CHICKEN MEATLOAF
Steps:
- Gather the ingredients. Preheat the oven to 350 F. Line a rimmed baking sheet with aluminum foil.
- In a large bowl, combine the ground chicken, breadcrumbs, milk, eggs, onion, parmesan cheese, parsley, ketchup, Worcestershire sauce, salt, garlic powder, dried oregano, and black pepper. Use your hands to mix together until everything is evenly distributed. Do not overwork.
- Shape into 8 x 4-inch loaf on the prepared baking pan.
- In a small bowl, combine the ketchup, brown sugar, and ground mustard.
- Spoon the glaze mixture over the loaf.
- Bake, uncovered, for 35 to 40 minutes or until the meatloaf reaches an internal temperature of 165 F.
- Let stand 10 minutes before slicing and serving.

Steps:
- Heat oven to 350°F. Line 9x5-inch loaf pan with foil; spray foil with cooking spray.
- Place vegetables in food processor. Cover; process 5 to 7 times or until vegetables are broken up into small pieces. Set aside.
- In large bowl, mix together vegetables and remaining meatloaf ingredients until well combined. Shape mixture into 8x4-inch loaf. Place in pan.
- In small bowl, stir together Balsamic Glaze ingredients. Spread mixture over meatloaf.
- Bake uncovered 1 hour to 1 hour 10 minutes or until meat thermometer inserted in center of loaf reads 160°F. Drain; let stand 10 minutes. Cut into slices to serve.

- Preheat oven to 400. White oven preheats, place bread slices on cookie sheet in oven and toast 10-15 minutes or until golden, turning over once. Transfer toast to wire rack to cool slightly. In food processor with knife blade attached, pulse bread until coarsely chopped. (You should have 1 scant cup). Line 15 1/2 X 10 1/2-inch jelly roll pan or 13 X 9-inch metal baking pan with nonstick aluminum foil.
- In large bowl, place chicken, vegetables, dill, eggs, 1/2 teaspoon salt, and 1/4 teaspoon freshly ground black pepper. Add bread crumbs and mix until blended, but do not overmix. In prepared pan, shape meat mixture into 9 x 5-inch loaf, handling meat as little as possible for best texture.
- Bake meatloaf 45-55 minutes or until meat thermometer inserted in center reaches 165. (Temperature will rise to 170 upon standing).
- Let meatloaf stand 10 minutes to set juices for easier slicing.

VEGETABLE MEATLOAF WITH BALSAMIC GLAZE

- Preheat the oven to 425 degrees. Heat the oil in a large saute pan over high heat. Add the zucchini, bell peppers, garlic paste and 1/4 teaspoon red pepper flakes. Season with salt and pepper and cook until the vegetables are almost soft, about 5 minutes. Set aside to cool.
- Whisk the egg and fresh herbs in a large bowl. Add the turkey, panko, grated cheese, 1/2 cup ketchup, 2 tablespoons balsamic vinegar and the cooled vegetables; mix until just combined.
- Gently press the mixture into a 9-by-5-inch loaf pan. Whisk the remaining 1/4 cup ketchup, 1/4 cup balsamic vinegar and 1/4 teaspoon red pepper flakes in a small bowl; brush the mixture over the entire loaf. Bake for 1 to 1 1/4 hours. Let rest for 10 minutes before slicing.
CHICKEN PARMESAN MEATLOAF
This chicken Parmesan meatloaf made with ground chicken is a quick dinner that kids love!

- Preheat the oven to 350 degrees F (175 degrees C). Spray an 8x4-inch loaf pan with nonstick spray.
- Mix together ground chicken, bread crumbs, Parmesan cheese, onion, egg, garlic, basil, thyme, oregano, salt, black pepper, and chipotle chile powder until well combined. Press into the prepared loaf pan and top with marinara sauce.
- Bake in the preheated oven until no longer pink in the center, 40 to 45 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
- Sprinkle Italian cheese over top and bake until melted and bubbly, about 10 more minutes.
- Let stand 5 minutes before serving.

Steps:
- Preheat oven to 350 degrees.
- Combine chicken and bread crumbs in large bowl.
- Set aside.
- Cut the carrot& onion into chunks and add to blender.
- Add the remaining 7 ingredients to the blender.
- Process in blender until carrot is very fine.
- Pour blender mixture over meat mixture.
- Mix very well using your hands.
- Form mixture into a loaf and place in lightly greased 9" X 13" pan.
- Cover with foil and bake for one hour.
- Remove foil& continue baking for 15-30 minutes, until loaf is cooked through.
