A Filipino-inspired braise similar to adobo with the potent combination of vinegar, soy sauce, sugar, and garlic that acts as both marinade and simmer sauce. Once the chicken is tender and the sauce reduces to a glossy consistency, it takes on a sweet and sour flavor that is delightful drizzled over a bowl of Coconut Rice and steamed baby bok choy.

1 1/2 cups rice vinegar (unseasoned)
1/2 cup reduced-sodium soy sauce
1 tablespoon turbinado or light brown sugar
3 bay leaves
1 head garlic, cloves peeled and smashed
Freshly ground pepper
8 pieces bone-in, skin-on chicken thighs and drumsticks (about 3 pounds total)
2 tablespoons vegetable oil

Steps:

  • Combine vinegar, soy sauce, sugar, bay leaves, garlic, and 1 teaspoon pepper in a bowl; add chicken and toss until coated with marinade. Cover bowl and refrigerate at least 2 hours and up to overnight.
  • Remove chicken (reserving marinade) and pat dry with paper towels. Heat oil in a large Dutch oven over medium. Add half of chicken and cook until golden brown, 3 to 5 minutes. Turn and brown other sides about 2 minutes more; transfer to a plate and repeat with remaining chicken.
  • Return all chicken and any accumulated juices to Dutch oven; add reserved marinade, making sure liquid comes halfway up sides of chicken (you may need to nestle it). Bring to a simmer over high, then reduce heat to low, cover, and cook until chicken is cooked through and tender, 20 to 25 minutes. Transfer chicken to a clean plate. Skim fat from liquid with a spoon and discard bay leaves. Increase heat to medium‐high and reduce liquid until syrupy (you should have about 1 cup). Spoon sauce over chicken and serve.

Cider-Braised Chicken Thighs With Apples and Greens image

In this hearty one-pot dinner, chicken thighs are browned, then braised in chicken broth flavored with mustard, sage, garlic and a triple dose of apple: apple cider, cider vinegar and apple slices. The addition of a few handfuls of greens makes this a complete meal, in need of nothing else but a nice of hunk of bread to soak up the broth and perhaps a glass of dry white wine.

Number Of Ingredients 12

1 1/2 to 2 pounds bone-in, skin-on chicken thighs (about 4 to 6)
Kosher salt and black pepper
2 tablespoons canola or grapeseed oil
1 cup thinly sliced shallots (2 to 3 medium shallots)
2 tablespoons roughly chopped fresh sage leaves
3 garlic cloves, minced
3/4 cup fresh apple cider
2 tablespoons apple cider vinegar, plus more to taste
2 tablespoons Dijon mustard
3/4 to 1 cup chicken broth, preferably low-sodium
1 bunch curly kale (10 to 12 ounces), stemmed, leaves torn into bite-size pieces
1 crisp red apple, such as Fuji, cored and thinly sliced

Steps:

  • Pat the chicken thighs dry and season generously with salt and pepper.
  • In a Dutch oven or heavy pot, heat the oil over medium. Cook the chicken thighs skin-side down, undisturbed, until the skin is golden brown, 6 to 8 minutes. Flip and cook until lightly browned on the other side, about 4 minutes. Transfer to a plate.
  • Pour off all but about 3 tablespoons of fat from the pot, turn the heat to medium-low, then add the shallots and sage. Cook, stirring occasionally, until the shallots are translucent, about 3 minutes. Add the garlic and stir until fragrant, about 30 seconds. Be careful not to let the garlic burn.
  • Add the cider, cider vinegar, mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper and cook, scraping up any browned bits from the bottom of the pan, until the cider has reduced slightly, 2 to 3 minutes. Return the chicken and any accumulated juices to the pot, skin-side up. Pour just enough broth around (not on!) the chicken to cover the sides of the thighs but not cover the skin on top.
  • Bring to a boil, then turn the heat to low. Partly cover and gently simmer until the thighs are cooked through and tender, 20 to 25 minutes. Transfer the chicken to a clean plate or sheet pan (if you'd like to broil the chicken in the next step), raise the heat to medium, and add the kale and apple to the pot. Cook, tossing often, until all the kale is wilted, the apples are just softened and the liquid has reduced slightly, about 5 minutes. While the greens cook, if you'd like to crisp the skin on the chicken, pop it under the broiler for 2 to 3 minutes.
  • Taste for seasoning, and stir in 1 or 2 more teaspoons cider vinegar to taste. Divide the chicken and kale mixture among shallow bowls; serve with crusty bread to mop up broth.

CHICKEN WITH BRAISED CELERY & CIDER

small knob of butter
1 chicken , weighing about 2kg/4lb 8oz
4 rashers smoked streaky bacon , chopped
1 onion , finely chopped
2 carrots , diced
sprig thyme
2 celery hearts, quartered
150ml dry cider (we used Merrydown)
300ml chicken stock

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Heat the butter in a large casserole dish and brown the chicken slowly on all sides; this should take a good 10-15 mins. (Be patient, it will pay off later.) Take the chicken out of the dish, throw in the bacon and cook for 3-4 mins until starting to crisp, then add the onion, carrots and thyme and continue to cook for 4-5 mins until the vegetables soften. Stir the celery into the dish, then nestle the chicken amongst the veg, breast side down. Pour over the cider and stock, bring to a simmer, then roast the chicken uncovered for 1 hr.
  • Turn the chicken the right way up and give it 30 mins more, by which point the legs should be coming away. Carefully lift the chicken from the dish. Check the seasoning of the vegetables and serve with the chicken.

3 tablespoons olive oil
2/3 cup unfiltered apple cider
1/2 cup dry white wine
1/2 cup heavy cream
1 tablespoon chopped fresh sage
1 teaspoon Dijon mustard

Steps:

  • Sprinkle chicken with 2 teaspoons coarsely ground pepper and 1 teaspoon salt.
  • Heat oil in a 12-inch heavy skillet over medium-high heat until it shimmers, then brown chicken, skin side down first, turning once, 8 to 10 minutes total. Transfer to a plate, discarding oil.
  • Wipe out skillet, then boil remaining ingredients until reduced by half, 3 to 5 minutes. Return chicken to skillet and braise, covered, turning once, until chicken is just cooked through, 25 to 30 minutes. Transfer chicken to a platter. Boil sauce to thicken if necessary. Whisk sauce if separated and season with salt, then pour over chicken.

3 lb chicken parts such as breasts and thighs (with skin and bone) and drumsticks
1 1/4 teaspoons salt
1/2 teaspoon black pepper
1 tablespoon olive oil
1 tablespoon unsalted butter
1 celery root (sometimes called celeriac; 1 1/4 lb), peeled with a sharp knife and cut into 3/4-inch cubes
1 head garlic, cloves separated and left unpeeled
1 1/4 cups reduced-sodium chicken broth (10 fl oz)
2 fresh thyme sprigs
Accompaniment: crusty bread
Garnish: fresh thyme

Steps:

  • Pat chicken dry and sprinkle all over with salt and pepper. Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown chicken, starting skin sides down, turning over once, 8 to 10 minutes. Transfer to a plate and pour off all but 1 tablespoon fat from skillet.
  • Add butter to skillet and heat over moderately high heat until foam subsides, then sauté celery root and garlic, stirring frequently, until celery root is browned, about 5 minutes.
  • Add broth and thyme and deglaze skillet by boiling, stirring and scraping up any brown bits, 1 minute. Return chicken, skin sides up, to skillet along with any juices accumulated on plate, then reduce heat and simmer, covered, until chicken is cooked through, 15 to 20 minutes for white meat, about 25 minutes for dark meat. Transfer chicken to a serving bowl as cooked and keep warm, loosely covered with foil.
  • When all chicken pieces are done cooking, transfer sauce and vegetables to bowl with chicken, discarding thyme.

This one-pan dinner is ugly - rustic, if we're being kind - but good. Or as the Italians say, "brutta ma buona." Truly, though, it's everything you could ask for in a rich, comforting meal. As it cooks, the chicken, brined in stock and cider, drips its flavorful juices onto the bread. The bread absorbs every drop, turning into a chewy, savory nest cradling the tender, perfectly browned chicken. Each bit of stuffing offers a different surprise - sometimes the sweet-and-sour zing of a prune, other times the faint rumor of Thanksgiving whispered by celery and thyme. It's as satisfying as you could ever hope, even if it isn't particularly attractive.

6 tablespoons unsalted butter, divided
1 medium yellow onion, diced into 1/2-inch pieces
3 celery ribs, diced into 1/2-inch pieces
2 medium carrots, peeled and sliced into 1/2-inch pieces
1 tablespoon plus 1 teaspoon fine sea salt, divided
1/2 teaspoon freshly ground black pepper
1 1-pound loaf crusty country bread
1 1/2 cups sodium-free chicken stock, preferably homemade or purchased from a butcher
1 1/2 cups apple cider
1 cup quartered pitted prunes
2 tablespoons apple-cider vinegar
2 1/2 pounds (6 to 8 large) bone-in, skin-on chicken thighs
2 tablespoons finely chopped sage
2 tablespoons finely chopped parsley
1 tablespoon finely chopped thyme
Optional: 1 1/2 cups cooked, chopped leafy greens like kale, chard or broccoli rabe

Steps:

  • Make the brine: Melt 3 tablespoons of the butter in a 10-inch cast-iron skillet or similar pan over medium-low heat. Add onion, celery and carrots, 1/2 teaspoon of the salt and the pepper. Cook, stirring occasionally, until the vegetables are all tender, about 20 minutes. Transfer to a plate, and cool to room temperature in freezer.
  • While the vegetables cool, cut the bread into 3/4-inch cubes and spread into a single layer on a baking sheet. Allow to dry out overnight.
  • Combine the stock and cider in a large measuring cup and pour 1 1/2 cups of the mixture into a plastic gallon-size zipper bag. Add vegetables, remaining salt, prunes, vinegar and chicken thighs. Seal bag, and massage everything around to dissolve salt and combine. Refrigerate 8 hours or overnight. Cover and refrigerate remaining stock-cider mixture.
  • To cook the chicken: Allow chicken to come to room temperature. Heat oven to 400. Scraping off brine and vegetables, remove chicken from bag, and set aside. Place brine with vegetables and remaining stock-cider mixture in a 10-inch cast-iron skillet or similar pan, and bring to a boil.
  • In a large bowl, combine cubed bread, vegetables and liquid, sage, parsley, thyme and greens, if using. Return pan to low heat, and add remaining 3 tablespoons butter to melt. Pack stuffing mixture into pan, and lay chicken thighs on top. Place pan onto a rimmed baking sheet to catch any overflow, and bake on lower rack for 50 to 55 minutes until chicken and stuffing are golden brown.
  • Allow to cool for 10 minutes before serving.

1 tbsp butter
4 whole celery hearts, halved lengthways
3 carrots , chopped
4 bay leaves
few thyme sprigs
6 garlic cloves , skin left on
600ml fresh chicken stock
1 chicken , weighing 1.5kg/3lb 5oz
small bunch parsley , chopped

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat the butter in a large shallow ovenproof casserole dish and fry the celery and carrots on a medium heat for 4-5 mins. Add the bay, thyme, garlic and seasoning, then pour over the stock. Bring to a simmer, then turn off the heat.
  • Sit the chicken in the dish, nestling it into the veg. Season well, transfer to the oven and roast for 1 hr 40 mins until the skin is golden. Remove to a board to rest for 20 mins.
  • To serve, reheat the celery and sauce, scatter with parsley and tip into a serving dish. Carve the chicken into portions and serve on a board with the celery for everyone to help themselves.

1 bunch celery, cleaned and cut into 4 inch pieces
½ teaspoon salt
¼ teaspoon pepper
2 tablespoons butter or margarine
1 cube chicken bouillon
1 cup boiling water
1 tablespoon minced fresh parsley

Steps:

  • Arrange the celery in a single layer on the bottom of a large skillet. Season with salt and pepper. Dot with butter. Dissolve the bouillon cube in boiling water, and pour over the celery.
  • Cover pan, and bring to a boil over medium-high heat. Reduce heat to low, and simmer for 30 minutes. Sprinkle with parsley before serving.
