsp plain flour
4 tsp vegetable oil
12 cherry tomatoes , halved

Steps:

  • Mix the yogurt with half the coriander in a small bowl. Cover and chill until needed.
  • Tip the chickpeas into a food processor. Blitz for a just a few seconds so they keep some of their texture. Transfer to a large bowl. Flake in the tuna and mix in the onion, garlic, lemon juice, cumin, chilli and rest of the coriander. Season, then gently stir to mix all the ingredients. Shape into 12 patties with your hands. Dust with flour.
  • Heat half the oil in a large frying pan. Cook 6 patties for 5-6 minutes, turning over after 3 minutes. Keep them warm while you cook the rest.
  • Put the tomatoes in the pan. Cook over a high heat for 30-40 seconds until warmed through and starting to soften. Serve with the patties (3 per person) and the coriander dip.

  • Heat a small non-stick skillet to a medium heat. Add 1 tablespoon oil. Add leeks and ¼ teaspoon salt. and garlic. Saute until leek have softened, about 3-4 minutes. You don't want them to brown, so if they start to crisp up, turn the heat downn to medium low. Once they've softened, add garlic. Cook another minute. Transfer leeks and garlic to a large bowl and cool.
  • Wipe pan clean and toast pine nuts over a medium-low flame. They are done when they smell nutty, be careful to not burn. Transfer to the bowl with the leeks and garlic.
  • Add chickpeas to the bottom of a food processor, pulse until the chickpeas are in tiny pieces, but not pureed. They should look a little bigger than grains of sand, with some bigger pieces as well, you still want a bit of texture. Transfer chickpeas to the bowl with the leeks, garlic and pine nuts.
  • Add egg, lemon zest, juice, Dijon, breadcrumbs and remaining salt. Toss until combined. Use a small ice cream scoop or 1/4 cup measure to portion out 7-8 fritters. Rinse hands with a little bit of cold water and form into compact patties.
