LEMON & DILL CHICKEN
Fresh lemon and dill create a quick Greek-inspired pan sauce for simple sautéed chicken breasts. Make it a meal: Serve with roasted broccoli and whole-wheat orzo.

Steps:
- Season chicken breasts on both sides with salt and pepper. Heat 1 1/2 teaspoons oil in a large heavy skillet over medium-high heat. Add the chicken and sear until well browned on both sides, about 3 minutes per side. Transfer chicken to a plate and tent with foil.
- Reduce heat to medium. Add the remaining 1 1/2 teaspoons oil to the pan. Add onion and garlic and cook, stirring, for 1 minute. Whisk broth, flour, 1 tablespoon dill and lemon juice in a measuring cup and add to pan. Cook, whisking, until slightly thickened, about 3 minutes.
- Return the chicken and any accumulated juices to the pan; reduce heat to low and simmer until the chicken is cooked through, about 4 minutes. Transfer the chicken to a warmed platter. Season sauce with salt and pepper and spoon over the chicken. Garnish with the remaining 1 tablespoon chopped fresh dill.

- In a 6-qt. stockpot, heat oil over medium heat. Add carrots, onion and garlic; saute until carrots are tender, 4-5 minutes., Stir in orzo, chicken and broth; bring to a boil. Reduce heat; simmer, uncovered, 5 minutes. Stir in peas, spinach and dill; return to a boil. Reduce heat; simmer, uncovered, until orzo is tender, 3-4 minutes. Stir in lemon juice. - Sprinkle chicken with garlic salt and pepper. In a large skillet, heat oil over medium heat; brown chicken on both sides. Remove from pan., Add broccoli and broth to same skillet; bring to a boil. Reduce heat; simmer, covered, until broccoli is just tender, 3-5 minutes. Using a slotted spoon, remove broccoli from pan, reserving broth. Keep broccoli warm., In a small bowl, mix flour, dill and milk until smooth; stir into broth in pan. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Add chicken; cook, covered, over medium heat until a thermometer inserted in chicken reads 165°, 10-12 minutes. Serve with broccoli.

DILL CHICKEN BREASTS
This wonderful recipe, which was developed in the test kitchen of Canadian Living magazine, can easily be doubled.

Steps:
- Dredge the chicken breasts lightly in flour; season with a pinch each of salt and pepper.
- In a skillet, heat butter and oil over medium-high heat; cook chicken, turning once, for about 6 minutes or until golden brown and no longer pink inside.
- Remove from the pan and keep warm.
- Pour off all the fat from the pan.
- Pour in the wine and bring to a boil over high heat; cook, stirring to scrape up any brown bits in the pan, for about 1 minute or until reduced and syrupy.
- Add the cream; boil for about 1 minute or until thick enough to coat a spoon.
- Stir in the dill, chives, lemon juice, and salt and pepper to taste.
- Stir any accumulated juices from the chicken back into the pan; pour the sauce over the chicken.
- Garnish with lemon slices and dill sprigs.

CHICKEN BREASTS WITH CREAMY DILL PAN SAUCE

- Gather the ingredients.
- Sprinkle the chicken breasts with seasoned salt. If the chicken breasts are quite large, slice each one in half horizontally to make two cutlets. For faster and more uniform cooking, put each chicken breast or cutlet between two sheets of plastic wrap and gently pound with the smooth side of a meat tenderizer.
- In a large skillet over medium-high heat, melt the butter and olive oil.
- When the butter and oil are hot and sizzling, add the chicken breast halves or cutlets to the skillet. Cook for about 3 to 5 minutes on each side or until chicken is browned. Reduce the heat to low.
- Add the chicken broth to the skillet; cover and simmer 10 to 12 minutes or until chicken is cooked through.
- Remove the chicken breasts from skillet to a hot platter; tent them with foil to keep them warm.
- In a small bowl, combine cream or half-and-half, flour, and dill; whisk or blend with a fork until smooth.
- Add the flour mixture to the skillet; cook and stir until the mixture has thickened.
- Serve the creamy dill sauce over chicken breasts with rice, noodles, or potatoes and your favorite side vegetables.

CHICKEN WITH FRESH DILL

- In a bowl, whisk the yogurt well, add the dill, scallions, gingerroot, cumin hot peppers, lemon juice, 1/2 teaspoons salt, black pepper and combine mixture well.
- Pull off and discard the skin from the chicken, and sprinkle the chicken on both sides with black pepper and the remaining 2 teaspoons of salt.
- In a heavy large deep skillet or wide flameproof casserole heat the oil over moderately high heat until it is hot but not smoking, add the cinnamon stick, the cloves and cook the spices, stirring, for 5 seconds. Brown the chicken in the spiced oil in batches, transferring it as it is browned with tongs to a bowl.
- Return the chicken to the skillet with any juices that have accumulated in the bowl, arranging the drumsticks and thighs on the bottom and the breast pieces on the top. Add the yogurt mixture and bring it to a boil. Simmer the mixture, covered, stirring occasionally for 20 minutes. (This dish can be prepared 2 days in advance and kept covered and refrigerated until the day of serving.).
- Remove the lid and boil the mixture, uncovered stirring occasionally, for 5 to 10 minutes, or until the liquid is reduced to a thick sauce.

- Season chicken with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5 minutes.
- Reduce heat to medium and add onion; cook until translucent and soft, about 3 minutes. Add mushrooms and cook, stirring occasionally, for 4 to 5 minutes. Stir in garlic and sauté until fragrant, about 30 seconds.
