Chicken Souvlaki Salad image

This is a great Greek inspired salad with chicken souvlaki, romaine, bell pepper, cucumber, and tomatoes served with tzatziki dressing. Sprinkle with feta cheese if desired.

1 tablespoon olive oil
1 tablespoon Greek seasoning
1 lemon, juiced
2 cloves garlic, finely grated or minced
1 pound boneless chicken breasts, quartered lengthwise
6 tablespoons tzatziki sauce
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 pinch salt
1 head romaine, trimmed, washed and torn into bite-sized pieces
½ cup thinly sliced red bell pepper
½ English cucumber, sliced
8 ounces cherry tomatoes, halved

Steps:

  • Combine 1 tablespoon olive oil, Greek seasoning, lemon juice, and garlic in a glass bowl; mix well. Add chicken to marinade and turn to coat. Marinate in the refrigerator for at least 2 hours, but not longer than 4 hours.
  • Mix tzatziki, 2 tablespoons olive oil, 2 tablespoons lemon juice, and salt in a small bowl. Refrigerate salad dressing until needed.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Place chicken pieces on the grill and cook for 5 minutes, turn, and grill until no longer pink in the center and the juices run clear, about 5 more minutes. An instant-read thermometer inserted into the centers should read at least 165 degrees F (74 degrees C).
  • Combine romaine lettuce, bell pepper, cucumber, and cherry tomatoes in a salad bowl. Drizzle with tzatziki dressing and toss to coat. Divide salad into 4 equal portions and top with cooked chicken.

This recipe was in the 'food' section of our local paper a couple of weeks ago. We made it while on a camping trip, a very refreshing and different salad! It has a definite Greek taste and is very low-cal! Time does not include marinating (if you chose to do so).

1 teaspoon minced garlic
1 teaspoon lemon juice
1 teaspoon olive oil
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
1 lb boneless chicken breast
1/2 cup plain fat-free yogurt
1/4 cup grated peeled cucumber
1 teaspoon white wine vinegar
1 teaspoon minced garlic
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper
3 cucumbers, peeled and cubed
1/2 red onion, sliced
1/2 cup crumbled feta cheese (I actually like more)
1/2 cup chopped kalamata olive (again-I like more!)
1 tomatoes, seeded and cubed

Steps:

  • Mix all of the marinade ingredients in a bag with the chicken.
  • Shake to coat.
  • Original recipe didn't call for any marinade time, but we marinated for a couple of hours.
  • Broil, grill, or pan fry chicken until done.
  • Set chicken aside to cool slightly.
  • Cut chicken into 1-inch pieces.
  • Combine all dressing ingredients together in a bowl.
  • Mix well.
  • Combine chicken with salad fixins; pour dressing over all and mix well.
  • Enjoy!

1/2 teaspoon pepper
1 lb boneless skinless chicken breast
2 cups cubed peeled cucumbers
1/2 cup sliced red onion
1/2 cup crumbled feta cheese
2 ripe tomatoes, cored and cut into 1 inch pieces
1/2 cup plain fat-free yogurt
1/4 cup grated peeled cucumber
1/2 teaspoon garlic powder
1 teaspoon white wine vinegar
1/4 teaspoon salt
1/4 teaspoon ground red pepper

Steps:

  • Preheat grill or broiler.
  • Combine 1 teaspoon garlic and the next 6 ingredients ( 1 teaspoon garlic through Chicken breast) in a large ziploc, seal, and marinate for 20 minutes.
  • Remove chicken from bag and grill or broil chicken 5 minutes on each side or until done.
  • Cut chicken into 1 inch pieces.
  • Combine chicken,cubed cucumber,and the next 4 ingredients (cucumber through tomatoes) in a large serving bowl. Combine yogurt and remaining ingredients in a small bowl and mix well. Pour over chicken mixture, or serve on the the side.
  • Goes well with sliced pita wedges.

  • While the chicken marinates, whisk together all of the ingredients for the vinaigrette in a small bowl and set aside.
  • Once the chicken has marinated preheat the grill to medium high heat or to 400° F. if you are using the oven. If grilling, skewer the chicken and grill for 6-10 minutes or until cooked through, flipping them halfway through the cooking time. If baking place the sheet pan in the oven while it preheats. When ready, remove the pan, drizzle with olive oil and spread the chicken into an even layer. Bake for 8-10 minutes or until cooked through.
  • On a large serving platter or bowl arrange the romaine lettuce and top with the cucumbers, tomatoes, red onion, olives, feta, pepperoncini and chicken. Serve with the vinaigrette on the side.
