DUTCH BABY PANCAKE RECIPE (PUFF PANCAKE)
German Pancakes, Puff Pancake, Old-World, Or Dutch Baby Pancake... Whatever you call them, they are delicious! Easy to make with minimal ingredients and big flavor.

Steps:
- 1. Preheat your oven to 425 degrees.
- 2. Place the butter into a 10" cast iron skillet or baking pan. Heat in the oven for 1-2 minutes, or just until the butter has melted.
- 3. Add the flour, sugar, cinnamon, eggs, milk, and vanilla extract into a blender.
- 4. Pulse or blend until fully combined.
- 5. Pour the batter right over the top of the melted butter. Do not stir.
- 6. Bake 15-18 minutes, or until the pancake is just starting to brown around the edges and the middle has set.
- 7. Serve with fresh fruit, powdered sugar, or warmed syrup.

PUFF PANCAKE WITH CARAMELIZED FRUIT

Steps:
- Heat oven to 425°F. Lightly spoon flour into measuring cup; level off. In medium bowl, combine flour, salt, milk and egg whites; beat with wire whisk until smooth.
- Place 1 tablespoon margarine in 9-inch glass pie pan. Heat in oven for 2 to 4 minutes or just until margarine sizzles. Remove pan from oven; tilt pan to coat bottom with melted margarine. Immediately pour batter into hot pan.
- Bake at 425°F. for 14 to 18 minutes or until puffed and golden brown.
- Meanwhile, melt 1 tablespoon margarine in 12-inch nonstick skillet over medium heat. Add apples and pears; cook 2 minutes, stirring occasionally. Add brown sugar, cranberries and lemon juice; mix well. Cook 8 to 10 minutes or until fruit is tender.
- To serve, pour fruit mixture into pancake. Serve immediately.

My mom told me her mother-in-law showed her how to make this dish, which became popular during the Depression, on their "get acquainted" visit in 1927. At that time, cooks measured ingredients in pinches, dashes and dibs. But through the years, accurate amounts were noted. VANILLA DUTCH BABY (PUFFED PANCAKE)

- Preheat the oven to 400 degrees F.
- Put the butter in a large, ovenproof, nonstick saute pan and place in the oven.
- Meanwhile, in a blender, combine the eggs, flour, warm milk, sugar, vanilla extract and pinch of salt, and blend on medium-high speed until uniform. (If mixing by hand, combine the eggs with the milk until the mixture is light yellow and no longer stringy, about 1 minute. Add the flour, sugar, vanilla, and pinch of salt, and whisk vigorously to remove the lumps, about 30 seconds.)
- Carefully remove the hot pan from the oven. The butter should be melted. Swirl the butter around the pan to coat completely, and then pour the remaining butter into the batter and pulse to blend. Pour the batter into the hot pan and return the pan to the oven. Cook until the pancake is puffed in the center and golden brown along the edges, 20 to 25 minutes.
- Using a spatula, remove the entire Dutch baby from the pan and place on a cooling rack for a few minutes to allow the steam to escape without condensing along the bottom and rendering the pancake soggy. Dust with confectioners' sugar when cooled slightly. Slice the pancake into 8 wedges on a serving platter or cutting board.
PUFF PANCAKE (FOR FRUIT)

- Preheat oven to 425°F.
- Lightly oil a 9-inch casserole and place in the oven.
- Whisk together eggs, egg whites, milk, and vanilla.
- Add a dash of salt.
- Sprinkle flour over the mixture, and whisk to combine.
- Pour the batter into the hot casserole.
- Bake 15-20 minutes, until the top and edges are browned and beginning to crisp.
- While the puff is baking, clean fruit and slice or shred to a consistent size, convenient for eating.

Puffy oven-baked buttery pancake. It's SO easy! You may never make traditional pancakes again. Pour your favorite syrup over it, or just dust powdered sugar on top. There's not much need to add more butter because it's already baked onto the top and forms a delicious salty and buttery crust.

Pears, plums, berries, under-ripe bananas, etc. can be substituted for the apples-depending on the season. Muscovado replaced plain ol' brown sugar, honey for maple syrup, heavy cream for milk, one teaspoon ground cinnamon in original recipe was replaced with Recipe #266688-in my lame attempt to "anglicize" the recipe. For our small family, this recipe was cut in half (although with the same amount of fruit) and I also baked the pancake in an eight inch cast iron skillet instead of a pie pan. Puffy pancake pulls double duty as both a breakfast entree and dessert. Local recipe.

- Note: the pancake will not puff up high like a Dutch baby does.
- Heat oven to 425 degrees.
- Place the butter, brown sugar and cinnamon in an 8-inch cast iron skillet or a 9-inch glass pie plate. Heat in the oven until the butter is melted and bubbly - 5 minutes.
