4 boneless skinless chicken breast halves (6 ounces each)
1/2 teaspoon salt
1/2 teaspoon pepper
3 tablespoons butter
1 medium red onion, halved and thinly sliced
2 medium pears, thinly sliced
2 teaspoons brown sugar
1/2 cup balsamic vinaigrette
1/2 teaspoon dried thyme
2 packages (8.8 ounces each) ready-to-serve long grain and wild rice

Steps:

  • Sprinkle chicken with salt and pepper. In a large skillet, brown chicken in butter; remove and keep warm. In the same skillet, saute onion until tender. Add pears and brown sugar; cook 3 minutes longer. Stir in vinaigrette and thyme., Return chicken to skillet. Bring to a boil. Reduce heat; simmer, uncovered, for 4-6 minutes or until chicken juices run clear. Meanwhile, cook rice according to package directions. Serve with chicken.

A classic Moroccan dish which strikes a balance between sweet and savoury flavourings - and sounds absolutely delicious. I'm posting it here for safekeeping: so I don't forget it! To achieve the balance that best suits your tastes, start with one tablespoon of honey and add more until it's just how you like it. Adapted from Claudia Roden's recipe in the August/September 2005 issue of 'Australian Vogue Entertaining + Travel'. Claudia Roden's recipe uses a whole chicken. When I make this recipe, I intend using skinless, boneless breasts, halved. Served over rice, noodles, or couscous, I think this recipe would easily serve 6 rather than the 4 specified. After I've made it, I'll post the cooking times for making this recipe with breasts, and any other adjustments in relation to the number of serves. If you make this recipe - with breasts or thighs - before I do, please include in your review your cooking times and how many serves it made.

4 small firm beurre bosc pears or 2 large firm beurre bosc pears, unpeeled, quartered and cored
40 g unsalted butter
4 tablespoons sunflower oil
500 g shallots or 500 g baby onions
1 onion, peeled and chopped
1 large chicken, jointed
sea salt, to taste
fresh ground black pepper, to taste
good pinch saffron thread
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 -2 tablespoon clear honey
100 g blanched almonds (optional)

Steps:

  • Melt the butter in a non-stick pan over a medium heat, add 1 tablespoon of sunflower oil and sauté the pear quarters until they are lightly coloured, then set aside.
  • Blanch the eschalots or baby onions in boiling water for 5 minutes, and drain. When they are cool enough to handle, peel the eschalots and trim the root ends.
  • Sauté the eschallots in a little sunflower oil, in a non-stick pan (you can use the same pan as you used to sauté the pears) over a medium heat, shaking the pan and turning the eschalots until they are browned and caramelized on all sides.
  • Remove the eschalots from the pan and drain them on paper kitchen towelling.
  • Add 3-4 tablespoons of oil to a casserole pot large enough to include the chicken pieces, pears and eschalots, and sauté the chopped onion over a medium heat until it begins to soften; then add the chicken pieces and lightly brown them on all sides. Season to taste.
  • Add 1 cup of water, and stir in the saffron threads, ginger and cinnamon, and cook, covered, over a low heat, turning the pieces over several times, for 10-15 minutes or until the breasts are cooked.
  • Remove the breasts, set aside and keep warm.
  • Add the caramelised eschalots to the pot.
  • If the pear quarters are still firm (see also step 14), add them to the pot now and continue to cook, covered, over a low heat, for 25 minutes or until the remaining chicken pieces are very tender, turning occasionally, and adding a little more water if it is needed.
  • Lift the chicken pieces out, set aside with the breasts, and keep warm.
  • Stir the honey into the pot and check the seasoning. You will need quite a bit of pepper to balance the sweetness.
  • Cook uncovered to reduce the sauce if necessary, until the sauce has the consistency of thick jam.
  • Return all the chicken pieces to the pot and heat through.
  • If the pears were soft enough after they were sautéed, add them at this point. A few minutes heating should be enough.
  • If you are serving this dish with blanched almonds, lightly toast the almonds under the grill or dry sauté them in a non-stick pan (or you can add a drop of oil).
  • Serve over rice, noodles or couscous.

Chicken cooked in a tagine is always meltingly tender. Adding sweet, caramelized pears at the end makes this Moroccan dish irresistible.

7 tablespoons olive oil, divided
2 onions, peeled and sliced
1 whole chicken, cut into pieces
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon salt
3 cinnamon sticks
2 bay leaves, crushed
1 bunch fresh cilantro, chopped
2 tablespoons fresh ginger root, peeled and minced
½ cup water
2 tablespoons butter
2 pears, cored and sliced
2 tablespoons honey

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat 2 tablespoon olive oil in a skillet over medium heat and cook onions until softened and browned, 8 to 10 minutes. Transfer onions into a tagine. Layer chicken pieces on top of onions.
  • Combine turmeric, cumin, ground coriander, and salt in a small bowl; mix well with remaining 5 tablespoons olive oil. Spread spice mixture onto the chicken pieces. Add cinnamon pieces, bay leaves, ginger, and cilantro. Pour in 1/2 cup of water and cover tagine with a lid.
  • Bake in the preheated oven until chicken is no longer pink at the bone and the juices run clear, about 50 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
  • Melt butter in a skillet over low heat while chicken is cooking. Add sliced pears and honey and cook, while stirring, until honey has caramelized.
  • Remove tagine from the oven and stir in caramelized pears. Return to the oven and cook for an additional 10 minutes.

2 bosc pears, not peeled, each cut in half, cored and cut in 8 wedges
1 cup chicken broth
3 tablespoons balsamic vinegar

1/4 cup dried cherries or 1/4 cup raisins

Steps:

  • In nonstick 12 inch skillet, heat 1 tsp oil over medium -high heat till very hot. Add chicken and cook till golden brown and no pink remains (4-5 min) each side. Transfer to plate; keep warm. In same skillet, heat remaining 1 tsp oil. Add pears and cook till tender and golden brown. In cup, blend broth, vinegar, cornstarch, and sugar. Stir broth mixture and dried cherries into skillet with pears. Heat to boiling, stirring and boil 1 minute. Return chicken to pan; heat through.

3 whole boneless skinless chicken breasts, halved
allspice
2 tablespoons butter or 2 tablespoons margarine
2 green onions, thinly sliced (use green tops too)
1 teaspoon Dijon mustard
1/3 cup chicken broth
2 medium pears, unpeeled, cored, cut in thin length-wise wedges
1/4 cup brandy (optional) or 1/4 cup clear pear brandy (optional)
1/3 cup whipping cream

Steps:

  • Sprinkle chicken with allspice. Brown in heated butter in a large frying pan. Sprinkle with green onions; add mustard and broth. Cover. Reduce heat, and simmer 10 minutes.
  • Add pear wedges. Cover again, and continue cooking about 10 minutes more, until chicken is cooked through (test with a knife in thickest part. Pour in brandy, if used; ignite, then wait until flames subside.
  • Using a slotted spoon, remove chicken and pears to a warm serving dish; keep warm.
  • To cooking pan add cream. Bring to boiling, stirring, and cook until sauce is reduced and slightly thickened. Pour over chicken and pears.
  • Good served with cooked rice and tiny peas.

TAGINE OF LAMB WITH CARAMELIZED BABY ONIONS AND PEARS



Tagine of Lamb with Caramelized Baby Onions and Pears image

3 pounds boned shoulder of lamb
5 tablespoons sunflower or vegetable oil
1 onion, chopped
Salt and plenty of black pepper
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon saffron threads
1 pound (about 2 cups) shallots or baby onions
3 large pears
1/4 stick (2 tablespoons) butter

Steps:

  • Cut the meat into 6 or 8 pieces, and put it into a wide pan with 2 tablespoons oil over medium heat; turn to brown the pieces all over. Add the chopped onion and barely cover with water. Stir in salt and pepper, ginger, cinnamon, and saffron, and simmer, covered, over a low heat for 1 1/2 hours, turning the pieces over a few times.
  • To peel the onions or shallots, blanch them in boiling water for 5 minutes and, when cool enough to handle, peel off the skins and trim the roots. Sauté them in a skillet in 2 tablespoons oil over a low heat for 5 to 10 minutes, shaking the pan, until the onions have slightly colored. Then add them to the meat and cook for a further 30 minutes, until the meat is very tender and the baby onions are so soft that, as they say in Morocco, "you can crush them with your tongue." Toward the end of the cooking time, cook uncovered to reduce the sauce. There should be only a small amount of liquid remaining.
  • Wash the pears. Quarter and core them but do not peel them. Sauté them in a large skillet in a mixture of butter and the remaining tablespoon of oil over medium heat until their cut sides are slightly brown and caramelized. If they have not softened right through (that depends on their size and degree of ripeness), put them into the pan over the meat, skin side up, and continue to cook, covered, until they are very tender. It could be 15 minutes, but you must watch them as they can quickly fall apart.
  • Serve the meat with the pears, arranged skin side up, on top.
  • variations
  • Stir in 1 to 1 1/2 tablespoons of clear honey when you put in the pears, and adjust the seasoning so that there is enough salt and plenty of pepper to mitigate the sweetness.
  • Add 1/2 cup blanched almonds to the meat at the start. They will soften during the cooking.
  • Instead of pears, sharp green apples, such as Granny Smiths, may be used.
  • Use veal instead of lamb.

This was taken from "Arabesque" by Claudia Roden....This is one of the classics of Moroccan cooking and this version, with shallots or baby onions, is sensational. The art is to reduce the sauce at the end until it is rich and caramelized. It is important to taste it in order to get the right balance between sweet and savory. Preparation time is approximate. I have not made this yet. It is here for safe keeping... but it looks yum. :)
