I love this recipe because it is quick and easy to throw together, with an end result that is tasty and comforting.

3 ½ cups water
3 (6 ounce) cans salmon, undrained
2 cups white rice
1 (10.75 ounce) can cream of chicken soup
1 (10.75 ounce) can cream of broccoli soup
1 tablespoon dill weed
1 teaspoon lemon pepper
1 ½ cups frozen peas

Steps:

  • Stir water, salmon, white rice, chicken soup, broccoli soup, dill, and lemon pepper together in the crock of your slow cooker.
  • Cook on High for 2 hours.
  • Stir peas into the salmon mixture and continue cooking for 1 hour more.

10 to 12 small red potatoes (1 1/2 lb), cut in half
1 lb fresh green beans, trimmed, cut into 1-inch pieces
1 can (15.25 oz) whole kernel sweet corn, drained
1 can (10 3/4 oz) condensed cream of potato soup
1/2 cup water
1/2 teaspoon pepper
1/2 cup half-and-half
3 tablespoons Gold Medal™ all-purpose flour
1 1/2 lb salmon fillets, skin removed, cut into bite-size pieces
1 cup crumbled blue cheese (4 oz)
2 tablespoons chopped fresh chives

Steps:

  • Spray 3- to 4-quart slow cooker with cooking spray. In slow cooker, mix potatoes, beans, corn, soup, water and pepper.
  • Cover; cook on Low heat setting 6 to 7 hours (or on High heat setting 3 hours to 3 hours 30 minutes).
  • In 1-cup measuring cup, mix half-and-half and flour with whisk until well blended. Stir into potato mixture in slow cooker. Stir in salmon. If using Low heat setting, increase to High. Cover; cook 15 to 20 minutes longer or until salmon flakes easily with fork. Stir in cheese and chives.

As a stay-at-home mom with two small children, I'm always looking for quick, easy recipes that can be prepared ahead of time. I also don't like to heat up my oven during our hot Georgia summers. I adapted this recipe from one I found in an old slow-cooker book of my grandma's. I serve it with macaroni and cheese and pinto beans. -Kelly Ritter, Douglasville, Georgia

2 large eggs, lightly beaten
2 cups seasoned stuffing croutons
1 cup chicken broth
1 cup grated Parmesan cheese
1/4 teaspoon ground mustard
1 can (14-3/4 ounces) salmon, drained, bones and skin removed

Steps:

  • Cut three 20x3-in. strips of heavy duty foil; crisscross so they resemble spokes of a wheel. Place strips on the bottom and up the sides of a 3-qt. slow cooker coated with cooking spray., In a large bowl, combine the first five ingredients. Add salmon and mix well. Gently shape mixture into a round loaf. Place in the center of the strips., Cover and cook on low for 4-6 hours or until a thermometer reads 160°. Using foil strips as handles, remove the loaf to a platter.

This is such a simple recipe, and it is so delicious! Salmon is baked with garlic and dill, and topped with Cheddar cheese and green onions.

2 pounds salmon fillets
2 cloves garlic, crushed
1 teaspoon dried dill weed
salt to taste
ground black pepper to taste
1 cup shredded Cheddar cheese
6 green onions, chopped

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Place the salmon on a large piece of foil, and season with garlic, dill, salt, and pepper. Seal foil around the salmon. Place on a baking sheet.
  • Bake 20 minutes in the preheated oven. Top with Cheddar cheese and green onions, and continue baking 5 minutes, or until cheese is melted and fish is easily flaked with a fork.

350g macaroni pasta
600ml whole milk
50g butter , cubed
50g soft cheese
100g mature cheddar , grated, plus extra to serve
20g parmesan or vegetarian alternative, plus extra to serve

Steps:

  • Pour boiling water over the pasta and drain, then put everything in a slow cooker and stir well. Season, cover and cook on low for 1 hr. Stir again, put the lid back on and cook for another 30 mins until the pasta is cooked and the sauce has reduced enough to coat the macaroni.
  • Leave the lid off and reduce for the last 10 mins if you need to, or add a splash more milk - this will depend on the size of your slow cooker and the brand. Serve with extra cheese.
